Wrapping up an indecisive weather weekend (it was a sunny 65 degrees yesterday and a wintry 40 degrees today - c'mon spring ????????????) on the couch in my comfies with a glass of wine + this cozy full-of-flavor meal that's going to keep feeding me all week ☺️. - Preheat oven to 400ºF. Toss 1 pound quartered Yukon gold potatoes in 1 tablespoon olive oil; season with salt and pepper. Arrange potatoes on a large baking sheet and bake for 15 minutes; remove from oven.
- While the potatoes are roasting, combine garlic ghee, minced garlic, and a splash of lemon juice in a small bowl; microwave for 30 seconds, or until melted. Season salmon and asparagus with sea salt and black pepper. Once the potatoes are removed from the oven, push them to one side of the baking sheet (they're not finished cooking yet), and arrange salmon and asparagus, as seen in the photo.
- Drizzle the salmon, asparagus and potatoes with lemon garlic butter sauce. Bake for 10-15 minutes or until salmon is cooked through. Remove from oven and turn it to broil. Broil for 5 minutes or until salmon, potatoes, and asparagus are crispy.

- Preheat oven at 450 degrees Fahrenheit. Line a large rimmed baking sheet with aluminum foil. Set aside.
- Make Garlic Herb Butter - In a small bowl, add all ingredients of garlic butter - room temperature butter, minced garlic, herbs, chili flakes, 1 tsp lemon juice, salt, and black pepper. Mix with back of fork until everything is well mixed into the butter. Set aside.
- Prepare Asparagus: Remove hard stems of asparagus (about 2 inch from the bottom). Place asparagus on baking sheet. Drizzle 1 tbsp olive oil on top. Sprinkle 1/4 tsp of salt and 1/4 tsp of black pepper. Massage to coat asparagus in oil and seasoning. Spread evenly on the baking sheet. Set aside.
- Prepare Salmon - Pat it dry salmon fillets with clean paper towel. Sprinkle with 1/4 teaspoon of each salt and pepper on both sides. Spread herb butter on both sides of salmon. Start from bottom side, then on top side run fingers on salmon fillets to evenly cover with herb butter. Place salmon on the sheet pan between the asparagus.
- Roast Salmon and Asparagus: Roast in 450 degrees preheated oven for 8 minutes or until just cooked through. Take out, let rest for 5 minutes. Divide into plates. Serve with lemon wedges on the side. Enjoy!

- Preheat oven to 425 degrees. Spread the olive oil in the bottom of a large baking dish and set aside. Prep the potatoes: Fill a large pot with water and bring to a boil. Add the potatoes, and boil for 10-12 minutes, or until you can pierce them easily with a fork. They shouldn't be fully cooked, though.
- Prep the asparagus: While the potatoes are boiling, prep the asparagus. Cut the thick white part off the ends, and cut the asparagus stalks in half. The smaller pieces will help ensure the asparagus cooks at the same rate as everything else. Lay the asparagus in the pan, and toss to coat with olive oil.
- Prep the salmon: Stir together the melted butter, garlic, and lemon juice. Lay the salmon filets in the pan, and pour or brush on half of the garlic butter.
- Cook: When the potatoes are done, add them to the pan, and toss to coat them with olive oil. Pour the remaining garlic butter mixture over the asparagus and potatoes. Sprinkle everything with a pinch of salt and pepper. (I did this more heavily on the veggies than the salmon.) Cook for 13-16 minutes, stirring the veggies halfway through. The salmon is done when it flakes easily with a fork. Pierce the veggie with a fork to check that they're tender. Enjoy immediately!

- Heat oven to 400°F | 200°C. On a large rimmed baking sheet, toss together potatoes with the oil, 1/2 tablespoon of garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spread out in an even layer and roast for 15 minutes until they're just starting to soften and brown.
- Push potatoes to one side of the sheet pan and arrange salmon down the centre. Rub salmon evenly with 1 1/2 tablespoons of the minced garlic and 2 tablespoons of parsley. Add the asparagus to the other side of the pan.
- Combine 1/4 cup of lemon juice and 1/4 cup of the melted butter together and pour the mixture over the salmon and asparagus. Season everything with the remaining salt and pepper.
- Return to oven and continue baking until the potatoes are golden and fork-tender and the salmon is opaque throughout, (about 10 minutes). Optional: broil in the last 2 minutes for charred edges.
- Meanwhile, in a small bowl, combine the remaining butter, garlic and lemon juice with the wine (or chicken stock). Serve with the salmon, veggies and lemon slices!
