RUM PIE
My mom made this around Christmas time, but it's a great light dessert for anytime of the year! This has been a family favourite for as long as I can remember and I requested it often.

Steps:
- Sprinkle gelatin on cold water. Place over hot water and stir until dissolved.
- Blend Eagle Brand and rum in medium sized bowl.
- Gradually add gelatin and stir.
- Chill a short time until mixture starts to thicken.
- Whip cream and gently fold into milk mixture.
- Turn into prepared pie shell and chill in fridge until firm (about 2-3 hours).
- Sprinkle optional chocolate and/or coconut on top and enjoy!
- Cook time includes chilling time.

- Cook dates with milk 20 minutes in double boiler; Strain, rub through sieve, and add eggs, salt and a few gratings of nutmeg.
- Line plate with Plain Pastry and build up a fluted rim; Pour filling into crust.
- Bake 10 minutes in hot oven (450F), then reduce heat to moderate (350F), and bake until firm when tested with silver knife.

- Combine sour cream, sugar, salt, nutmeg, eggs, and brandy.
- Beat until smooth.
- Add the dates and nuts and blend well.
- Pour into pie shell.
- Bake in a 425 degree F.

BABA AU RHUM

Steps:
- Dissolve yeast in the milk in a large bowl.
- Stir in 1/2 cup flour.
- Cover and set aside in a warm place to rise for 30 minutes.
- Meanwhile, beat 7 Tablespoons of the butter in an electric mixer or in a food processor.
- Beat in 2 Tablespoons sugar and 2 Tablespoons flour.
- Beat in the eggs, one at a time.
- Beat the remaining flour into the risen yeast mixture, then beat in the butter-egg mixture to make a thick, cake-like batter.
- Grease an 8-inch Bundt pan with the remaining tablespoon of butter, taking care to leave no part of the pan ungreased, and spoon the batter into the mold.
- It should fill it halfway.
- Cover with a cloth and set aside to rise until the dough reaches the top of the mold.
- Heat the oven to 350 degrees.
- Bake the baba for about 40 min.
- until nicely browned on top.
- While the baba is baking, combine the remaining sugar with the water in a saucepan and boil until syrupy and reduced to 3 cups.
- Remove from heat and stir in rum.
- Remove baked baba from oven and spoon rum syrup over it, saturating completely.
- Cool 45 minutes.
- Unmold.
- Decorate with candied fruits and whipped cream.

- preheat oven to 350 grease and flour a 9" pie dish with the butter and 1 tsp flour combine sugar, 3 tbsp flour and baking powder in a small dish, set aside put dates and remaining flour in a small bowl, stirring to coat.
- add walnuts, set aside in a medium bowl add eggs and beat well stir in date mixture, stir in flour/sugar mixture until well combined pour into prepared pie dish and bake 30-35 minutes until a toothpick inserted in center comes out clean serve warm or at room temperature.

This is a variation of the regular "croustade" which is usually just the baked apples with the crispy oat on the top with flavor of butter and cinnamon. Try this amazing dessert enhanced by maple flavor.

- In a pan that goes in oven, put the cut apples.
- Pour the maple syrup on the apples.
- In a separate bowl, mix together the flour, oatmeal, brown sugar, butter and salt.
- Add this mixture on the apples.
- Cook in the oven for about 35 minutes at 375°F.
- Serve warm with vanilla ice cream is amazing!

A tasty date and rum filling, bake between puff pastry sheet. Lovely french "dessert", served warm or cold, plain or with a little bit of ice cream. Don't forget to hide a whole date or a little something that you are not suposed to eat ( and something that won't melt haha) and the person who finds eat, will have to make a cake and share it with you ! I wrote a lot of directions, because i'm French and doesn't speak English correctly, but it's very easy.

Steps:
- Cut the dates into cubes, soak them into the Rum + orange blossom water +water and set aside at least 30 minutes, then mash everything like mash potatoes.
- Heat the milk on low heat, but don't let it boil.
- In a big bowl, beat the egg + the yolk and sugar until light and fluffy.
- Beat in cornstarch, and then add hot milk.
- Put the cream back to heat (olala, I don't know how to say that haha),stirring until thick.
- Turn the heat off, and add butter, stir until completely melted. Set aside and let cool a little bit.
- Add the date mixture and mix until well blended.
- Preheat oven at 350°F.
- Place the first puff pastry sheet on waxed paper or parchment paper on.
- a cookie sheet (I don't know if that's the good word, you know the big thing in the oven, not the rack, olalala !).
- Spread the cream on it, leaving 2 centimetres all around, that you will.
- brush a little, with water so the second sheet can be sealed (I hope.
- that makes sense!).
- Put a whole date or a little something made in ceramic, and the person who finds it, needs to make another cake and share it with you!
- Put the second puff pastry sheet, press all around to seal, and (how am I going to say that?! haha) take the dough that is under, on top, to seal it completely.
- Mix one tablespoon of water + 1 egg yolk and brush the top of the galette,.
- then with a knife, carefully and lightly draw things like it did on the picture, or what you want.
- Bake for 10 minutes in the middle of the oven, then reduce to 300°F and bake for 10 more minutes.
- Take out of the oven, and brush with 1 tablespoon of water + 1 tablespoon.
- of superfine sugar and bake for another 10 minutes.
- This is better the next day, it's more flavourful, it's wonderful served warm alone, or with some ice-cream :D.
