Cheesy Vegetable Omelette is packed with garden fresh vegetables! This healthy breakfast recipe is easy to make and shows you how to make a perfect omelette step by step!

2 eggs
2 teaspoons of milk
1/4 teaspoon salt
dash of pepper
1 tablespoon tomatoes (chopped)
1 tablespoon green peppers (chopped)
small handful of broccoli florets (finely chopped)
2 tablespoons shredded cheddar cheese
1/2 tablespoon butter

Steps:

  • Mix your eggs, milk, salt and pepper in a small bowl with a whisk.
  • Add butter in a small frying pan (I recommend 8 inch pan) over medium high heat.
  • Once butter is melted, add your egg mixture to the pan.
  • Continue to heat for a few minutes until egg mixture is no longer runny, but now firm. This usually takes 4-5 minutes.
  • Sprinkle 1 tablespoon of cheese on one side of the omelette. Add in your vegetables. Top with remaining tablespoon of cheese.
  • Once the eggs are no longer runny, carefully use a spatula to fold up omelette, so that one side goes on top of your vegetables.
  • Using the spatula, gently press down omelette and continue to cook for 1 more minute.
  • Serve warm, enjoy!

1/4 pound good thick-cut bacon
1 tablespoon unsalted butter
1 cup medium-diced Yukon gold potato
1/2 cup chopped yellow onion
1 tablespoon minced jalapeno pepper
5 extra-large eggs
2 tablespoons milk or cream
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup chopped scallions, white and green parts
4 ounces extra-sharp Cheddar, diced, plus extra grated cheese, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Cut the bacon crosswise in 1-inch slices. Cook the bacon in an 8-inch ovenproof saute pan over medium-low heat for 5 to 7 minutes, stirring occasionally, until browned. Drain the bacon on paper towels and discard the fat from the pan. Add the butter to the pan, and then add the potato and yellow onion. Cook over medium-low heat for about 10 minutes, tossing occasionally, until the onion starts to brown and the potato is tender but firm. Add the jalapeno pepper and cook for 30 seconds.
  • Meanwhile, in a medium bowl, beat the eggs, milk, salt, and pepper together with a fork. Stir in the scallions and diced Cheddar. When the potato is cooked, add the bacon to the pan and pour over the egg mixture. Place the pan in the oven for 15 to 20 minutes, until the omelet puffs and the eggs are almost cooked in the center. Sprinkle with a handful of grated Cheddar and bake for another minute. Serve hot directly from the pan.

4 large eggs
1/4 teaspoon salt
ground mustard, dash
cayenne pepper, dash
onion powder, dash
1 teaspoon vegetable oil
1/3 cup red bell peppers or 1/3 cup green bell pepper, cut in strips
2 tablespoons onions, chopped
1/3 cup cooked ham, chopped
1/3 cup breakfast sausage links, cooked and sliced
1/2 cup sharp cheddar cheese, shredded

Steps:

  • Beat eggs with salt, ground mustard, cayenne and onion powder until well blended; set aside.
  • In 12 inch skillet saute red and green bell peppers and onion in vegetable oil over medium heat until soft.
  • Stir in ham and sausage.
  • Remove to plate.
  • In same skillet, pour in egg mixture.
  • Cook over medium heat for 3-5 minutes, lifting up edges to let liquid egg in the center to flow into skillet.
  • Continue cooking until egg mixture is firm, but not browned.
  • Pour reserved peppers, onion, ham and sausage onto 1/2 of the omelet.
  • Sprinkle with 1/2 of the cheese.
  • Fold omelet in half with spatula.
  • Sprinkle with remaining cheese.
  • Enjoy!
