Pita Pockets Stuffed With Chunky Tuna Salad image

Tuna salad sandwiches continue to be very popular. You're sure to find them on the menu of just about any diner or sandwich shop. This delicious Tuna Salad Pita Pocket gives you tuna, veggies, cheese, and grains all in one handful. Serve with a pickle and enjoy!

1 (8 ounce) can tuna in water
3 -4 tablespoons mayonnaise
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon paprika
1/4 teaspoon onion powder
2 tablespoons red wine vinegar
1/4 cup red onion, chopped
1/2 stalk celery, chopped
1/2 small green apple, cored, peeled and diced
4 pepperoncini peppers, seeded and chopped
1/4 cup cucumber, peeled, seeded and diced
1/2 cup ripe tomatoes, seeded and diced
2 tablespoons black olives, sliced
1/2 cup cheddar cheese, shredded
1/2 cup shredded carrot
1 cup alfalfa sprout
lettuce leaf (Boston or Romaine)
2 large whole-wheat pita pockets

Steps:

  • Drain off the water that the tuna is packed inches.
  • Place the tuna in a medium-size mixing bowl; break apart with a fork.
  • Add the next 14 ingredients to the tuna; mix everything thoroughly. (COOK'S TIP: Adjust these ingredients - MORE OR LESS - to your taste.).
  • Open the pita pockets and line the bottoms with sprouts and shredded carrots (reserve a few teaspoons for garnish); layer lettuce on one side of each pita pocket.
  • Stuff with tuna filling in each pocket, dividing equally. Top with reserved sprouts and carrots.
  • This recipe will give you 2 jumbo pita sandwiches, or slice the pita pockets in half for 4 smaller servings.
  • Refrigerate any leftovers.

This isn't any old tuna salad sandwich. Filled with hummus (Middle Eastern chickpea dip), sesame oil, cumin and cilantro, this is a tuna salad like you've probably never had before. Pack it in pita pockets along with a slices of tomato and lettuce. I am not a cilantro fan, so I leave it out.

1 cup hummus
1 (12 ounce) can solid white tuna packed in water, drained and flaked
1/4 cup prepared mayonnaise
2 teaspoons dark sesame oil
1/4 cup green onion, chopped
1/4 cup fresh cilantro, finely chopped
1 1/2 teaspoons ground cumin
1 pinch cayenne pepper
salt, to taste
4 whole wheat pita bread, cut in half to form pockets
4 plum tomatoes, cleaned and thinly sliced
8 leaves boston lettuce or 8 leaves red leaf lettuce, cleaned and patted dry

Steps:

  • To prepare tuna salad:
  • Combine all ingredients except pitas, lettuce, and tomato in a medium-sized mixing bowl and stir well to mix.
  • Taste and add salt and more cayenne, if desired.
  • Salad can be prepared 1 day ahead. To store, cover and refrigerate.
  • To assemble sandwiches: Divide tuna salad equally and mound in pita pockets. Add several tomatoes slices and a lettuce leaf to each pocket. Arrange sandwiches in a basket or on a serving plate. Serve immediately.

1/2 cup shredded cheddar cheese

2 small cans of tuna
6 ribs celery, about 1/4 pound
1 onion, preferably red, about 1/2 pound
2 sweet green peppers, about 1/2 pound
1 cucumber, about 1/2 pound
2 or 3 red, ripe tomatoes, cored, about 3/4 pound
1 cup finely chopped parsley
12 anchovy fillets, finely chopped
2 teaspoons finely minced garlic
3 tablespoons red-wine vinegar
1 egg yolk
Freshly ground pepper to taste
1/2 cup olive oil
6 rounds pita bread

Steps:

  • Drain the tuna and cut it into bite-size flakes.
  • Chop the celery coarsely. There should be about two cups.
  • Cut the onion into quarters. Cut each quarter crosswise into thin slices. There should be about two cups.
  • Cut each pepper lengthwise into quarters. Cut each quarter crosswise into thin strips. There should be about three cups.
  • If desired, peel the cucumber. Cut the cucumber in half lengthwise. Cut each half crosswise into thin slices. There should be about two cups.
  • Cut each tomato crosswise in half. Squeeze gently to loosen the seeds; discard them. Cut the tomatoes into cubes. There should be about two cups.
  • In a large mixing bowl, combine the tuna, celery, onions, green peppers, cucumber, tomatoes and parsley.
  • In a separate bowl, combine the anchovy fillets, garlic, vinegar, egg yolk and pepper. Start beating with a wire whisk and gradually add the oil. Beat until thickened.
  • Pour the sauce over the tuna mixture and toss to blend. Serve inside rounds of pita bread, each cut in half crosswise.
