1 (15 ounce) can garbanzo beans, drained
2 teaspoons ground cinnamon
½ teaspoon ground cloves
3 eggs, beaten
½ cup white sugar
2 teaspoons gluten-free baking powder
1 orange, zested and juiced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square cake pan or line with parchment paper.
  • Process garbanzo beans in a food processor until smooth. Add cinnamon and cloves and pulse until combined. Add eggs, sugar, baking powder, and orange zest; process until just combined. Stir orange juice into garbanzo mixture. Pour batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 50 minutes. Remove cake from pan and cool completely on a wire rack before cutting into squares.

1 ½ cups semisweet chocolate chips
1 (19 ounce) can garbanzo beans, rinsed and drained
4 eggs
¾ cup white sugar
½ teaspoon baking powder
1 tablespoon confectioners' sugar for dusting

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch round cake pan.
  • Place the chocolate chips into a microwave-safe bowl. Cook in the microwave for about 2 minutes, stirring every 20 seconds after the first minute, until chocolate is melted and smooth. If you have a powerful microwave, reduce the power to 50 percent.
  • Combine the beans and eggs in the bowl of a food processor. Process until smooth. Add the sugar and the baking powder, and pulse to blend. Pour in the melted chocolate and blend until smooth, scraping down the corners to make sure chocolate is completely mixed. Transfer the batter to the prepared cake pan.
  • Bake for 40 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean. Cool in the pan on a wire rack for 10 to 15 minutes before inverting onto a serving plate. Dust with confectioners' sugar just before serving.

1½ cups semi-sweet chocolate chips, melted
1 can (15 ounces) chickpeas (aka garbanzo beans), rinsed and drained
4 eggs
¾ cup granulated sugar
1 teaspoon espresso powder (optional)
½ teaspoon baking powder
powdered sugar (for serving)

Steps:

  • Preheat oven to 350°F. Spray a 9-inch round cake pan with baking spray and set aside.
  • Place eggs and chickpeas in a food processor and blend until smooth. Add sugar, baking powder and espresso powder (if using) and pulse until combined. Pour in melted chocolate and process until combined, scraping down the sides to make sure thoroughly mixed. Pour batter into prepared cake pan.
  • Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean (with moist crumbs is ok). Cool in pan on a wire rack for 10 minutes and then invert cake on wire rack lined with parchment to cool completely. Dust with powdered sugar before serving, as desired.

I have not made this recipe myself. It is from a Mexican cookbook that I keep in my classroom. I have had students make this recipe in the past, and it is moist and delicious. You would never guess that it contained garbanzo beans (chick peas) The cookbook describes the cake's texture to be like that of Christmas pudding. It suggests slicing in thin slices and serving with fresh mango or pineapple and a spoonful of yogurt. We tried it plain, in thicker slices, and it was delicious. It contains no flour, so it would be perfect for wheat-free diets. The recipe states that it serves 6, but since it is a whole loaf, I've changed it to 12 servings.

2 (10 ounce) cans chickpeas, drained
4 eggs, beaten
1 cup sugar
1 teaspoon baking powder
2 teaspoons cinnamon
1 orange, zest of, grated
1 orange, juice of
1/4 cup sugar
1 teaspoon cinnamon

Steps:

  • Combine topping ingredients in a small bowl.
  • Preheat oven to 350.
  • Drain the chickpeas thoroughly in a colander, and rub them between the palms of your hands to loosen and remove the skins.
  • After separating and discarding the skins, place the chickpeas in a food processor and process until smooth.
  • Spoon the puree into a bowl and stir in the eggs, sugar, baking powder, cinnamon, orange zest, and orange juice.
  • Grease and flour a 1 pound loaf pan.
  • Pour the cake mixture into the loaf pan. Level the surface and bake 1 1/2 hours, or until a toothpick inserted into the center comes out clean.
  • Remove cake from oven, and let stand in the pan for 10 minutes. Remove from pan, place on wire rack, and sprinkle with cinnamon sugar topping to taste. Reserve remaining cinnamon sugar (if any) for another use.

It is different and one way to get some fiber in your diet. I am sure you could play around with an egg substitute and Splenda.

  • Puree in food processor till smooth the beans and eggs.
  • Add the baking powder and sugar, pulse till smooth.
  • In a microwave safe bowl, melt the chocolate chips, stirring often till smooth.
  • Add to food processor, pulse till smooth.
  • Pour into a greased and floured 9 inch cake pan.
  • Bake at 350 degrees for about 40 minutes.
  • Dust with sugar if you like.
  • *I could not find a 19oz can of beans, so I used about 2 cups.
  • *I also added a splash of vanilla flavoring.
  • *I also 'floured" my pan with dark cocoa.

2 3/4 cups freshly-ground garbanzo bean flour, sifted twice (freshly-ground makes ALL the difference!)
1 3/4 cups granulated sugar (sucanat, organic evaporated cane juice or white sugar)
3/4 cup cocoa powder
1 1/2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 "flax eggs" (2 Tbsp. flax meal + 6 Tbsp. warm water that has set or "gelled" together for a few minutes before adding to the recipe. If not egg-free, simply add two eggs here. It will make for a moister cake if you do.)
2 teaspoons vanilla
1/2 cup olive or melted coconut oil
1 cup rice milk (You can also use almond or coconut milk if you do not have an allergy to those.)
1 cup boiling water

Steps:

  • Whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add in flax "eggs," vanilla, oil, and milk.
  • Mix in water.
  • Fill two greased 8 in. round cake pans.
  • Bake at 350 F for about 25-27 minutes or until a toothpick inserted comes out clean.
  • Let cool about 5 minutes before moving to a wire rack to finish cooling. Let cool completely before icing.*

  • Heat a small non-stick skillet to a medium heat. Add 1 tablespoon oil. Add leeks and ¼ teaspoon salt. and garlic. Saute until leek have softened, about 3-4 minutes. You don't want them to brown, so if they start to crisp up, turn the heat downn to medium low. Once they've softened, add garlic. Cook another minute. Transfer leeks and garlic to a large bowl and cool.
  • Wipe pan clean and toast pine nuts over a medium-low flame. They are done when they smell nutty, be careful to not burn. Transfer to the bowl with the leeks and garlic.
  • Add chickpeas to the bottom of a food processor, pulse until the chickpeas are in tiny pieces, but not pureed. They should look a little bigger than grains of sand, with some bigger pieces as well, you still want a bit of texture. Transfer chickpeas to the bowl with the leeks, garlic and pine nuts.
  • Add egg, lemon zest, juice, Dijon, breadcrumbs and remaining salt. Toss until combined. Use a small ice cream scoop or 1/4 cup measure to portion out 7-8 fritters. Rinse hands with a little bit of cold water and form into compact patties.
