MASHED PLANTAINS WITH CHORIZO: FUFU



Mashed Plantains with Chorizo: Fufu image

6 very ripe plantains, peeled and cut into 1-inch pieces
5 cups water
1 cup milk
1 tablespoon ground turmeric
Salt and freshly ground black pepper
Canola oil
2 cups chorizo, small dice, (recommended: Goya)
Mojo, for serving, (recommended: Goya)

Steps:

  • Put the plantain pieces a pot large enough to hold them, and add water and milk. Add turmeric and season with salt and pepper. Bring to a boil, lower the heat and allow to simmer for 20 minutes. Drain and mash through a ricer.
  • Lightly coat a separate pan with canola oil. Add chorizo and saute for 5 minutes over low heat. Add pureed plantain and mix well.
  • Serve with the Mojo.

I bought a recipe book by a local women's group on my recent trip to Belize (Silly Bug & Bittle Recipes) and this one sounds like something I would like. I love plantains and I love mashed sweet potatoes, so I'm guessing I would like this. The original recipe calls for just the plantain but the site requires at least 2 ingredients so I added butter and salt as I have a feeling I'll add a little of both, but will give it a try plain first and then modify as needed.

1 ripe plantain
butter (optional)
salt (optional)

Steps:

  • Plantains are ripe when the skin turns black and they are soft to the touch. Peel the plantain and cut in half. (I've found it easiest to peel by scoring the skin with a knife in several spots before attempting to peel).
  • Put plantain in a pot covered with water and boil until soft (I have no idea on the time, will update the recipe after I try it).
  • Drain water and mash in pot with a potato masher.
  • Add butter and salt as to taste.

Steps:

  • Combine 3 chopped ripe plantains in a saucepan with 2 cinnamon sticks, 1/4 cup brown sugar, 4 tablespoons butter and 1 teaspon kosher salt. Cover with water and simmer until tender, 15 to 20 minutes. Drain, reserving the liquid. Mash the plantains. Brown 4 tablespoons butter in a skillet, 6 to 10 minutes. Mix into the plantains; add enough of the reserved liquid until creamy. Season with salt, pepper and ground cinnamon.

Also spelled foofoo or foufou, fufu in its many variations is a staple in western and central Africa. Traditionally, it would be made by pounding - pounding, not mashing - the boiled tubers or plantains. This version offers a modern shortcut using the food processor. Use whatever proportions of starch suit your taste. Half yam (not sweet potato) and half green plantain might be a good starting point. Serve with soup, stew, or cooked vegetables. 3 lbs yams (or malanga or cocoyam or green plantains)
2 tablespoons butter or 2 tablespoons margarine
salt
pepper

Steps:

  • Peel the yam and malanga. Remove the peel from the plantains.
  • Cut into large (2-3 inch) chunks.
  • In a large pot, boil in water until soft, about half an hour.
  • Drain.
  • Mash slightly.
  • Place in the food processor with the butter, salt and pepper. Blend to a smooth, very thick paste. (If the paste is too thin to hold its shape, stir in a very small amount of dried potato flakes.).
  • Roll into golf-ball sized pieces.

This is a flavorful side dish to accompany any meat or pork. Its another favorite here in our home. The original recipe has crushed skinless pork rinds, but I make it without, due to my kids' taste (you can always add it).

4 - green plantains, cut in 4 pieces each, with skin on
1 - yellow plantain, cut in 4 pieces, with skin on
- water
1/2 cup(s) olive oil
4 large garlic cloves
- salt/pepper to taste

Steps:

  • In a large pot, boil the cut up plantains till they soften. The skin keeps it moist so leave it on. You'll know when its ready when the fork easily goes in.
  • Meanwhile, on low heat, add the olive oil, smash the garlic cloves, and saute for a couple minutes. Only saute until combined and a little soft, do not burn it (it becomes bitter).
  • Drain the plantains reserving 1 cup of the water and remove the peels. Put them back into the pot and mash like you would for mashed potatoes. Next, add the olive oil and garlic and keep mashing. While mashing, add the reserved water little by little till you get a nice thick consistency. Add salt & pepper to the taste and enjoy.
