½ small red onion, finely chopped
8 medium tomatoes (about 500g), coarsely chopped and drained
2-3 garlic cloves, crushed
6-8 leaves of fresh basil, finely chopped
30ml balsamic vinegar
60-80ml extra virgin olive oil
1 loaf crusty bread

Steps:

  • In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
  • Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.

1/4 cup olive oil
3 tablespoons chopped fresh basil
3 to 4 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
4 medium tomatoes, diced
2 tablespoons grated Parmesan cheese
1 loaf (1 pound) unsliced French bread

Steps:

  • In a large bowl, combine oil, basil, garlic, salt and pepper. Add tomatoes and toss gently. Sprinkle with cheese. Refrigerate at least 1 hour. , Bring to room temperature before serving. Cut bread into 24 slices; toast under broiler until lightly browned. Top with tomato mixture. Serve immediately.

3 lbs vine ripened tomatoes (seeded, peeled & diced)
3/4 cup fresh basil, sliced thin
freshly ground sea salt, to taste
4 -6 large garlic cloves, depending on your love of garlic
1/2 cup good quality olive oil
1 tablespoon fresh oregano, minced
1 tablespoon fresh thyme, minced
French bread, sliced 1/2 inch thick
fresh mozzarella cheese, sliced thin (NOT THE SHREDDED!)

Steps:

  • Combine tomatoes and 1/2 cup fresh basil in a colander, sprinkle with salt and toss to coat; let drain 1 hour.
  • Preheat oven to 375°F
  • In a large bowl combine the drained tomato/basil mixture with the minced garlic, 1/4 cup olive oil, remaining 1/4 fresh basil, oregano and thyme.
  • Let stand at room temperature 15 to 20 minutes to allow flavors to blend.
  • During this time brush French bread slices lightly with the remaining olive oil.
  • Toast "lightly" in the oven (just a few minutes).
  • Pull out and place a small amount of tomato mixture on top of the lightly toasted French bread slices.
  • Top each piece with a small amount of Mozzarella.
  • Toast in the oven until cheese has melted and its golden brown.
  • Serve and enjoy.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread the bread slices in a single layer on a large baking pan.

1/4 of a red onion (finely chopped (or 3 cloves finely chopped garlic))
4 tablespoons shredded fresh basil
2 tablespoons olive oil

Steps:

  • Season chicken with Italian seasoning, garlic and salt. Heat oil in a grill pan or skillet, and sear chicken breasts over medium-high heat until browned on both sides and cooked through (about 6 minutes each side). Remove from pan; set aside and allow to rest.
  • Combine the tomatoes, red onion, basil, olive oil in a bowl. Season with salt. Top each chicken breast with the tomato mixture and parmesan cheese.

12 slices prosciutto
1/4 cup extra-virgin olive oil, or more as needed
Six to eight 1/2-inch-thick slices Italian sesame loaf
Kosher salt and freshly ground black pepper
2 small cloves garlic
2 large heirloom tomatoes, diced (about 2 cups)
1/2 cup fresh basil leaves, roughly chopped
1/4 cup Kalamata olives, pitted and chopped
1/4 cup grated Parmigiano-Reggiano

Steps:

  • Preheat the oven to 400 degrees F.
  • Lay the prosciutto on a parchment-lined sheet tray. Bake until darkened and crispy, 10 to 12 minutes. Allow to cool fully, and then break up the prosciutto into pieces. Set aside.
  • Heat 2 ounces (1/8 cup) olive oil in a large saute pan over medium heat. Add half of the bread and let cook until the underside begins to brown, about 3 minutes, then flip the bread and finish the other side, about 3 minutes more. Sprinkle with salt and pepper. Remove from the pan and rub both sides with a garlic clove to perfume the toast. Wipe out the pan and repeat again with the remaining oil and bread.
  • Place the chopped tomatoes in a medium bowl. Grate the remaining clove garlic on a fine grater into the tomatoes. Add the basil, olives and half the Parmesan. Season with salt and pepper. Arrange the bread on a serving platter. Top the toasted garlic bread with the tomato mixture, then top with the crispy prosciutto pieces. Sprinkle with the remaining Parmesan.

This is truly the best cherry tomato bruschetta recipe, and it's the only one you need. It's ultra simple, super quick, and delicious.

