SHRIMP DIABLO

Shrimp diablo sauteed with red pepper flakes, jalapenos, garlic, onions, green bell peppers and simmered in a rustic tomato sauce.

1 pound shrimp (peeled and deveined)
3/4 teaspoon kosher salt (divided)
1/4 teaspoon black pepper
½ teaspoon crushed red pepper flakes
2 tablespoons olive oil
1 tablespoon minced garlic
1 tablespoon minced jalapeno
1 cup diced yellow onion (¼-inch dice)
¼ teaspoon dried oregano
¼ teaspoon dried thyme
½ cup diced green bell pepper (¼-inch dice)
1/4 cup tequila or dry white wine
½ cup unsalted vegetable stock
14 ounce can of whole tomatoes (cut into ½-inch dice, reserve juice)
1 teaspoon chopped parsley

Steps:

  • Combine shrimp with ½ teaspoon salt, pepper, and red pepper flakes.
  • Heat a large skillet over medium-low heat, add 2 tablespoons olive oil.
  • Add garlic, jalapeno, yellow onion, oregano, and thyme. Stir and cook until onions are tender and garlic is fragrant but not browned, 2 minutes.
  • Add the shrimp to the pan in one layer, turn heat up to medium. Cook for 2 minutes, not moving the shrimp.
  • Flip shrimp over and cook until just cooked through 1 minute. Transfer to a clean bowl.
  • Add bell peppers and saute for 1 minute
  • Turn heat up to medium-high, add in tequila, vegetable stock, diced tomatoes, tomato juice, and ¼ teaspoon salt. Bring to a simmer and allow tomato mixture to reduce until slightly thickened and most of the liquid has evaporated about 8 to 10 minutes.
  • Turn heat down to low and add in the cooked shrimp. Stir and cook until shrimp is warmed through, 1 to 2 minutes.
  • Garnish shrimp diablo with parsley.

Steps:

1 ½ tablespoons olive oil
1 pound shrimp, peeled and deveined
salt to taste
6 cloves garlic, finely minced
¼ teaspoon red pepper flakes
3 tablespoons lemon juice
1 tablespoon caper brine
1 ½ teaspoons cold butter
⅓ cup chopped Italian flat leaf parsley, divided
1 ½ tablespoons cold butter
water, as needed

Steps:

  • Heat olive oil in a heavy skillet over high heat until it just begins to smoke. Place shrimp in an even layer on the bottom of the pan and cook for 1 minute without stirring.
  • Season shrimp with salt; cook and stir until shrimp begin to turn pink, about 1 minute.
  • Stir in garlic and red pepper flakes; cook and stir 1 minute. Stir in lemon juice, caper brine, 1 1/2 teaspoon cold butter, and half the parsley.
  • Cook until butter has melted, about 1 minute, then turn heat to low and stir in 1 1/2 tablespoon cold butter. Cook and stir until all butter has melted to form a thick sauce and shrimp are pink and opaque, about 2 to 3 minutes.
  • Remove shrimp with a slotted spoon and transfer to a bowl; continue to cook butter sauce, adding water 1 teaspoon at a time if too thick, about 2 minutes. Season with salt to taste.
  • Serve shrimp topped with the pan sauce. Garnish with remaining flat-leaf parsley.

Juice of 1 lemon, or more, to taste
2 tablespoons chopped fresh parsley leaves

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium high heat. Add shrimp, salt and pepper, to taste. Cook, stirring occasionally, until pink, about 2-3 minutes; set aside. Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1 minute. Stir in chicken stock and lemon juice. Bring to a boil; reduce heat and simmer until reduced by half, about 1-2 minutes. Stir in remaining 6 tablespoons butter, 1 tablespoon at a time, until melted and smooth. 1 lime, juiced, or more to taste

  • Preheat an outdoor grill for high heat and lightly oil the grate.

This is my favorite shrimp tacos recipe with spiced shrimp served on warmed tortillas, topped with crunchy slaw and spicy, creamy jalapeno sauce. So easy to make!

1/2 head small green cabbage (shredded)
1 fresh Fresno pepper (chopped (or use a jalapeno))
1/2 cup chopped cilantro
Juice from 1 large lime
2 tablespoons champagne vinegar (use white vinegar as a substitute)
1 tablespoon honey
Sea salt to taste
4 fresh jalapeno peppers
1/2 small onion (roughly chopped)
2-3 garlic cloves
1/4 cup Neutral oil (use corn oil, avocado oil, or a neutral vegetable oil)
1/2 teaspoon salt
1 pound shrimp (peeled and deveined)
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon onion powder
1/2 teaspoon cayenne
1/4 teaspoon white pepper
Salt to taste
1 tablespoon olive oil
8 flour tortillas (warmed (or use corn tortillas))
EXTRA TOPPINGS: Sliced roasted jalapeno peppers or chiles toreados, chopped avocado, fresh squeezed lime, your favorite hot sauce

Steps:

  • Toss together the shredded cabbage, chopped peppers, cilantro, lime juice, vinegar, honey and salt in a large bowl. Refrigerate until ready to use.
  • Slice the stems from the jalapeno peppers and add them to a medium sized pot along with the onion.
  • Cover with water and bring to a quick boil. Reduce the heat and simmer for about 15 minutes, or until the jalapeno peppers soften up. They will turn dull green and you can pierce them with a fork easily, but do not let them become mushy. Strain but keep the liquid on hand.
  • Add the boiled jalapenos and onion to a food processor along with the garlic, oil and salt. Process until very smooth and creamy, about 4-5 minutes.
  • If you'd like a thinner sauce, add in a few tablespoons of the reserved boiling water.
  • Taste and adjust for salt.
  • Pat the shrimp dry and toss them in a bowl with all of the seasonings to coat.
  • Heat the oil in a pan to medium heat and add the shrimp. Cook gently for 4-5 minutes, or until the shrimp are cooked through. Remove from heat.
  • Serve the pieces of shrimp onto warmed tortillas, then top with crunchy cabbage slaw and creamy jalapeno sauce. Don't forget the hot sauce!
