6 tbsp Butter
3 cloves Garlic (minced)
1 cup Water
1/4 cup Fresh Basil (chopped)

Steps:

  • Prior to cooking, be sure to rinse the clams. Place them in a large bowl with water and let them sit for 15 minutes. Drain and rinse to get rid of any sand.
  • In a deep skillet (or pot), begin to melt 3 Tbsp of butter. Add minced garlic; saute until fragrant.
  • Add water, remaining butter and clams. Bring to a gentle boil. Cover and continue to cook for another 7-8 minutes (or until the clams have opened).
  • Remove from heat and top with the juice of 1 lemon and fresh basil.
  • Serve with additional lemon wedges if desired.

This is an extremely simple and quick dish to cook using fresh lala clams which is one of Malaysians' favourite clams.

500 gram clams (cleaned)
2 cloves garlic (chopped)
1 tsp fresh ginger (chopped)
1 red chili (chopped)
1 tbsp Oyster Sauce
1/2 cup chinese cooking wine

Steps:

  • First briefly clean the clams under running water.
  • In a large colander, add enough water and add at least 1 tablespoon of salt.
  • Soak the clams for about 2 hours.
  • Remove the clams from the used container of water.
  • Then rinse them under running water to remove any mud trapped inside the shells. Replace with fresh container of water and continue to soak the clams for another 20 minutes. Repeat this process for at least 3 times to ensure the clams are thoroughly cleaned.
  • Then use a brush to clean off any sand or dirt on the exteriors of the clams. Wash and clean the clams for the last time.
  • And we're done cleaning the clams!
  • Next, prepare all the ingredients needed to stir-fry the clams.
  • Heat up cooking oil in wok.
  • Then add in chopped garlic, ginger and red chili. Stir fry over medium heat until fragrant and the garlic turns slightly golden brown.
  • Quickly add in the cleaned and well drained clams.
  • Stir fry until the shells of the clams turn orange in colour. Pick out the clams that don't open and discard them.
  • Then add in oyster sauce and toss the clams for about 1 minute until the sauce is well mixed into the clam.
  • Lastly add in the chinese cooking wine and stir fry until all the ingredients are well combined.
  • Just before dishing out, mix in the cut spring onion.
  • Serve immediately with rice.

1 tablespoon fresh minced garlic
1 cup white wine
1 tablespoon lemon juice
3 dozen little neck clams, rinsed and scrubbed
1/3 cup chopped fresh Italian parsley
Wedges from 1 lemon for garnish, if desired

Steps:

  • In a large skillet (that has a lid), melt 2-1/2 tablespoons of the butter over medium heat. Add garlic and cook, stirring constantly, until fragrant (about 30 seconds).
  • Add wine and lemon juice. Bring to a boil.
  • Add clams and remaining butter. Cover and steam until clams have opened (about 7-8 minutes). Occasionally shake skillet while steaming.
  • Discard any clams that do not open. Sprinkle evenly with parsley and garnish with lemon wedges, if desired. Serve with a french baguette or over a bed of cooked pasta.

25 small clams (scrubbed)
2 tablespoon olive oil
1 tablespoon butter
1 small brown onion (diced)
2 to 3 cloves garlic (finely chopped)
1 teaspoon dried chili flakes
1/2 teaspoon sea salt
3 medium tomatoes (roughly chopped)
4 ounces dry spaghetti (or linguine)
1/2 cup dry white wine
2 tablespoon fresh parsley (finely chopped)

Steps:

  • Gather the ingredients.
  • Boil a generous amount of water in a large pot. Soak the clams in a bowl of cold water for about 10 minutes. Drain and rinse under cold running water.
  • In a large, heavy-based pot, heat the oil and butter over medium heat. Add the onion and sauté for 2 to 3 minutes, stirring occasionally, until translucent.
  • Add the garlic, chili flakes, and salt to the pot and stir for about 20 seconds.
  • Add the chopped tomatoes and fry for about 7 minutes, until their juice starts to evaporate.
  • Salt the boiling water and cook the pasta according to packet instructions.
  • In the pot with the sauce, turn the heat up to medium-high and add the clams to the pot. Cover with a lid. After about 2 to 3 minutes, add the wine to the pot. Cover again and shake the pot from side to side.
  • Cook the clams for a further 5 minutes, or until they open. Add the parsley and stir with a wooden spoon. Cover and shake the pot again. Check for any unopened clams and discard.
  • Approximately at this point, the pasta should be ready to be drained. Drain and place in a big serving bowl or large plate.
  • Pour the clam mixture on top. Mix the pasta and sauce well with the help of two big serving forks or some tongs. Serve immediately.

Juice of 1 lemon
Small bunch of fresh parsley leaves (roughly chopped)

Steps:

  • Begin by heating a large skillet over medium heat and add the butter and olive oil. Cook until the butter is almost fully melted.

3 dozen hard shelled clams, well scrubbed
1 tablespoon cornmeal
2 tablespoons olive oil
8 cloves garlic, peeled & minced
1/4 cup water
1/4 cup wine

  • Discard any clams that are not firmly shut.
  • Place them in a bowl of cold water and sprinkle the cornmeal on the water, refrigerate for 1 1/2 hrs Drain& scrub the clams again under cold running water.
