SAUCELESS GARDEN LASAGNA



Sauceless Garden Lasagna image

This is a tasty lasagna that I developed to help use up the abundance of tomatoes and zucchini from my garden. I didn't have any pasta sauce on hand, so I just added the herbs to the vegetable mixture. Even my daughter and her picky friends ate it!

1 medium zucchini, halved lengthwise and sliced
⅓ cup chopped red onion
1 cup shredded mozzarella cheese, divided
½ cup crumbled feta cheese
2 portobello mushrooms, sliced
4 cups fresh baby spinach
¼ cup chopped fresh basil
1 tablespoon chopped fresh oregano
3 cloves garlic, minced
3 tablespoons olive oil
¼ cup balsamic vinegar
1 teaspoon sugar
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1 (8 ounce) package no-boil lasagna noodles
9 roma (plum) tomatoes, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a 9x9 inch baking dish with cooking spray.
  • In a large bowl, toss together the zucchini, mushrooms, spinach, garlic, red onion, 1/2 cup mozzarella cheese, and feta cheese. Drizzle with olive oil and balsamic vinegar, and stir in basil, oregano, sugar, salt and pepper. Stir the mixture until evenly blended.
  • Place a layer of lasagna noodles into the bottom of the prepared pan. Make a layer of tomato slices over the noodles. Spread a generous amount of the spinach mixture over the tomatoes. Don't worry, it shrinks a lot while cooking. Lay slices of tomatoes over the spinach mixture, then another layer of noodles. Start with another layer of tomatoes on top of the noodles, and repeat layering until the dish is heaped with lasagna, ending with the vegetable mixture. Sprinkle remaining cheese on the top.
  • Bake for 35 to 45 minutes in the preheated oven, until noodles, and vegetables are tender. Let stand for a few minutes to set, then slice and serve.

8 uncooked lasagna noodles
1 tablespoon olive or vegetable oil
1 garlic clove, minced
3 cups Frozen Broccoli Cuts
1 1/2 cups (about 4 oz.) sliced fresh mushrooms
1 medium red, yellow or orange bell pepper, coarsely chopped (about 1 cup)
1 egg
1 (15-oz.) container ricotta cheese
1 teaspoon dried Italian seasoning
1 (26 to 28-oz.) jar chunky vegetable tomato pasta sauce
8 oz. (2 cups) shredded 6-cheese Italian cheese blend

Steps:

  • Cook lasagna noodles as directed on package. Drain; place in cold water to cool.
  • Meanwhile, heat oven to 350°F. Heat oil in large skillet over medium-high heat until hot. Add garlic, broccoli, mushrooms and bell pepper; cook 3 to 4 minutes or until vegetables are crisp-tender, stirring frequently. Remove from heat. If necessary, cut broccoli into smaller pieces.
  • Beat egg in small bowl with wire whisk. Add ricotta cheese and Italian seasoning; mix well.
  • Drain cooled lasagna noodles. Spread 1/2 cup of the pasta sauce in ungreased 13x9-inch (3-quart) glass baking dish. Top with 4 noodles, overlapping as necessary, half of ricotta mixture, half of cooked vegetables, half of remaining pasta sauce (about 2 1/4 cups) and 1 cup of the shredded cheese. Repeat layers, starting with noodles.
  • Bake at 350°F. for 45 to 50 minutes or until hot and bubbly. If cheese is getting too brown, cover baking dish loosely with foil. Let stand 15 minutes before serving.

FILLING:
1-1/4 cups ricotta cheese

1 egg, lightly beaten
2 teaspoons dried basil
ASSEMBLY:
12 no-cook lasagna noodles
3 cups shredded Italian cheese blend

Steps:

  • Preheat oven to 425°. Place first nine ingredients in a large bowl; toss to coat. Arrange on two greased 15x10x1-in baking pans. Bake 10-15 minutes or until tender, stirring occasionally. Reduce oven to 350°., Meanwhile, in a Dutch oven, saute mushrooms, onion and garlic in oil until tender. Stir in remaining sauce ingredients; bring to a boil. Reduce heat; simmer, uncovered, 10-12 minutes, stirring occasionally., In a large bowl, combine the filling ingredients. Spread 1 cup sauce into a greased 13x9-in. baking dish. Layer a third of the noodles, a third of the ricotta cheese mixture, half of the vegetables, a third of the remaining sauce and a third of the cheese blend; repeat. 1 teaspoon minced garlic
1 medium onion, chopped
3 cups vegetables (zucchini, summer squash, mushrooms, peppers or spinach)
2 (24 ounce) jars pasta sauce
1 (15 ounce) container part-skim ricotta cheese
1/2 teaspoon onion powder
8 ounces mozzarella cheese
1/2 cup Parmesan cheese
1 teaspoon Italian seasoning
12 no-boil lasagna noodles

Steps:

  • Preheat oven to 400°F. Spray a 13 x 9 inch baking pan with non-stick cooking spray.
  • In a large skillet, heat olive oil and minced garlic over medium high heat.
  • Saute vegetables until tender (about 10 minutes).
  • Add pasta sauce to vegetables and remove from heat.
  • In a medium bowl combine ricotta cheese, onion powder and dried parsley.
  • In layers, begin by adding 1 1/2 cups pasta sauce, 3 uncooked lasagna noodles, 1/4 cup ricotta cheese mixture, 1/2 cup mozzarella cheese and 2 tablespoons Parmesan cheese to baking pan.
  • Repeat the layering 4 times.
  • Sprinkle with Italian seasoning.
  • Add 1/4 cup water around edges of pan to help cook the pasta adequately.
  • Cover with aluminum foil and bake for 45 minutes.
