6 Cornish game hens (20 to 24 ounces each)
1 cup lemon juice
3/4 cup butter, melted
1/2 teaspoon paprika
1-1/2 teaspoons dried thyme, divided
1-1/4 teaspoons seasoned salt, divided
1-1/8 teaspoons garlic powder, divided
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place the hens on a wire rack in a large roasting pan. In a bowl, combine lemon juice, butter, paprika and 1 teaspoon each of thyme, seasoned salt and garlic powder. Pour half over the hens; set the remaining mixture aside for basting. Combine salt, pepper and remaining thyme, seasoned salt and garlic powder; sprinkle over hens. Bake, uncovered, at 375° for 30 minutes. Baste with reserved lemon juice mixture. Bake 30 minutes longer, basting occasionally, or until the meat is tender and juices run clear.

Crispy, golden skin and moist, flavorful meat make these Roasted Cornish Game Hens a total showstopper!

4 Cornish game hens (,patted dry with paper towels)
8 thin slices of butter
4 sprigs each of fresh rosemary and thyme (or herbs of choice plus some extra leaves of each)
4 large cloves garlic (,peeled)
1 lemon (,scrubbed well and cut into quarters)
Extra virgin olive oil
Salt and freshly ground black pepper
1/2 cup dry white wine
1/2 cup chicken broth

Steps:

  • Preheat oven to 450 degrees F.
  • Pat the hens dry with a paper towel. Use your index finger to loosen the skin on the top of the hen and slip a thin slice of butter under the skin on top of each breast. Add a few rosemary and thyme leaves (or herb of choice). Repeat for each hen. Put a quarter of a lemon in the cavity of each hen along with a clove of garlic and a sprig of fresh rosemary and thyme (or herb of choice). Truss the hens by tying the wings and legs.
  • Rub each hen all over with some extra virgin olive oil, then sprinkle with salt and freshly ground black pepper. Place then hens on the rack of a roasting pan lined with aluminum foil, spacing them out so they are as far apart from each other as possible. This will enable their skins to get browned and crispy.
  • Place the hens in the preheated oven and roast for 25 minutes.
  • While the hens are roasting, combine the chicken broth and wine in a bowl.
  • After the hens have been roasting for 25 minutes, reduce the oven temperature to 350 degrees F. Pour the broth/wine mixture over the hens and continue to roast for 30 minutes, basting the hens with the juices at the bottom of the pan every 10 minutes or less. The hens are done when an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. If you prefer darker skins, turn up the temperature to broil for a couple more minutes, watching closely to prevent burning.
  • Carefully remove the hens and pour the juices from their cavities into the roasting pan. Transfer the hens to a warmed platter, remove the trussing string, and tent with aluminum foil to keep warm. Pour the juices from the roasting pan into a saucepan and boil for about 5 minutes until the liquid is a thin sauce-like consistency. Serve the hens whole per guest or cut in half lengthwise and place cavity-down on each serving plate. Drizzle the sauce over the hens and garnish with fresh herb sprigs and a slice of lemon. Serve immediately.

2 tablespoons olive oil
3 garlic cloves, smashed
2 tablespoons chopped fresh rosemary or 1 teaspoon dried rosemary
2 tablespoons chopped fresh sage or 1 teaspoon dried sage
2 tablespoons chopped fresh tarragon or 1 teaspoon dried tarragon
2 tablespoons chopped fresh thyme or 1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
2 cups fat-free low-sodium chicken broth
2 tablespoons soy sauce, low sodium
2 tablespoons Worcestershire sauce
2 tablespoons all-purpose flour
1 tablespoon soft non-hydrogenated margarine

Steps:

  • Place 2 whole garlic cloves and 2 lemon wedges in each hen.
  • In a small bowl, combine oil,smashed garlic, rosemary, sage, tarragon, thyme, salt and pepper.
  • Gently separate skin from breast and thigh of each hen and rub meat with herb mixture.
  • Rub any extra over skin.
  • Arrange birds on baking sheets lined with parchment paper.
  • Roast birds in a preheated 400°F oven for 45 minutes or until well browned and cooked through.
  • Baste occasionally.
  • Place birds on a platter and transfer pan juices to measuring cup.
  • To make sauce, remove fat from pan juices.
  • Place juices in a saucepan with stock, soy sauce and Worcestershire sauce and bring to a boil.
  • Cook a few minutes.
  • In a small bowl, combine flour and margarine.
  • Stir into sauce and cook until just slightly thickened.
  • Adjust seasonings.
  • Serve hens with sauce on the side.

