Crispy on the outside and soft and fluffy on the inside. The combination of herbs and garlic goes perfectly with these baby potatoes.

1 lb (16 oz) baby potatoes
2 garlic cloves, minced
1 tsp dried rosemary
1 tsp dried thyme
Salt and pepper
2 tbsp olive oil
Optional: parsley for garnish

Steps:

  • Preheat oven to 425 degrees F.
  • Boil potatoes in salted water until the potatoes are softened and a fork can easily poke into a potato, about 15-18 minutes, depending on the size of the potatoes. Drain and pat the potatoes dry using a paper towel.
  • Place the potatoes on a baking sheet (cover the baking sheet with aluminum foil for easy cleanup). Toss the potatoes with garlic, rosemary, thyme, salt, pepper, and oil.
  • Take a fork and carefully press down on each potato until the potato is flattened, but still holds together.
  • Space the potatoes on the baking sheet so they are not touching. Bake for 20-25 minutes, until the potatoes are crispy and lightly golden in appearance. Garnish with parsley if you like. Serve immediately.

8 small gold creamer potatoes (like Yukon gold), about 1 pound
Nonstick cooking spray
1 tablespoon olive oil
1/4 teaspoon salt

Steps:

  • Preheat the oven to 450 degrees F.
  • Steam the potatoes, whole, for 20 minutes, until they are still firm yet easily pierced with a fork. Drain.
  • Spray a baking sheet with cooking spray. Place a potato on the tray, cut a small cross about 1/4-inch deep into the potato and crush the potato with the back of a wooden spoon to flatten into a patty about 1/2-inch thick. Try to crush it just enough so it stays together with most of its skin intact. Repeat with the remaining potatoes.
  • Brush the tops of the potatoes with the oil, sprinkle with salt and bake until crisp and golden, about 20 minutes.

1kg small potatoes
4 shallots
8 garlic cloves, crushed with skin on
1 tbsp vegetable oil
1 tbsp olive oil
1 tbsp balsamic vinegar
salt and pepper

Steps:

  • Heat oven to 200C/180C fan/gas mark 6.
  • Wash the potatoes. Leave the skin on and cut each in half. Peel and halve the shallots.
  • Place the potatoes in a pan of boiling water for fifteen minutes or until the potatoes are soft (a sharp knife should pass straight through).
  • Put the vegetable oil in a large baking tray and place in the preheated oven.
  • Turn off the hob and drain the potatoes. Return them to the saucepan with all the other ingredients. Season generously.
  • Put a tight fitting lid onto the saucepan. Making sure you hold the lid down tightly, vigorously shake, bashing all the ingredients together and slightly crumbling the potatoes.
  • Spoon the contents into the baking tray and return to the oven to cook for thirty minutes, or until the potatoes are crispy and brown.

1 tablespoon fresh thyme leaves
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Place potatoes in a large saucepan and cover with cold salted water by 1 inch. Bring to a boil and simmer until just tender, about 15 minutes; drain well and let cool slightly. Place potatoes onto the prepared baking sheet. Using a flat dry measuring cup or glass, carefully smash the potatoes until flattened but still in one piece. Top with olive oil, garlic and thyme. 1 pound (450 grams) baby potatoes
2 tablespoons olive oil
1 clove garlic (crushed)
1 teaspoon parsley or basil
½ teaspoon ground black pepper
½ teaspoon salt

Steps:

  • Boil slightly salted water, then throw your baby potatoes into the pot. Leave them to cook for 15-20 minutes or until they're cooked through and soft.
  • Grease your baking tray with olive oil, and get the potatoes out of the pot and onto the baking tray.
  • Lightly crush the potatoes with a fork or a potato masher, but make sure not to over do it as you don't want really flat pieces of potato all over your baking sheet.
  • Using the excess olive oil on the baking tray, light brush the potatoes with the olive oil.
  • Season with freshly ground black pepper, and sea salt.
  • Sprinkle with either dried or fresh herbs and garlic.
  • Bake in the oven for 10-15 more minutes at 200°C (392°F). The baking time depends on the size of your potatoes, so keep checking on them as they bake.

Steps:

  • Cut potatoes into even sized chunks.
  • Place in cold, salted water& bring to a boil.
  • Lower heat& simmer until tender, about 10- 15 minutes.
  • Drain well& place back on burner (heat off) for several minutes.
  • Shake pot occasionally to dry potatoes.

2 lbs | 1kg potatoes Yukon Gold or Carisma
A light spray of olive oil
3 tablespoons melted butter
4 cloves garlic (, crushed)
1 tablespoon fresh chopped parsley
Kosher Salt and Black Pepper to taste
2 tablespoons Parmesan Cheese

Steps:

  • Pre-heat your oven to broil (or grill) settings to medium-high heat (about 200°C | 400°F).
  • Place potatoes in a large pot of salted water. Bring to the boil; cook, covered for 30-35 minutes or until just fork-tender. Drain well.
  • Lightly grease a large baking sheet or tray with cooking oil spray. Arrange potatoes onto the sheet and use a potato masher to LIGHTLY flatten the potatoes in one piece (not too hard or they will end up mashed).
  • Mix together the butter, garlic and parsley. Pour the mixture over each potato. Sprinkle with salt and pepper and lightly spray with olive oil spray.
  • Broil (or grill) until they are golden and crispy (about 10-15 minutes). Remove from oven, sprinkle over the parmesan cheese and return to the oven until the cheese is melted.
