This basic marinade imparts a bright flavor and keeps meats moist. It's perfect for grilling and also enhances the flavors of fresh vegetables, tofu, and soft cheeses. The marinade doesn't work well as a sauce, so discard it before cooking.

- Whisk together ingredients in a nonreactive dish. Arrange meat in dish; rubwith marinade. Cover; refrigerate forlength of time specified below, turning meat occasionally.
- Removemeat from refrigerator; let it come to a cool room temperature beforecooking. Remove meat from the marinade; discard the marinade. Usinga paper towel, wipe off any large piecesof herbs or garlic from meat. Seasonmeat with salt and pepper.
- Cook meat as desired. Garnish withherbs; serve with lemon wedges.

- In a large resealable plastic bag, combine the lemon juice, oil, garlic and thyme. Add the tuna; seal bag and turn to coat. Refrigerate for up to 30 minutes, turning occasionally., Remove tuna from bag; sprinkle with salt and pepper. Drain and discard marinade. - In a large cast iron skillet over medium-high heat, add olive oil and butter, mushrooms, garlic, thyme, rosemary, and oregano. Cook for about 3 minutes or until tender. Remove and set aside on a plate.
- Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium-high. Cook the steaks to the desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
- Right before the steaks are done, make the garlic butter compound. Mix the butter, garlic and fresh chopped herbs. Slather on top of steaks. Add the mushrooms back to the pan and heat through and let the butter melt into the steaks.

- Marinade the steak. Combine the ingredients for the marinade in a small bowl. Pour the marinade over the sirloin steak in a large gallon zip-top bag, reserving 2 Tablespoons of the marinade for later use. Allow the steaks to marinate on the counter for 30 minutes while they come to room temperature.
- Preheat the grill. While the steaks are marinating, fire up the grill. Preheat the grill and assemble your rotisserie attachment. If you aren't using a rotisserie, prepare your grill for 2-zone cooking with a high heat side and a low heat side.
- Prep the steak. Remove the steak from the marinade and shake off any excess. Thread the steaks onto the rotisserie spit. If you are using kebabs, dice the steak into cubes and thread onto the skewers.

- Remove steaks from refrigerator and unwrap. Press with paper towels to remove any excess liquid and set aside.
- Remove rosemary and thyme leaves from stalks and place onto cutting board. Peel garlic and start chopping it together with the herbs to create a fine mixture. Rub both sides of steak with olive oil and pepper. Divide garlic and herb mixture evenly between the two sides of both steaks. Place onto large plate, cover with plastic wrap and refrigerate about 1-2 hours.
