Fast fix up makes broccoli not the same old same old! My teens love this and will only eat broccoli like this or smothered in cheese- this is healthier! I created this recipe after the broccoli served at my fave Chinese place. The variety of ingredients apply to many regional cuisines such as Italian, Asian and SW.

1 (14 ounce) bag frozen broccoli florets or 2 heads fresh broccoli, cleaned and cut into florets
1/4 cup water
2 tablespoons olive oil
1 tablespoon lemon juice, bottled is fine
2 garlic cloves, minced or 1 teaspoon garlic powder
1 teaspoon red pepper flakes (optional)
1 teaspoon salt, adjust to your liking

Steps:

  • Microwave broccoli and water in covered bowl on high for 6 minutes or til crisp tender.
  • While it is cooking mix the rest of the ingredients together.
  • Drain cooked broccoli.
  • Pour lemon garlic mixture over broccoli and mix to coat.
  • If using fresh garlic cover the dish and let sit for about 2 minutes to allow heat from broccoli to "cook" and remove the raw taste from the garlic.
  • If using garlic powder you are ready to serve.

1 tablespoon extra-virgin olive oil
1 tablespoon chopped garlic
1 ½ teaspoon lemon juice
½ teaspoon lemon zest
rounded ¼ teaspoon salt
Freshly ground pepper to taste

Steps:

  • Bring 1 to 2 inches of water to a boil in a large saucepan fitted with a steamer attachment. Add broccoli, cover and steam until crisp tender, 3 ½ to 4 1/2 minutes.
  • Meanwhile, heat oil and garlic in a medium skillet over medium heat, stirring occasionally. Cook until the garlic is fragrant and just starting to brown, 30 to 90 seconds. Scrape garlic mixture into a large bowl. Immediately add lemon juice. Add lemon zest, salt and pepper.
  • Stir broccoli into the lemon mixture and stir to coat. Serve hot.

Steps:

  • Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.
  • While broccoli is steaming, melt butter in a small saucepan over medium-low heat and stir in garlic and salt; turn heat to low and let the garlic gently fry until golden brown, about 8 minutes. Drain water from cooked broccoli and return to skillet; sprinkle with 2 more teaspoons lemon juice and the butter and garlic mixture. 1 tablespoon extra-virgin olive oil
1 medium clove garlic, crushed
Zest and juice of 1/2 lemon
Pinch of flaky sea salt

Steps:

  • Heat a medium sauté pan or wok over medium heat.
  • Rinse the broccolini under cold water and add to the heated pan or wok (you want to hear a nice sizzle). Put the lid on and allow to cook and steam for a couple of minutes, tossing once or twice so it doesn't burn.
  • Take off the lid and drizzle over 1 tablespoon olive oil, place the lid back on and cook the broccolini for a couple of minutes, shaking the pan from time to time to make sure it doesn't burn, until it is bright green and crisp-tender.
  • Stir the crushed garlic, lemon zest and a pinch of sea salt into the broccolini, then cover and cook for a further minute.

  • Bring a pot of water with a steamer insert (or that will fit a steamer basket of some type) to a boil. While the water is heating, cut the broccoli into florets. Cut the woody bottom of the stalk off and discard; peel the remaining upper stalk and slice into 1/8-inch thick slices.
  • Place the florets and stalk slices in the steamer to steam for 3-4 minutes.
  • While the broccoli is steaming, heat the oil over medium-high heat in a large skillet. Add the garlic and ¾ of the lemon zest; sauté allowing the oil to become fragrant (1-2 minutes).
