My mom made this around Christmas time, but it's a great light dessert for anytime of the year! This has been a family favourite for as long as I can remember and I requested it often.

Number Of Ingredients 7

3 ounces gelatin (or whatever size it normally comes in your area)
1/4 cup cold water
1 (14 ounce) can Eagle Brand Condensed Milk
1/4-1/3 cup dark rum
1 cup whipping cream
1 chocolate cookie pie crust, crust or 1 chocolate-flavored pie crust
1 tablespoon chocolate shavings (optional) or 1 tablespoon baking coconut (optional)

Steps:

  • Sprinkle gelatin on cold water. Place over hot water and stir until dissolved.
  • Blend Eagle Brand and rum in medium sized bowl.
  • Gradually add gelatin and stir.
  • Chill a short time until mixture starts to thicken.
  • Whip cream and gently fold into milk mixture.
  • Turn into prepared pie shell and chill in fridge until firm (about 2-3 hours).
  • Sprinkle optional chocolate and/or coconut on top and enjoy!
  • Cook time includes chilling time.

2 eggs
1/4 teaspoon salt
nutmeg
1 pastry for single-crust pie

Steps:

  • Cook dates with milk 20 minutes in double boiler; Strain, rub through sieve, and add eggs, salt and a few gratings of nutmeg.
  • Line plate with Plain Pastry and build up a fluted rim; Pour filling into crust.
  • Bake 10 minutes in hot oven (450F), then reduce heat to moderate (350F), and bake until firm when tested with silver knife.

1 cup sour cream
3/4 cup brown sugar
1 pinch salt
1/2 teaspoon nutmeg
2 large eggs
1 tablespoon brandy or 1 tablespoon vanilla
1 cup pitted dates, chopped
1/2-3/4 cup chopped nuts

Steps:

  • Combine sour cream, sugar, salt, nutmeg, eggs, and brandy.
  • Beat until smooth.
  • Add the dates and nuts and blend well.
  • Pour into pie shell.
  • Bake in a 425 degree F.
  • oven for 10 minutes, then reduce heat to 325 degrees F.
  • and continue baking for 25 minutes, or until firm.

1 package dry yeast
1/3 cup warm milk
2 1/2 cups sifted flour, divided
8 tablespoons butter, softened
2 2/3 cups sugar, divided
6 eggs
5 1/2 cups water
1/2 cup dark rum
candied fruit, for decoration
whipped cream (to garnish)

Steps:

  • Dissolve yeast in the milk in a large bowl.
  • Stir in 1/2 cup flour.
  • Cover and set aside in a warm place to rise for 30 minutes.
  • Meanwhile, beat 7 Tablespoons of the butter in an electric mixer or in a food processor.
  • Beat in 2 Tablespoons sugar and 2 Tablespoons flour.
  • Beat in the eggs, one at a time.
  • Beat the remaining flour into the risen yeast mixture, then beat in the butter-egg mixture to make a thick, cake-like batter.
  • Grease an 8-inch Bundt pan with the remaining tablespoon of butter, taking care to leave no part of the pan ungreased, and spoon the batter into the mold.
  • It should fill it halfway.
  • Cover with a cloth and set aside to rise until the dough reaches the top of the mold.
  • Heat the oven to 350 degrees.
  • Bake the baba for about 40 min.
  • until nicely browned on top.
  • While the baba is baking, combine the remaining sugar with the water in a saucepan and boil until syrupy and reduced to 3 cups.
  • Remove from heat and stir in rum.
  • Remove baked baba from oven and spoon rum syrup over it, saturating completely.
  • Cool 45 minutes.
  • Unmold.
  • Decorate with candied fruits and whipped cream.

3/4 cup flour
3/4 cup oatmeal
1/2 cup brown sugar
1/2 cup butter

Steps:

  • In a pan that goes in oven, put the cut apples.
  • Pour the maple syrup on the apples.
  • In a separate bowl, mix together the flour, oatmeal, brown sugar, butter and salt.
  • Add this mixture on the apples.

A tasty date and rum filling, bake between puff pastry sheet. Lovely french "dessert", served warm or cold, plain or with a little bit of ice cream. Don't forget to hide a whole date or a little something that you are not suposed to eat ( and something that won't melt haha) and the person who finds eat, will have to make a cake and share it with you ! I wrote a lot of directions, because i'm French and doesn't speak English correctly, but it's very easy.

Number Of Ingredients 13

2 puff pastry sheets (round, 230 grammes each)
150 g pitted dates
2 tablespoons rum (very good with dates)
2 tablespoons orange blossom water (can you find that? I hope so! or use a good orange juice, but it won't be exactly the same)
4 tablespoons water
250 ml milk
1 whole egg
1 egg yolk
4 teaspoons cornstarch
4 teaspoons butter
1 tablespoon superfine sugar, in France we say Sucre glace
1 egg yolk, for brushing the galette
1 whole dates or 1 whole dried broad bean

Steps:

  • Cut the dates into cubes, soak them into the Rum + orange blossom water +water and set aside at least 30 minutes, then mash everything like mash potatoes.
  • Heat the milk on low heat, but don't let it boil.
  • In a big bowl, beat the egg + the yolk and sugar until light and fluffy.
  • Beat in cornstarch, and then add hot milk.
  • Put the cream back to heat (olala, I don't know how to say that haha),stirring until thick.
  • Turn the heat off, and add butter, stir until completely melted. Set aside and let cool a little bit.
  • Add the date mixture and mix until well blended.
  • Preheat oven at 350°F.
  • Place the first puff pastry sheet on waxed paper or parchment paper on.
  • a cookie sheet (I don't know if that's the good word, you know the big thing in the oven, not the rack, olalala !).
  • Spread the cream on it, leaving 2 centimetres all around, that you will.
  • brush a little, with water so the second sheet can be sealed (I hope.
  • that makes sense!).
  • Put a whole date or a little something made in ceramic, and the person who finds it, needs to make another cake and share it with you!
  • Put the second puff pastry sheet, press all around to seal, and (how am I going to say that?! haha) take the dough that is under, on top, to seal it completely.
  • Mix one tablespoon of water + 1 egg yolk and brush the top of the galette,.
  • then with a knife, carefully and lightly draw things like it did on the picture, or what you want.
  • Bake for 10 minutes in the middle of the oven, then reduce to 300°F and bake for 10 more minutes.
  • Take out of the oven, and brush with 1 tablespoon of water + 1 tablespoon.
  • of superfine sugar and bake for another 10 minutes.
  • This is better the next day, it's more flavourful, it's wonderful served warm alone, or with some ice-cream :D.
