FUMI SALAD
This recipe was given to me many years ago by my Mother-in-Law. It's great for BBQ's or picnics because there's no mayo in it that could spoil, however, don't add the dressing until you're ready to eat so it doesn't wilt. I sometimes add shredded, cooked chicken to it also.

Steps:
- 1. Brown almonds and sesame seeds on sheet pan, under broiler for 1-1/2 to 2 minutes at 450 degrees. Watch them carefully so they don't burn!
- 2. Mix cabbage and onions in a large bowl. At last minute mix in seeds, almonds and crushed noodles.
- 3. Mix dressing well until sugar is dissolved and poor over salad just before serving.
BETTY'S FUMI SALAD
This is The Pot Luck Favorite! My mom always receive raves from this recipe. People inevitably want a copy of it as it's so delicious and easy to make. One recipe will feed a LOT of people. This is super-good in the summer or to take to a pot luck. Enjoy!

- Mix and let stand 1 hour - 1 cabbage shredded with 8 green onions chopped Mix dressing ingredients (4TBSP sugar, 1 Cup salad oil, 6 TBSP rice vinegar (1/2 C), 2 tsp salt, 2 tsp accent, 1 tsp pepper) The dressing settles so make sure you shake it well before using. Mix nuts & ramen noodles with cabbage & onions and pour dressing over just before serving. I tried this recipe without the accent and it does not taste as good. The accent really adds to the salad.

RAMEN NOODLE ORIENTAL CHICKEN SALAD RECIPE
This recipe is a family favorite we have loved for years. You could even serve this as a main dish if you were wanting a light, refreshing salad!

Steps:
- In a small bowl, whisk together vegetable oil, rice vinegar, sugar, salt and pepper. Cover and store in fridge until before serving.
- In a large bowl, combine cooked chicken, cabbage and sunflower seeds; set aside. In a pan over medium heat, warm up vegetable oil. Add Top Ramen noodles (without flavor packets) and cook until slightly brown. Add slivered almonds to the ramen and continue stirring over heat until golden brown. Once cool, add ramen mixture to the chicken/cabbage mixture and stir to combine.
- Add dressing that you set aside and toss to coat before serving to avoid the noodles getting soggy.

SUMI SALAD (ASIAN CABBAGE SALAD)
A crunchy, refreshing salad with unusual flavor. This recipe was given to me by my friend Joan Truman. If you are fortunate enough to live near a Japanese market, purchase Nissen ramen noodles. They come in a red and gold package. The only word I recognize is Nissen; everything else is Japanese. These noodles do not come with a flavor packet as the seasoning is already in the noodles. Although you can use regular ramen noodles with seasoning packets, I prefer the taste of noodles that are already seasoned.

- Dressing:.
- Mix sugar, rice vinegar and salt together in small saucepan. Heat over medium until sugar and salt dissolve. Let mixture cool and then combine with remaining dressing ingredients. Set aside.
- Salad:.
- Heat 2 tablespoons oil in skillet. Toast almonds and sesame seeds until lightly browned. Combine with onions, cabbage, and dressing. Approximately 30 minutes before serving, crush ramen noodles in their package and combine with salad.
- Note: This salad is best if you make it the night before you plan on serving it. The sweet and salty flavors develop overnight and although the cabbage softens a bit, it still retains it's crunchy texture. A good summer salad for picnics since it travels well and doesn't contain mayonaise.

FUMI SALAD
It's a unique twist on coleslaw. Great use of the noodles that have no seasoning packet because a teenager has stolen it when eating the ramen noodle soup and wanted two packets of seasoning in their soup. LOL

- 1. Toss together the above, adding the sunflowers seeds and raw-uncooked Ramen noodles (broken up).
- 2. Shake dressing well and pour just enough on the salad to moisten and to taste.

- Whisk vinegar, olive oil, lime juice, soy sauce, sesame seeds, mild red pepper flakes, and sesame oil in a small bowl to combine. Set dressing aside.
- Cook noodles in a large pot of boiling salted water according to package directions. Drain and rinse under cold water to stop the cooking. Transfer to a large bowl, add half of reserved dressing, and toss to coat.
- Divide noodles among bowls. Top with vegetables and drizzle with remaining dressing.
