Create this easy yet impressive side dish with tender baby broccoli, pan-roasted garlic and golden Progresso® chicken broth.

4 bunches baby broccoli, trimmed, tough ends removed (2 lb)
3 tablespoons extra-virgin olive oil
6 garlic cloves, sliced
1/4 cup Progresso™ unsalted chicken broth (from 32-oz carton)
Salt and pepper

Steps:

  • In 4-quart saucepan, heat 1 inch water to boiling. Add broccoli; cook over high heat 3 to 4 minutes or just until stalks are crisp-tender. Drain; set aside.
  • In 12-inch skillet, heat oil over medium-high heat. Add garlic to oil; cook 1 to 2 minutes, stirring occasionally, until light golden brown. Add cooked broccoli and broth; simmer over high heat about 2 minutes or until broth is almost completely reduced. Season with salt and pepper to taste.

Salt, to taste
5 bunches baby broccoli, ends trimmed
3 tablespoons olive oil
3 large garlic cloves, thinly sliced

Steps:

  • 1 Bring a large pot of salted water to a boil over high heat. Add the baby broccoli and cook for 2 to 3 minutes. Transfer the broccoli to a bowl of ice water to stop the cooking. Drain and pat dry. 2 In a large copper gratin pan or large sauté pan over the medium-high heat, warm the olive oil until almost smoking. Reduce the heat to medium, add the garlic and cook until just lightly browned. Using a slotted spoon, transfer the garlic to a plate. 3 Increase the heat to high, add the broccoli to the pan in batches and sauté until tender, 5 to 10 minutes. Season with salt. Return all the broccoli to the pan and top with the garlic slices. Serve immediately.

1 pound broccoli, separated into florets
2 teaspoons fresh lemon juice
2 tablespoons water
3 tablespoons butter
2 cloves garlic, minced
1 pinch salt
2 teaspoons lemon juice
1 teaspoon ground black pepper

Steps:

  • Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.
  • While broccoli is steaming, melt butter in a small saucepan over medium-low heat and stir in garlic and salt; turn heat to low and let the garlic gently fry until golden brown, about 8 minutes. Drain water from cooked broccoli and return to skillet; sprinkle with 2 more teaspoons lemon juice and the butter and garlic mixture. Sprinkle broccoli with black pepper, toss to combine, and season with a bit more pepper if desired.

  • In a Dutch oven, bring 1/2 in. of water to a boil. Add broccoli; cover and cook for 3-5 minutes or until crisp-tender; drain. Mix remaining ingredients; toss with broccoli.
