GARLIC CHICKEN, PAN FRIED RECIPE
Pan fried Garlic Chicken recipe, is my son's all-time favorite. The recipe and the making are really simple, with just five ingredients.

Steps:
- Wash, clean chicken breast meat. Using fork make small punches to the meat, this helps the meat to absorb all the flavors of the herb. Add 3 tbsp of chopped garlic(reserve 1 tbsp of garlic for seasoning), salt, red chili flakes, thyme. Marinate for about 30 mins to 2 hours.
- In medium flame heat oil in the pan, add remaining reserved chopped garlic. Saute for couple of seconds. Add marinated chicken to the pan. Cook one side for about 7-8 minutes or until it becomes golden brown in color. Flip it to the other side and continue to cook until it gets cooked completely.
- Serve immediate with some fresh salad.

Leftover brown rice is reborn in this chicken fried rice with peppers and onions. Black pepper, paprika, or dried parsley may be used to season after this is cooked.

- Heat 1 tablespoon of vegetable oil in a large skillet set over medium heat. Add the chicken, bell pepper, green onion and garlic. Cook and stir until the chicken is cooked through, about 5 minutes. Remove the chicken to a plate and keep warm.
- Heat the remaining tablespoon of oil in the same skillet over medium-high heat. Add the rice; cook and stir to heat through. Stir in the soy sauce, rice vinegar and peas, and continue to cook for 1 minute. Return the chicken mixture to the skillet and stir to blend with the rice and heat through before serving.

- In a shallow dish, mix together the garlic powder, pepper, salt, paprika, bread crumbs and flour. In a separate dish, whisk together the milk and egg.
- Heat the oil in an electric skillet set to 350 degrees F (175 degrees C). Dip the chicken into the egg and milk, then dredge in the dry ingredients until evenly coated.
- Fry chicken in the hot oil for about 5 minutes per side, or until the chicken is cooked through and juices run clear. Remove from the oil with a slotted spatula, and serve.

- Preheat the oven to 250°. In a small bowl, whisk the 2 tablespoons of canola oil with the garlic cloves and 1/2 tablespoon each of the granulated garlic and dried parsley. Rub the mixture all over the chicken and under the skin. Season the chicken with salt and pepper and set on a large rimmed baking sheet. Bake for about 1 hour, until an instant-read thermometer inserted in the thickest piece registers 150°. Let cool slightly.
- Spread the cornstarch in a pie plate. In another pie plate, beat the eggs with a pinch of salt. In a large resealable plastic bag, mix the flour with the panko, 1 1/2 teaspoons of salt, 1/2 teaspoon of pepper and the remaining 1 tablespoon each of granulated garlic and dried parsley.
- Line a baking sheet with wax paper. Working in batches, dredge the baked chicken in the cornstarch and shake off the excess, then dip in the egg and coat thoroughly with the panko flour. Transfer the chicken to the prepared baking sheet.
- In a large saucepan, heat 2 inches of canola oil to 375°. Add half of the chicken and fry over moderately high heat, turning once, until deep golden brown and an instant-read thermometer inserted in the thickest part of each piece registers 165°, about 6 minutes for the breasts and 8 minutes for the drumsticks, thighs and wings. Transfer the fried chicken to paper towels to drain. Let the oil return to 375° and fry the remaining chicken. Transfer all of the fried chicken to a platter and serve with lemon wedges.

- Marinate chicken legs in fish sauce, pepper and calamansi juice for a few hours. Prick the chicken legs with a fork so the chicken will absorb the marinade.
- Heat the oil in a frying pan and place the chicken with the skin side down and fry for about 5 minutes. Add the cloves of garlic and fry until golden brown.
- Turn the chicken on the other side after 5 minutes and fry until chicken is cooked through. Remove the garlic from the pan once color turns golden brown and set aside.
- Once cooked, remove chicken from the pan and place them on paper towels to absorb excess oil. To serve, transfer to a serving plate and top with the pan-fried garlic.

- If using a whole chicken, first cut off the whole legs on each side and separate the thighs from the drumsticks. Next, cut out the backbone, then remove the center breastbone. Halve the breasts to separate. Then, cut each breast crosswise so that one piece has the wing with about a third of the breast and the other piece has most of the breast; remove the tips from each wing if you’d like. You will have 8 pieces total; save the chicken carcass for making stock or discard.
- Set the pieces on a large cutting board and dry them thoroughly with paper towels. Season the chicken all over with 1 tablespoon salt, 2 teaspoons pepper and 2 teaspoons garlic powder. In a large bowl or brown paper grocery bag, combine the flour, 1 tablespoon salt and the remaining 1 tablespoon pepper; shake to combine. Add two chicken pieces to the bowl or bag and toss to coat evenly in the flour. Transfer the coated pieces to a wire rack set over a rimmed baking sheet and repeat dredging the remaining chicken pieces.
- Let all the pieces sit on the rack for at least 10 minutes, then dredge the pieces a second time. Discard the flour in the bag, fold the bag flat and reserve the bag. In a small bowl, combine the remaining ½ teaspoon salt and 1/8 teaspoon garlic powder and reserve.
- Pour the oil or melt the shortening or lard in a large, deep cast-iron skillet or heavy-bottomed pot (it should come about ¾ inch up the side). Attach a deep-fry thermometer to the side of the pan and heat the fat to 375 degrees over medium-high heat.
