PARMESAN BOW TIE PASTA WITH CHICKEN
On lazy summer weekends, we like chicken and yellow squash tossed with bow tie pasta. Add extra fresh grated Parmesan for a Sunday touch. -Sarah Smiley, Bangor, Maine

- In a 6-qt. stockpot, cook pasta according to package directions., In a large cast-iron or other heavy skillet, heat 1 tablespoon butter over medium heat. Add chicken; cook and stir until no longer pink, 7-9 minutes. Add 1/4 teaspoon each salt and pepper; remove from pan. In same pan, heat 1 tablespoon butter over medium heat. Add squash; cook and stir until tender, 3-5 minutes. Remove from heat., In a small saucepan, melt remaining 3 tablespoons butter over medium heat. Stir in flour and garlic until blended; gradually whisk in milk. Bring to a boil, stirring constantly until thickened, 1-2 minutes. Remove from heat; stir in cheese and the remaining salt and pepper., Drain pasta; return to pot. Add chicken, squash and sauce; heat through, stirring to combine.

GARLIC PARMESAN CHICKEN WITH BOW TIE PASTA
This garlic parmesan chicken is the perfect dinner recipe. The side of bow tie pasta is also delicious and easy to make.

Steps:
- In a large pan or skillet, heat olive oil and butter over medium heat. Add chicken. Cook until no longer pink.
- Add in onions and peppers and continue to cook untilchicken is fully cooked through and browned.
- Stir in garlic, salt and pepper and cook for an additional minute. Add uncooked pasta, milk, cream and chicken broth.
- Stir and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes. Stir in parmesan cheese.
- If the mixture is too thick, add more milk as needed until desired consistency is reached.
GARLIC CHICKEN AND VEGETABLE BOWTIE PASTA

Steps:
- 1. Preheat your oven to 425 degrees.
- 2. Spray a shallow baking dish with cooking spray and place 2-3 chicken breasts in it (more if you like).
- 3. Grab some Olive Garden Italian Dressing (or another Italian dressing of your choice) and pour about 1/3 C over the top of the chicken. Pop it into the oven and bake for 30 minutes, or until the juices run clear and it's not longer pink on the inside.
- 4. Cook 1 (16 ounce) box of bowtie pasta noodles according to package directions. Strain the water from the pasta when it's cooked through, add the hot pasta back into the pan you cooked it in. Add 1 Tb olive oil and stir to combine. Cover the pot and set aside.
- 5. While your pasta is cooking heat a large, deep skillet up over medium high heat. Add 2 Tb olive oil, allow it to get hot and add 1 C sliced carrots. Allow them to cook for 3-5 minutes.
- 6. Slice 2 small zucchini into 1/4 inch rounds. Chop 1 onion and 1 red bell pepper into small pieces. Mince 1 Tb fresh garlic. Add them and 1 (8 ounce) package sliced mushrooms to the skillet. Saute until crisp tender. Should only take 7-8 minutes. Sprinkle generously with salt and pepper.
- 7. When the veggies are done add the cooked pasta to the skillet. Give it a nice stir to combine.
- 8. Add about 3/4 C of the Italian Salad Dressing. Give it a nice stir to combine and then let the veggies and pasta saute together, stirring occasionally, for 2-3 minutes. You want the dressing to heat through and the pasta to get a little bit of a sear on it.
- 9. Remove the pan from the heat and add 3/4 C grated parmesan cheese. Stir to combine.
- 10. When the chicken is done allow it to rest for 5 minutes then slice it and add it to the pasta and veggies. Give everything a taste and add more salt and pepper to your liking.
- Enjoy!

- Place chicken in a saucepan, and add water to cover. Boil 20 minutes. Allow to cool, then pull meat into shreds.
- Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
- In a large skillet over medium-high heat, combine chicken broth, red pepper, garlic, broccoli, salt and pepper. Cover, and simmer for 8 to 10 minutes, until broccoli is crisp-tender. Stir in cream cheese until smooth. Mix in chicken and pasta until evenly coated. Garnish with Parmesan cheese.

BOW-TIE SKILLET ALFREDO

- Bring a large pot of water to a boil. Cook the pasta according to the package directions. Drain and set aside.
- Slice the chicken into thin strips and season with salt and pepper. Heat the butter and oil in a large skillet over medium-high heat. Add the chicken strips and cook until deep golden brown on both sides and done in the middle. Remove the chicken from the skillet and add the minced garlic. Cook the garlic for 1 minute, then pour in the broth. Let it bubble up and reduce for 1 1/2 to 2 minutes.
- Next, add the half-and-half, cream and some salt and pepper. Add the Parmesan, whisking constantly until it's all combined. Allow the liquid to heat up and thicken for a few minutes. If it gets too thick, you may thin it with a little chicken broth.
- When the sauce looks good, remove it from the heat. Return the cooked chicken to the skillet along with the grape tomatoes, spinach and pasta. Toss, taste, adjust the seasoning, top with minced parsley and serve immediately in the skillet!

- 1. Fry chicken in oil over medium heat until done. Sprinkle with salt and remove from skillet. Keep warm. 2.Cook garlic in oil until golden. Add mushrooms, green onions and peppers - cook 2 minutes. Add tomatoes, broth, red pepper, cornstarch and salt. Heat to boiling then reduce heat and simmer 5 minutes. Remove from heat. 3. Combine chicken, hot mixture, pasta and cilantro. Sprinkle with fresh parmesan to your liking and enjoy! *Use less crushed red pepper to make it mild. Also, I add the peppers when I have them on hand - zucchini and squash are delicious too. You can omit the chicken as well for a healthy, vegetarian dish.