3 cups heirloom grape or cherry tomatoes, diced
Handful fresh basil leaves, chopped
Olive oil
Sea salt
Splash of balsamic vinegar (optional)
1-2 French baguettes or ciabatta baguettes, sliced into 1/3-inch-thick pieces*
2-4 cloves garlic, peeled

Steps:

  • In a medium serving bowl, stir together the cherry tomatoes and basil. Drizzle a teaspoon or two of olive oil over top, generously sprinkle with salt, and toss to coat. Taste and season with more salt, if needed. If desired, add a small splash of balsamic vinegar, and toss again. Cover and refrigerate until ready to serve (can be made up to 8 hours in advance).
  • When ready to serve, preheat the broiler on high.
  • Spread the baguette slices out over a large baking tray and use a pastry brush to brush the top of each slice with olive oil. Sprinkle the tops with sea salt.
  • Broil the baguette slices for 2-4 minutes, or until golden brown and crisp on top. Then, carefully rub the top of each with the garlic (it will melt into the surface of the hot toasts).
  • Serve the warm toasts alongside the tomato basil mixture.

1 loaf bread (crusty Italian, sliced 3/4-inch thick, about 16 pieces)
2 tbsp. olive oil
2 cups tomatoes (fresh, chopped)
2 tbsp. basil (chopped)
4 cloves garlic (chopped very fine)
1/2 tsp. salt
1 oz. cheese (mozzarella, shaved)

Steps:

  • Gather the ingredients.
  • To begin with, combine the chopped tomatoes, basil, garlic, and salt in a small bowl and lightly toss together. Set aside.
  • Set the oven to the broil setting. Place the bread slices in a single layer on a large baking sheet coated with a small amount of cooking spray or olive oil. Using a basting brush, brush a small amount of the olive oil on the top of each slice of bread.
  • Place the bread in the oven and broil for about 1 minute, or just until the bread becomes lightly toasted.
  • Remove the bread from the oven, and spoon about 2 tablespoons of the tomato mixture on each slice. Top each with a couple of shaves of the mozzarella cheese. Return the bread to the oven and broil the bruschetta for another 30 seconds. Watch the bruschetta carefully during this time to make sure it does not burn. Remove the bruschetta when the cheese becomes melted, and the edges of the bread are lightly browned and toasted.
  • Remove the bruschetta to a plate or a wire rack to cool just for a few minutes, and then serve immediately.

7 tablespoons extra virgin olive oil
3 -4 sprigs fresh coriander, finely chopped
1/4 teaspoon dried rosemary
1/4 teaspoon dried oregano

1 pinch dried marjoram
1 pinch dried sage
5 garlic cloves, crushed
1/2 cup mozzarella cheese, grated
2 large tomatoes, sliced
2 slices focaccia bread, thick (or white rustic bread.)

Steps:

  • In a large grill pan, heat 2 tablespoons of olive oil.
  • When oil is hot, press slices of bread or foccacia firmly against the grill. Turn the flame on high until the bread has become slightly and pleasantly streaked with char lines.
  • Heat 5 tablespoons of olive oil on medium heat, and add crushed garlic.
  • Tilt the pan upwards so that the oil collects near the end and 'deep-fries' the garlic until golden brown, on medium to high heat. (this ensures a more wholesome garlic infusion in the oil as you're using a grill pan).
  • Set golden brown garlic aside.
  • In a small bowl, mix all the herbs together.
  • Put in tomato slices in the grill pan and sprinkle the mixed herbs liberally and all over the tomatoes.
  • Season with salt and pepper. If you have a cover for the grill pan, do so and let grill on a soft flame for 5 minutes or so. If not, leave to grill for about 7 minutes.
  • When the tomatoes are soft, but still retaining their shape - or the time has elapsed, add the grated mozzarella cheese.
  • Leave for another 5 - 10 minutes, or until cheese has melted and is bubbling.
  • Quickly (before the melted cheese hardens), scoop the cheese covered tomatoes out, and place side by side, slightly overlapped, on the grilled bread. (I find using a fork and a spoon helps to scoop the tomatoes out without breaking them.).
  • Season with more salt and pepper, and add chopped fresh coriander herb on the bruchetta.
  • Serve immediately.

Take the basil in your hands and tear them into small pieces, avoid using a knife if you can, add it to the tomatoes.   • Rinse and dry your tomatoes. Halve each of them, use a finger to remove the seeds, and cut out the cores. Roughly cut the tomatoes into 1/2-inch pieces and place in a medium bowl. Tear the basil into small pieces, and add that as well. Add 2 tablespoons of the olive oil, a small splash of vinegar, and a pinch of salt. Gently toss, taste, adjust if necessary, and set aside.
