GRILLED HONEY CHIPOTLE WINGS RECIPE BY TASTY

- Pat dry chicken and place in a large mixing bowl or plastic bag. Toss with cornstarch, garlic powder, and one teaspoon of kosher salt.
- Place chicken in a single layer on a cookie sheet or wire rack and refrigerate for at least an hour, up to overnight.
- In a food processor or blender, combine chipotles, lime juice, honey, and the remaining salt. Puree until smooth. Set aside until ready to grill.
- Preheat grill to medium high heat. Grill wings until just starting to brown on the underside, about 5 minutes, then flip and repeat.
- Using a basting brush, coat the top side of the wings with chipotle puree. Flip and cook until exterior just starts to char. Baste the other side, flip and repeat.
- Remove wings from heat and let cool for at least 5 minutes. Serve with your preferred garnish and dipping sauce.

CHIPOTLE-LIME CHICKEN WINGS
Steps:
- Cut 3 pounds of chicken wings into 3 sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
- Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
- Put the wings on the cool side of the grill. Cover the grill, and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes.
- While the wings cook, combine 1/3 cup olive oil, 3 tablespoons chopped chipotles in adobo (include some of the sauce), 3 tablespoons lime juice, 1 tablespoon minced garlic, salt and pepper in a large bowl.
- When the wings are cooked, add them to the bowl with the sauce, and toss to coat. Now put the wings on the hot part of the grill and cook, uncovered, turning as necessary, until they're nicely browned on both sides.

GARLIC AND LIME CHICKEN WINGS WITH CHIPOTLE MAYONNAISE
This is adapted from a recipe from one of our favorite cooking magazines, Cooking Pleasures. It is a different type of marinade for wings, as it contains no sugar or honey. The chipotle mayonnaise for dipping is really tasty, so don't skip it.

- COOKER: Medium or large round or oval
- SETTING AND COOK TIME: HIGH for 3 to 4 hours
- Rinse the wings and pat dry.
- To make the marinade, place the cumin seeds in a small skillet and toast over medium heat until golden and fragrant, shaking the pan to assure even toasting. Remove from the skillet and crush in a mortar with a pestle. Combine the crushed cumin seeds with the remaining marinade ingredients in a large shallow bowl and whisk to combine. Add the wings, in a single layer if possible, so they sit in the marinade. Cover and refrigerate for about 4 hours.
- Coat the inside of the crock with nonstick cooking spray. Heat a large, heavy skillet over medium-high heat. Lift the chicken out of the marinade, reserving the marinade, and brown it nicely in the hot skillet, 3 to 5 minutes per side, in batches if necessary. As the wings brown, transfer them to the slow cooker. Pour over the reserved marinade. Cover and cook on HIGH for 3 to 4 hours. If possible, stir gently halfway through cooking with a wooden spoon, bringing the wings on the top to the bottom to coat with sauce.
- To make the chipotle mayonnaise, combine all the ingredients in a small bowl and whisk until smooth, or pulse a few times in a food processor for a smoother sauce; cover and refrigerate until ready to serve.
- Serve the wings hot or warm, with the chipotle mayonnaise for dipping.
BBQ VOLCANO CHIPOTLE WINGS

- For the volcano chipotle sauce: In a saucepot over medium heat, combine the ketchup, chipotle puree, vinegar, Worcestershire sauce, hot sauce, cayenne, granulated garlic, Sriracha, red pepper flakes, brown sugar, hot sauce, mustard, salt and liquid smoke for 15 minutes, stirring occasionally. Keep partially covered for some ventilation. For maximum heat, add more red pepper flakes. Turn the deep fryer to 375 degrees F.
- For the chicken wings: No seasoning needed. Drop the wings, in batches, in the deep fryer or home fryer for 8 minutes. A good way to know when the wings are done is when they float on the top of the oil for 30 seconds. If you don't have a fryer at home, preheat your oven to 450 degrees F. Place the wings on a greased sheet tray and cook for 25 minutes. Flip your chicken at the halfway mark. Remove the wings from the fryer or oven and place in a bowl. Cover with your volcano chipotle sauce and toss. Best served with blue cheese and celery.

- Mix soy sauce, garlic, molasses, brown sugar, honey, and garlic salt together in a large bowl. Pour 3/4 of the marinade mixture into a resealable freezer bag and add wings. Release any air from the bag and seal. Place marinating chicken wings and remaining marinade into the refrigerator and chill for 5 to 6 hours.
- Remove wings from the refrigerator 1 hour before baking.
- Preheat the oven to 225 degrees F (110 degrees C). Line a baking sheet with aluminum foil and top with an oiled rack about 1/2-inch above the surface of the foil.
- Space marinated wings on the rack about 1/2-inch apart.
- Bake in the preheated oven for 20 minutes. Baste wings with some of the remaining marinade; repeat baking and basting every 20 minutes 2 more times for a total of 1 hour. Turn wings over, baste, and bake 30 minutes more. Turn wings over again, sprinkle with garlic salt, and increase oven temperature to 350 degrees F (175 degrees C). Continue baking 15 minutes more.

I was looking for a baked hot wing recipe.....using chipotle.....there were none. Here it is. Sugar free too. Prep time does NOT include marination time.

- Remove the tips from the wings a reserve for another use like stock.
- Separate the wings at the joints.
- Wash wings and pat dry with paper towels.
- Place wings in container with a lid or sealable plastic bag.
- Remove the peppers from the adobo and chop fine.
- Mix chopped peppers with the adobo and other ingredients.
- Pour over wings, stir around till they are coated and allow to marinate for 1 to 24 hours.
- Preheat oven to 350 degrees.
- Place wings on foil lined cookie sheet.
- Bake for 30 to 45 minutes till wings are done.

Found this great Wing Sauce Recipe online. I wanted to trying something different than the normal Buffalo Sauce for my smoked Chicken Wings. The Sauce turned out OUTSTANDING on the Wings. The wife and kids loved the Wings. The In-Laws even said it was the best Wings they have ever had. The Sauce has the best of both worlds, Spicy and Sweet. I'm even thinking about using this Sauce on Smoked Ribs. I'm a big fan of this Website and I just want to share this great recipe with everyone here.
