GARBAGE SALAD WITH SWEET ITALIAN VINAIGRETTE

Steps:
- For the pancetta: Heat a medium skillet over low-medium heat and add the pancetta in a single layer. Cook, stirring occasionally, until crispy, 10 to 15 minutes. Remove to a paper towel-lined plate in a single layer until ready to top.
- For the sweet Italian vinaigrette: Put the parsley and thyme in a medium bowl and add the vinegar. Let stand for a few minutes, then whisk in some salt and pepper. Whisk in the garlic, oregano, mustard and honey. While whisking, slowly add the olive oil and whisk until combined.
- For the salad: Place the iceberg and romaine in a large bowl. Top with the red cabbage, mushrooms, carrots, tomatoes, Gorgonzola and pancetta. Before serving, pour in a healthy amount of dressing and mix well. Top with black pepper if desired.
EASY ITALIAN VINAIGRETTE
Steps:
- Place all the ingredients in a blender and mix for about 10 seconds or until fully combined.
- Transfer to a glass bowl and let stand for 30 minutes to let the flavors meld. Pour into a jar or bottle, cover tightly, and store in the refrigerator until ready to use.
- Give the dressing a good whisk or shake immediately before serving.

ITALIAN VINAIGRETTE
This is one of my family's favorite vinaigrettes. It's fresh and flavorful with an extra dose of garlic, plus red wine vinegar and lemon juice acidity. It reminds me a bit of the dressing at Olive Garden...although I'd say this Italian vinaigrette recipe is even better!

Steps:
- Place all ingredients in a small bowl or tall jar. Use an immersion blender to combine and emulsify. If you don't have an immersion blender, cover jar tightly and shake ingredients vigorously (just know that there will be more noticeable pieces in the vinaigrette).
- Serve with this Italian Chopped Salad.

- Place all salad ingredients into a very large bowl and gently mix to incorporate all of the items. Drizzle with cup dressing and mix again, tossing very well. Add another cup dressing or as needed and toss gently. Serve immediately.
- Place all ingredients into a pint jar and close tightly. Shake vigorously to mix and shake again just before pouring over the salad. Store any unused dressing in the refrigerator for later use.

- In a large serving bowl, combine the chopped lettuce, radicchio, onion, celery, cherry tomatoes, peppers, sun-dried tomatoes, chickpeas and cheese (if using). Toss the ingredients together and set aside.
- To prepare the dressing, combine all of the ingredients in a liquid measuring cup. Whisk until blended. Taste, and add more salt if the dressing doesn’t knock your socks off (I usually add one to two more pinches of salt).
- If you’ll be serving all of the salad at once, go ahead and drizzle enough dressing in to lightly coat the salad and toss to combine. I prefer to store the salad and dressing separately so I can enjoy salad for a few days. Just whisk the dressing again before drizzling (if the olive oil solidifies a bit in the refrigerator, don’t worry, that’s normal—just let it warm up for about 5 minutes at room temperature or microwave for 10 to 20 seconds).

- Preheat your oven to 400 degrees F. Spill the rinsed chickpeas onto a baking sheet and blot with a few paper towels to remove as much moisture as possible. Whisk the miso paste and olive oil together in a small prep bowl and drizzle it over the chickpeas, tossing to coat. Roast the chickpeas for 15 to 20 minutes, shaking the pan halfway through. When done, the chickpeas should be golden and slightly crispy.
- To make the dressing, add all of the ingredients in a prep bowl and whisk to fully combine. Taste and adjust flavors as needed.
- Cook the ditalini according to the box directions. Drain and rinse with cool water. Drizzle a little bit of the dressing over the noodles and toss to coat to prevent them from sticking. Set aside until the pasta cools to room temperature.
- Meanwhile, chop the purple cabbage, romaine lettuce, green onions, and cherry tomatoes and add them to a large serving bowl. When the chickpeas are done roasting, transfer them to the salad and toss to combine.
