4 boneless skinless chicken breast halves, cut into strips
1 teaspoon minced garlic
5 tablespoons butter
1 small yellow squash, julienned
1 small zucchini, julienned
1 red sweet bell pepper, julienned
4 tablespoons flour
1 teaspoon seasoning salt
1/2 teaspoon salt (optional)
1/2 teaspoon seasoned pepper
2 teaspoons pesto sauce mix
1 (14 ounce) can chicken broth
1 cup half-and-half cream
1 (8 ounce) package angel hair pasta, cooked al dente, drained
1/3 cup shredded parmesan cheese

Steps:

  • In a large skillet over medium heat, saute chicken and garlic in butter for 15 minutes. Remove chicken and set aside.
  • With butter in skillet, saute squash, zucchini, and sweet bell pepper and cook just until tender crisp.
  • In a small saucepan, melt 3 tablespoons butter and add flour, seasoned salt, salt, black pepper, and pesto seasoning. Stir to form a paste.
  • Over medium high heat, gradually add broth, stirring constantly, until thick.
  • Stir in cream and heat thoroughly.
  • In a large bowl, combine chicken vegetables, broth-cream mixture, and drained pasta.
  • Transfer to a greased 9x13 inch casserole dish.
  • Cover and bake at 350 degrees for 30 minutes.
  • Uncover and sprinkle parmesan cheese over top of casserole and return to oven for 5 minutes.

9 ounces parsnips, chopped
2 small carrots, chopped
1/2 cup fresh breadcrumb
1/4 teaspoon nutmeg
1 tablespoon fresh parsley, chopped
1 (3 lb) whole chickens
1 bunch fresh parsley
1 onion
2 tablespoons butter, softened
4 tablespoons olive oil
1 lb new potato, scrubbed
1 lb baby carrots, trimmed
salt and pepper

Steps:

  • To make the stuffing, put the parsnips and chopped carrots into a pan, half cover with water, and bring to a boil.
  • Lower the heat, cover and simmer until tender.
  • Drain well, then process in a blender or food processor to a smooth puree.
  • Transfer to a bowl and set aside to cool.
  • Mix the bread crumbs, nutmeg and parsley into puree and season to taste with salt and pepper.
  • Put stuffing into neck end of chicken and push a little under the skin over the breast meat.
  • Secure flap of skin with a small metal skewer or toothpick.
  • Place the bunch of parsley and onion inside the cavity of the chicken, then place chicken in a large roasting pan.
  • Spread butter over skin and season with salt and pepper, cover with foil and place in preheated 375F oven for 30 minutes.
  • Meanwhile, heat oil in skillet and lightly brown potatoes.
  • Transfer potatoes to roasting pan and add the baby carrots.
  • Baste chicken and continue to cook for a further hour, basting after 30 minutes.
  • Remove foil for last 20 minutes to let the skin crisp.
  • Garnish with chopped parsley and serve immediately.

1/4 teaspoon dried thyme
1/2 teaspoon fresh rosemary, finely chopped
1 teaspoon garlic pepper seasoning
1 tablespoon cornstarch
1/4 cup chicken broth
1/4 cup water
1/4 cup white wine
1 tablespoon milk
1 teaspoon lemon juice
salt, to taste
pepper, to taste
2 lbs boneless skinless chicken breasts, sliced width-wise into 1/2-inch strips
2 small rosemary sprigs
1 garlic clove, finely chopped
1/2 lemon, juice of
1/4 cup extra virgin olive oil
1/2 bunch fresh asparagus (remove bottom inch of stem, cut remainder into 1-inch pieces)
1 zucchini, julienne cut
1 summer squash, julienne cut
2 roma tomatoes, cut into 1/2-inch pieces
1/2 red bell pepper, julienne cut
1 cup broccoli floret, blanched
1/2 cup frozen peas
1 cup spinach, cut into 1/2-inch pieces
1/2 cup carrot, julienne cut
1 lb farfalle pasta, cooked according to package directions (bow ties)

Steps:

  • SAUCE PREPARATION:.
  • MELT butter in a sauce pan over medium heat. Stir in thyme, garlic pepper and rosemary. Whisk to thoroughly blend and cook for 1 minute.
  • COMBINE chicken broth, water, wine, milk, and lemon juice in a mixing bowl. Add cornstarch and whisk until cornstarch has dissolved and there are no lumps.
  • ADD liquid mixture to sauce pan. Whisk all ingredients together and bring to a boil. Season with salt and pepper to taste, then remove from heat.
  • CHICKEN & VEGETABLES PREPARATION:.
  • COMBINE all chicken ingredients in a mixing bowl and blend well.
  • MARINATE for 30 minutes.
  • HEAT a saute pan over medium-high heat. Add 1/4 cup extra virgin olive oil.
  • SAUTE chicken strips until internal temperature reaches 165°F.
  • ADD all vegetables and saute until cooked through.
  • ADD cooked, drained pasta and sauce to saute pan. Stir until pasta is thoroughly coated with sauce.
  • TRANSFER to a serving platter and garnish with chopped parsley.

This is a really lovely springtime meal. I prefer to use rosemary on its own rather than herbes de provence. This is lovely with rice, but I prefer it with Couscous.

