Steps:
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Cook peanuts in preheated oil until fragrant and hot, about 2 minutes. Transfer to paper-towel lined plates to drain. Season peanuts with salt.

- Heat 1 cup of oil until moderately hot.
- Add 1 cup of shelled raw peanuts and fry for 2 minutes until crisp.
- Drain on paper towel and sprinkle with garlic just before using (packaged peanuts can be used).

SPICY GARLIC-HERB PEANUTS
Put out these peanuts with garlic, rosemary and chiles for any party or game night.

Steps:
- For the garlic-herb spice blend: Mix together the rosemary, sage, thyme, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a small bowl and set aside.
- For the nuts: Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet with the oil.
- Put the egg white in a large bowl and whisk until frothy. Add the peanuts and toss to coat in the egg white. Add the spice blend and toss to coat.
- Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then stir in the chiles and transfer to a large bowl.

- While the peanuts soak, press garlic through a garlic press, and mix with salt; set aside. Peel shallots, and slice very thinly.
- Drain peanuts and remove any remaining skins by rubbing the peanuts in your hands slipping the skins off. Dry peanuts thoroughly. And rub them with the garlic salt mixture. Let sit 10 minutes.
- While the peanuts sit, balance a strainer over a medium glass bowl, and line a large baking sheet with paper towels. Heat the oil in a large skillet or wok.
