1/4 teaspoon Worcestershire sauce

Steps:

  • In a small bowl, combine all ingredients; stir until smooth. Cover and chill. Serve over salad greens or as a dip for raw vegetables. Store in the refrigerator.

2 tablespoons.white vineager
2 tablespoons sugar
4 cups cold pasta
1/4 cup onion (chopped)
1 cucumber
1 to mato
1/2 cup chopped bell peppers
1 teaspoon dill weed
salt and pepper to taste

Steps:

  • Cook pasta as directed on package.
  • Rinse pasta with cold water and drain.
  • Chop washed cucumber, onions and tomatoes.
  • Add vegetables to drained pasta.
  • Add mayonnaise, vinegar, sugar, salt, dill weed and pepper and mix well.
  • Refrigerate.

3 cups bow tie pasta, cooked and drained
2 medium carrots, grated
1 cup broccoli floret
1/2 cup celery, thinly sliced
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1/2 cup cucumber, peeled,seeded,and diced
1/4 cup chopped fresh parsley
3 green onions, sliced thin
2/3 cup plain nonfat yogurt
1/4 cup mayonnaise
2 tablespoons lemon juice
2 teaspoons dill weed
1/4 teaspoon garlic powder

Steps:

  • Mix together salad ingredients in a large salad bowl.
  • Mix together dressing ingredients in a small bowl.
  • Pour dressing over salad, tossing to coat evenly.
  • Refrigerate for 2-3 hours before serving.

Creamy Cucumber Pasta Salad takes my favorite summer cucumber salad and turns it into a delicious meal. Loaded with tender pasta, crisp juicy cucumbers, fresh dill and sweet white onion, this dish will be the hit of every potluck!

1 long english cucumber
½ pound medium sized pasta (such as penne or rotini)
½ sweet white onion
½ cup sour cream
½ cup mayonnaise
1 teaspoon sugar
½ teaspoon salt
2 tablespoons fresh dill
2 tablespoons white vinegar
pepper to taste

Steps:

  • Combine all dressing ingredients in a small bowl and mix well. Set aside.
  • Thinly slice onion and place in a bowl of cold water. (see note)
  • Cook pasta al dente according to package directions. Run under cold water to stop cooking.
  • Cut cucumber in half lengthwise and remove seeds using a spoon. Slice into thin slices.
  • Toss all ingredients in a large bowl. Let sit at least 40 minutes before serving.

1 teaspoon Dijon mustard
1/4 cup canola oil

1/4 teaspoon salt, optional
SALAD:
4 cups torn romaine
2 cups torn Boston or Bibb lettuce
1 large green pepper, cut into strips
1 small cucumber, sliced
1 large tomato, chopped
1 carrot, shredded
4 green onions, sliced
3 radishes, sliced

Steps:

  • Whisk together first four ingredients; gradually whisk in oils and, if desired, salt until blended. Refrigerate at least 30 minutes., In a large bowl, toss together salad ingredients; refrigerate, covered, until serving. Serve with dressing, stirring to recombine if needed.

  • In a small sauce-pot with a tight fitting lid, add the water, wheat berries and pinch of salt. Stir once, bring to a boil. Cover the wheat berries with a lid, turn heat to med-low and simmer for about one hour. Start checking the berries at about 40 minutes to see if they are as soft as you prefer. If not, keep them cooking another 15-20 minutes. In the mean time, prep all the veggies and make the dressing (see below). Drain the wheat berries, spoon into a bowl and refrigerate to cool before adding it to the veggies, about 30 minutes.
  • Place the mayo, vinegar, lemon juice, garlic, dill, salt and a few grinds of pepper in a small mixing bowl and whisk with a fork or mini whisk. Set aside.
  • Combine all the veggies, herbs and chilled wheat berries. Pour dressing over the salad and stir ingredients until evenly distributed. Adjust seasoning to taste with salt and pepper and more herbs if desired. Cover and chill for at least an hour before serving so the flavors have time to marry. Garnish with lemon wedges, dill and parsley. Refrigerate for up to three days.
