Steps:
- 1. Pre-heat oven to 180C (350F). Heat oilve oil in a large frying pan over medium to high heat. Add onion and fry for 2 minutes, then add bell pepper and fry another 2 - 3 minutes or until starting to soften.
- 2. Add tomatoes, peri-peri and wine and season to taste with salt and pepper. Bring to boiling point, cover and reduce heat. Cook for 15 minutes, then remove lid and cook another 5 minutes over medium heat to evaporate most of the liquid and allow the sauce to thicken.
- 3. Toss prawns and herbs through, then spoon into an oven dish. Dot with feta and bake at 180C (350F) for 25 - 30 minutes.
- Serve with orzo or crusty bread, and simply sauteed veggies or a fresh salad.

- Greek Tomato Sauce:.
- In a skillet, heat olive oil and sauté onion and garlic until onion is tender. Stir in tomatoes, tomato sauce, wine and ground pepper. Simmer 15 minutes (or longer if a thicker sauce is desired).
- Shrimp dish:.
- Peel and devein shrimp. Wash, pat dry and sprinkle with lemon juice. Divide shrimp and place into 4 individual casseroles.
- (Add optional ouzo or brandy to tomato sauce) Spoon tomato sauce over the shrimp in each dish. Top with crumbled feta, followed by a sprinkling of parmesan.
- Bake, uncovered in a preheated 400°F oven for 15 minutes or until the cheese is bubbly.

SHRIMP BAKED CASSEROLE "GARITHES YOUVETSI"
Youvetsi is the name of a round deep earthware dish in which the food is baked. Of course this dish can be cooked in any ovenproof dish or dutch oven. This delicious dish is a summer favorite in all areas of Greece especially the islands. Don't forget the fresh bread & wine:) Hope you try it and like it as much as my family...

Steps:
- 1. Simmer the pureed tomatoes with the 2 Tbsp olive oil for 20 to 25 minutes. Until they become a thick sauce.
- 2. Pour the sauce in an ovenproof dish. On top place the shrimp. Sprinkle with the parsley, garlic, olive oil and top with Feta cheese. Sprinkle with butter and season with lots of black pepper, little salt and the Tabasco sauce.
- 3. Bake for 10 minutes, til the Feta cheece melts and bubbles. Serve with plenty of fresh bread to dip into the delicious sauce:) Enjoy!
YOUVETSI (TRADITIONAL GREEK ORZO BAKE)
If you are looking for an authentic dish from Greece, this recipe is for you! I grew up eating this, one of my favorite meals! It's usually made with veal or lamb stew meat but my family has always used chicken, which is delicious! You can use whichever you prefer! Either way this baked orzo dish will melt in your mouth! It may sound like a lot of work, but the preparation is very little! The majority of it is cooking time!

Steps:
- Heat olive oil in a large saucepan over medium heat; cook meat until browned on all sides, about 5 minutes. Add pureed tomatoes, garlic, sugar, salt, and pepper. Cover and simmer for 1 hour, stirring occasionally. Set aside.
- Preheat the oven to 350 degrees F (175 degrees C).
- Melt butter in a medium skillet over medium heat and add the orzo. Saute until slightly brown, 3 to 5 minutes. Transfer orzo to a baking pan, spreading it out evenly. Remove meat from the saucepan and place on top of the orzo. Pour tomato sauce evenly over meat. Add hot water. Cover with aluminum foil.
- Bake in the preheated oven until all water is absorbed and orzo is soft, about 1 hour. If the dish becomes too dry, add more water during baking.