4 boneless skinless chicken breasts
1 tablespoon herbes de provence
2 cloves garlic
2 onions
2 courgettes
1 red pepper
1 green pepper
1 yellow pepper
6 tablespoons olive oil
1 (400 g) can chopped tomatoes
salt and black pepper
2 tablespoons chopped fresh parsley
basil leaves (to garnish) (optional)

Steps:

  • Rub the chicken breasts with the herbs.
  • Peel and finely chop garlic and onions.
  • Chop the courgettes, cut the peppers in half and remove seeds and white pith.
  • Cut into wide strips.
  • Heat 2 tbsps oil in a large pan, and fry the chicken for 8 minutes.
  • Turn and fry for another 5 mins.
  • Remove from pan and keep warm Add remaining oil, onions, garlic, peppers and courgette to the pan.
  • Cook until vegetables soften.
  • Add tomatoes with the juice, and season.
  • Cover nad simmer for 10 minutes.
  • Stir in the freshly chopped parsley and put teh chicken on top.
  • Cover nad simmer for 10 minutes, garnish with Basil and serve.

1 pound boneless skinless chicken breasts, cut into strips
1 garlic clove, minced
1/4 cup butter, divided
1 small yellow squash, halved lengthwise and sliced
1 small zucchini, halved lengthwise and sliced
1/2 cup julienned sweet red pepper
1/2 cup julienned green pepper
1/4 cup thinly sliced onion
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup chicken broth
1/2 cup half-and-half cream
8 ounces angel hair pasta, cooked and drained
2 tablespoons shredded Parmesan cheese

Steps:

  • In a large skillet, saute chicken and garlic in 2 tablespoons butter for 10-12 minutes or until chicken juices run clear. Add vegetables. Cook until crisp-tender; remove from skillet and set aside. , In the same skillet, melt remaining butter. Add flour, salt and pepper; stir to form a smooth paste. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cream and heat through. Add chicken and vegetables; stir until well mixed. , Place pasta in a greased 2-qt. baking dish. Pour chicken mixture over top. Sprinkle with Parmesan cheese. Cover and bake at 350° for 15 minutes; uncover and bake 5 minutes longer.

Here's the perfect recipe for someone on a weight-reduction diet. Low calorie, low fat, low carb. I am listing the spices I usually use with it, but you can play around and add whatever appeals to you. Great recipe to empty out your vegetable drawer when you need to use up some vegs. The same friend that gave me the Chicken Elia recipe (#104990) gave me this one. I usually serve it over rice.

1 boneless skinless chicken breast (can be frozen, just add baking time)
1 slice onion
1 -1 1/2 cup of chopped vegetables, your choice
1/2 teaspoon Kitchen Bouquet
1 teaspoon parsley flakes or 1 teaspoon fresh parsley
salt and pepper, to taste

Steps:

  • Place chicken breast on large square of tin foil.
  • Place onion on top of chicken.
  • Place vegetables on top of onion slice.
  • Pour on Kitchen Bouquet.
  • Sprinkle with parsley, salt, and pepper.
  • Seal tin foil around chicken and vegetables.
  • Bake at 350 degrees for 45 minutes, add about 15 minutes if the chicken is frozen.

Twenty-plus years ago, a sister introduced me to this recipe -- from a 1977 Better Homes and Gardens Oriental Cookbook. The original version (which my sister follows faithfully) is very similar to Kimke's Recipe #31632. Here is my version, which I think is different enough to be sent in and enjoyed. It is saucier. Also, our past exchange students want to refer to my version.

2 1/4 lbs chicken breasts, diced into one-inch pieces (I have made this with chicken thigh meat and it works fine)
2 large green bell peppers, diced into one-inch pieces (red peppers are okay if that is what you have)
10 green onions, chopped into one-inch slices (use white and green bits)
1 1/4 cups walnuts, halves broken in half again (or more)
9 tablespoons soy sauce
6 tablespoons dry sherry or 6 tablespoons water
5 teaspoons cornstarch (cornflour)
2 tablespoons water
1 tablespoon fresh ginger, chopped finely
1/4 teaspoon red chili pepper flakes
1 teaspoon sugar (use more if you like sweet)
2 -4 tablespoons vegetable oil

Steps:

  • Chop chicken, walnuts, bell peppers, green onions and ginger. I sometimes do this in the morning (or the night before), and put the components in the refrigerator, in covered containers.
  • If you chop ahead of time, store chicken on its own, store onions and peppers together, store walnuts on their own, and store ginger on its own. If you chop ahead of time, take all items out of fridge at least two hours before final cooking.
  • For sauce, put cornstarch into bowl. Stir in soy sauce. Stir in Chinese cooking wine (or substitutes), ginger, chilli and sugar. Don't add water yet. Set aside.
  • Do all cooking in a wok if you can.
  • Saute bell peppers and onions in two tablespoons oil for two minutes. Stir frequently. Remove from heat, and set aside.
  • Saute walnuts in same pan for one minute (don't add more oil yet). Stir frequently. Remove from heat, and set aside.
  • Saute half the chicken pieces in same pan until cooked (first add two tablespoons of oil). Stir frequently. Remove from heat, and set aside.
  • Saute other half of chicken pieces until cooked (probably don't add more oil). Stir frequently.
  • Add first set of chicken pieces to second set of pieces.
  • When chicken is hot, add soy sauce mixture.
  • Pour water into pan used for soy sauce mixture. Swirl in pan and add to chicken.
  • Stir well.
  • When mixture thickens (just a bit) add vegetables.
  • Stir thoroughly and warm through. Might take a minute, covered.
  • Serve over rice.
