CHILI-LIME BAKED SALMON IN FOIL



Chili-Lime Baked Salmon in Foil image

The best baked salmon in foil recipe EVER! Brushed with my lime and chili sauce, dusted with a hint of cumin, and chipotle chili. This recipe is so easy to make and pulls together in less than 30 minutes! The salmon is so flakey and tender when baked inside foil.

Number Of Ingredients 10

1 ¼ pound sockeye or coho salmon (preferably wild caught)*
2 tablespoons lime juice + 1 teaspoon lime zest
1/4 teaspoon red pepper flakes
2 teaspoons honey
1 clove garlic, minced
1/2 teaspoon salt
2 tablespoons cold butter, cubed
1/2 teaspoon cumin powder
1/2 teaspoon chipotle chili powder (or more to taste)
1 tablespoon cilantro, chopped

Steps:

  • Position a rack in the center of the oven and preheat the oven to 375ºF. (see notes)
  • In a saucepan over medium heat, combine the lime juice, red pepper flakes, honey, garlic, and salt. Allow the lime juice to reduce to 1 tablespoon. Add in 1 tablespoon of butter, remove pan from heat and swirl so the butter strts to melt. Place back on the heat for a few seconds, removed and continue to swirl until butter completely melts. Repeat with second tablespoon of butter. When butter is completely melted, remove sauce from stove.
  • Place the salmon filet in a piece of foil large enough to fold over and seal. Using a brush or spoon, brush the salmon with the lime butter sauce. Season with the cumin powder, lime zest, and chili powder. Cover with foil so that all sides are properly closed so the sauce does not leak.
  • Bake the salmon for 12-14 minutes or until firm. Open the foil and allow the fish to broil under the broiler for 2-3 minutes, keeping an eye on it so the fish does not burn. Remove from oven, top with chopped cilantro. Serve immediately.

Steps:

  • Preheat broiler. In a small bowl, mix the first 5 ingredients. Place salmon fillets on a broiler pan, skin side down. Broil 4-6 in. from heat until fish just begins to flake easily with a fork, 15-20 minutes. Brush frequently with onion mixture during the last 5 minutes of cooking.

Steps:

  • Preheat oven to 400°F Line a baking sheet with foil for easy cleanup.

Steps:

  • Preheat oven to 350 degrees. Line a baking sheet with aluminum foil. Lay the salmon on top and sprinkle with salt and pepper. Fold up the sides of the aluminum foil around the salmon.
  • In a small bowl whisk together the olive oil, brown sugar, soy sauce, garlic, lemon juice, salt, and pepper. Pour the glaze over the salmon. Top the salmon with aluminum foil and seal.

2 1/2 pound (1.2 kg) side of salmon

Steps:

  • Position a rack in the middle of the oven. Preheat oven to 375°F | 190°C. Line a baking sheet with a large piece of foil, or 2 long pieces of foil over lapping each other lengthways if your salmon is wide.
  • In a small saucepan, melt the butter over low-medium heat. Add the honey, garlic and lime juice, and whisk until the honey has melted through the butter and the mixture is well combined.
  • Place the salmon onto lined baking sheet. Evenly pour the honey-lime mixture over the salmon. Sprinkle with a good amount of salt (about 2 teaspoons), cracked pepper, and 2 tablespoons of parsley. Fold the sides of the foil up beside the salmon to keep the sauce under the fillet.
  • Bake until cooked through (about 15-18 minutes, depending on the thickness of your fish and your preference of doneness). 1 lb Salmon
2 Tbsp unsalted butter
1 Tbsp honey
3 Tbsp lime juice (about 2 limes)
1/2 tsp lime zest
3 cloves of garlic, minced (or 1 tsp of Brazilian Sofrito)
3 Tbsp fresh cilantro, roughly minced
1 tsp ground smoked paprika
1/2 tsp ground achiote pepper (optional)
pinch of black pepper
1/4 tsp ground cayenne pepper
1 tsp kosher salt

Steps:

  • Line a baking sheet with foil.
  • In a small bowl, combine all the peppers and salt. Then, rub the salmon on both sides and place it on the lined baking sheet and set aside while you take care of the next steps.
  • Position a rack in the middle of your oven, and preheat it to 375F.
  • While your oven is heating up, add the butter and the garlic to a small microwave safe bowl, and microwave for 10-20 seconds - just enough to melt the butter.
  • Then, add in the honey, half of the chopped cilantro, the lime juice and the zest to the melted butter mixture, and whisk to combine.
  • Using a small culinary brush, brush the salmon on both sides. Then, roll or fold the sides of the foil around the salmon (like a little boat) and pour any remaining honey butter mixture on top. The foil boat will ensure all that sauce stays under/around the salmon while it bakes.
  • Bake until cooked through (about 15-20 mins) depending on how thick your fish is and how "done" you like your salmon.
  • Serve with the remaining chopped cilantro and lime slices!

Kosher salt
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
1/2 lemon, sliced into rounds
Parsley for garnish
Zest of 1 large lemon
Juice of 2 lemons
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
5 garlic cloves, chopped
2 tsp dry oregano
1 tsp sweet paprika
1/2 tsp black pepper

Steps:

  • Heat oven to 375 degrees F.
  • Make the lemon-garlic sauce. In a small bowl or measuring cup, mix together the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk.
  • Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil.
  • Now, pat salmon dry and season well on both sides with kosher salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.)
  • Fold foil over the salmon (seam-side up). Bake for 15 to 20 minutes until salmon is almost completely cooked through at the thickest part (cooking time will vary based on the thickness of your fish. If your salmon is thinner, check several minutes early to ensure your salmon does not overcook. If your piece is very thick, 1 1/2 or more inches, it may take a bit longer.)
  • Carefully remove from oven and open foil to uncover the top of the salmon. Place under the broiler briefly, about 3 minutes or so. Watch closely as it broils to make sure it doesn't overcook and the garlic does not burn.)

Steps:

  • Preheat oven to 400 degrees.
  • Rinse and pat dry salmon fillet.

  • Preheat the oven to 400 degrees Line a large rimmed baking sheet with parchment paper and lay the salmon fillet on it. Pat dry with a paper towel.

2 cloves minced garlic
2 tbsp honey

1 lemon sliced into half-moons

Steps:

  • Preheat the oven to 200C/400F. Line a baking tray with foil or a silicon mat.
  • Place the salmon fillets, skin-side-down on the baking tray.
  • In a small bowl, mix together the melted butter, garlic, honey, parsley, salt, pepper and paprika.

6 sprigs fresh dill
2 lemons (thinly sliced)

Steps:

  • Remove the salmon from the fridge and let rest at room temperature while preparing the foil and the garlic butter.
  • Preheat oven to 375°F and line a rimmed baking sheet with a large piece of foil. Spray with non-stick cooking spray.
  • In the middle of the foil lay 3 sprigs of dill and 1 lemon thinly sliced.
  • Lay the salmon, skin side down, on top of the dill and lemons. Roll up the sides of the foil so the salmon is in a pouch.