1 lemon, quartered
4 sprigs fresh rosemary
3 tablespoons olive oil
24 cloves garlic
⅓ cup white wine
⅓ cup low-sodium chicken broth
4 sprigs fresh rosemary, for garnish

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear. Baste with pan juices every 10 minutes.
  • Transfer hens to a platter, pouring any cavity juices into the roasting pan. Tent hens with aluminum foil to keep warm. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.

6 rock cornish hens
3/4 cup butter, at room temp
2 tablespoons garlic, minced
2 tangerines, juice of or 1 large orange
1 teaspoon of fresh mint, minced
1 teaspoon green onion, minced
1 teaspoon parsley
3 teaspoons aloha shoyu
1 tablespoon sea salt

Steps:

  • Rinse game hens and pat dry. In mixing bowl, blend all ingredients (except hens) into a paste. Rub herb paste thoroughly over the game hens and into the cavities, as well.
  • Secure onto the rotisserie and roast for fifty five minutes to one hour, or until golden brown. If you don't have a rotisserie, you can bake the game hens in a three hundred and fifty degree oven for the same amount of time, until brown.

3 tablespoons lemon juice
3 garlic cloves, minced
1 tablespoon minced fresh basil
1 tablespoon minced fresh mint
1/2 teaspoon salt
2 tablespoons olive oil, divided
2 Cornish game hens (20 to 24 ounces each)

Steps:

  • In a small bowl, mix the first five ingredients; stir in 1 tablespoon oil. With fingers, carefully loosen skin from Cornish hen breasts; rub herb mixture under the skin, over the skin and inside cavities. Tuck wings under hens; tie drumsticks together. Refrigerate, covered, at least 4 hours or overnight., Preheat oven to 375°. Place on a rack in a shallow roasting pan, breast side up. Brush hens with remaining oil., Roast 40-50 minutes or until a thermometer inserted in thigh reads 180°. Remove from oven; tent with foil. Let stand 10 minutes before splitting hens in half.

2 oz. Vegetable oil
½ cup Black olives (pitted & halved)

¼ cup Capers
2 cup Chicken stock
½ cup Peas
2 tbsp. Parsley (chopped)
1 pkg. Alouette Garlic and Herbs Spreadable Cheese

Steps:

  • Bring the water to a boil in a large saucepan and add the couscous. Bring back to a simmer, cover and remove from heat. After 10 minutes stir in olive oil with a fork and keep warm. Split and quarter each Cornish game hen and season with salt and pepper. In a large skillet heat vegetable oil over medium high heat. Sear all pieces of the Cornish game hen until golden brown. Drain oil and add olives, sun-dried tomatoes, capers, cherry tomatoes and heat thoroughly. Add chicken stock and bring to a simmer for 8-10 minutes. Remove Cornish game hen and most of the vegetables from the sauce. Cover to keep warm. Stir Alouette® Garlic and Herbs Spreadable Cheese into the liquid to make the sauce. Add the peas and chopped parsley. To serve, fill the bottom of the tanjine or casserole dish with the cooked couscous, top with the Cornish game hen and vegetables. Spoon sauce over Cornish game hens and couscous. Serve.

Whisk tawny Port, oil, vinegar and honey in small bowl. Pour over hens. Tuck dates and olives between hens. Season with salt and pepper. Cover and refrigerate at least 12 hours or overnight, turning hens once.
  • Preheat oven to 375°F. Turn hens skin side up. Bake hens with marinade, dates and olives until hens are cooked through, basting occasionally, about 40 minutes. Transfer hens, dates and olives to platter; discard orange slices. Pour pan juices into heavy small saucepan. Add remaining 1/4 teaspoon cumin and boil until reduced to 1/2 cup, whisking frequently, about 5 minutes. Season with salt and pepper. Spoon some sauce over hens. Sprinkle with remaining 2 tablespoons chopped cilantro. Serve, passing remaining sauce separately.
