SAMBUCA SHRIMP

1 lb large cooked shrimp, thawed if frozen
3 tablespoons butter (separated)
1 -2 clove minced fresh garlic, to taste
1/3 cup heavy cream
2 ounces sambuca liqueur (or other anise based liqueur)
salt and pepper

Steps:

  • Melt butter, add minced garlic and 2 tbsp of the butter, add the heavy cream and mix well.
  • Can refrigerate at this point for a couple of hours to allow the garlic flavor to blend.
  • In a heavy skillet, melt the remaining butter on med/high heat and saute the thawed shrimp until heated through.
  • Add Sambuca and flambe, (if open flame, remove from heat).
  • Reduce heat immediately and add the butter, garlic and cream mixture.
  • Simmer for about 5 minutes and serve immediately.

2 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, crushed
1/4 teaspoon crushed red pepper flakes
1 1/2 lbs medium shrimp, shelled, tails removed
1/2 cup butter
1/2 cup white wine
3 tablespoons parsley, finely chopped (1 Tbsp dry)
salt and pepper
8 ounces angel hair pasta, cooked according to package directions

Steps:

  • HEAT oil in a sauté pan. Add onion and sauté 2 minutes. Add garlic and red pepper; do not brown garlic. Sauté 1 minute. Add shrimp, cook 1-2 minutes.
  • ADD butter, wine, parsley, salt and pepper. Simmer until sauce thickens slightly & shrimp turn from opaque to pink.
  • PLACE cooked, drained pasta on large platter. Evenly distribute shrimp and sauce over pasta and serve immediately.

1 lb large shrimp, clean and devein
3/4 cup gorgonzola, small cubes
extra virgin olive oil
salt and pepper
parsley, finely chopped
50 croutons

Steps:

  • Parboil shrimp in a skillet.
  • Saute the shrimp in olive oil over medium heat for 2 minutes.; season with salt and pepper. (very lightly on the salt because the cheese is salty too).
  • Place shrimp in an oven proof platter, cover with gorgonzola cubes.
  • Bake in preheated oven at 350 for a few minutes, until cheese is melted.
  • Transfer to serving platter, sprinkle with parsley and surround with croutons.
