Steps:

  • Combine first 5 ingredients.
  • Fill bread slices with tuna salad and 2% Milk Singles to make 4 sandwiches.
  • Cook in large nonstick skillet on medium heat 3 min. on each side or until Singles are melted and sandwiches are golden brown on both sides.

¼ cup mayonnaise

¾ teaspoon red wine vinegar

1 pinch freshly ground black pepper
4 slices seedless rye bread
8 slices ripe tomato
8 slices Swiss cheese
paprika, for garnish

Steps:

  • Preheat the oven broiler.
  • In a bowl, mix the tuna, mayonnaise, celery, onion, parsley, and vinegar. Season with salt and pepper.
  • Place the rye bread slices on a baking sheet, and broil 1 minute in the preheated oven, until lightly toasted. Remove from heat, and spread with the tuna salad. Place 1 cheese slice over the tuna salad on each piece of bread, layer with a tomato slice, and top with remaining cheese slices.
  • Return layered bread to the preheated oven, and broil 3 to 5 minutes, until cheese is melted.

1 (12 ounce) can tuna, drained
2 cups mozzarella cheese, shredded
1 cup mayonnaise

  • In a mixing bowl, combine sweet onion, drained tuna, mozzarella, and mayonnaise. Mix thoroughly.

2 tablespoons prepared mayonnaise (optional)
1 recipe Tuna Salad, recipe follows
1 cup shredded sharp farmhouse Cheddar cheese
Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole grain mustard
Freshly ground black pepper,
Freshly squeezed lemon juice, to taste (optional)

Steps:

  • Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
  • Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.

7 oz albacore tuna ((see notes above))
2 Tbsp. mayonnaise
2 tsp dijon mustard
1 tsp fresh lemon juice
kosher salt (to taste)
black pepper (to taste)
4 slices whole wheat bread ((or sourdough))
4 tomato slices (or to taste)
2 slices provolone cheese
2 slices sharp cheddar cheese ((or extra sharp))
3 Tbsp butter (softened, to taste)

Steps:

  • Combine tuna, mayonnaise, dijon, lemon juice, salt and pepper in a bowl. Stir with a fork until well combined.
  • Spread tuna mixture evenly over 2 slices of bread. Top with tomatoes and a little more salt and pepper.
  • Add a slice of provolone and a slice of cheddar to each sandwich and place remaining bread slices over the top, making 2 complete sandwiches.
  • Spread butter over both side of each sandwich and set aside.
  • Heat large skillet over medium heat and spray with cooking spray. Carefully place sandwiches in the skillet and cook on both sides until golden brown and cheese is melted.
  • Serve immediately.

1/3 c. Mayonnaise
2 tbsp. Dijon Mustard
Splash Of Pickle Juice
Salt And Pepper, to taste
6 whole English Muffins Split
12 slices Cheese (Swiss, Provolone, Muenster)

Steps:

  • Combine tuna with onion, bell pepper, jalapeno, eggs, and gerkins. Stir in mayonnaise, Dijon, and pickle juice. Add salt and pepper. Taste and adjust seasonings as needed; be sure not to undersalt.Preheat oven to 375 degrees. Place English muffin halves on a large cookie sheet. Place a large spoonful of tuna salad on each of the twelve English muffin halves. Use the spoon to spread/flatten.   • Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. Broil for 1 to 2 minutes, just until the cheese melts and starts to brown. (Watch it carefully!) Sprinkle with the microgreens and serve hot.
