GLUTEN-FREE FUDGY BANANA PUDDING POPS
Pop up with fun layered chocolate and banana frozen treats made with yogurt.

Steps:
- In medium bowl, beat pudding mix and milk with wire whisk about 2 minutes or until well blended. Let stand 5 minutes or until thickened.
- Meanwhile, in small bowl, mash banana with fork. Stir in yogurt.
- Place paper cups in 8-inch pan for easier handling. Spoon 2 tablespoons pudding into each cup. Divide yogurt mixture evenly among cups. Top with remaining pudding mixture. Tap cups on work surface to level top. Insert wooden stick into center of each pop.
- Freeze pops about 2 hours or until solid. Store frozen pops in plastic freezer bag in freezer. Peel off paper cups before serving.

- In small bowl, gradually add 1 cup of the soymilk to vanilla pudding mix; beat with wire whisk until well blended. Stir in bananas. In another small bowl, gradually add remaining soymilk to chocolate pudding mix; beat with wire whisk until well blended.
- Spoon half of the banana mixture into cups. Layer chocolate mixture over banana mixture. Spoon remaining banana mixture into cups; stir slightly to marble. Insert sticks; freeze about 3 hours or overnight until firm. To serve, remove cups.

- In a mixing bowl, combine pudding, sugar, and milk. Pour mixture into small plastic cups (if you do not have ice pop molds) and freeze. When set, place a wooden craft sticks into them if you are using plastic cups. Serve when frozen.

- Preheat the oven to 350 degrees F. Fill the kettle with at least 2 cups of water and turn it on now so your water is boiled when you need it. Butter an 8 X 11 casserole style, oven safe dish.
- Directly in the casserole dish, stir together flour, sugar, cocoa powder, baking powder, espresso powder, salt and stir together thoroughly.
- Pour 2 tbsp of melted butter and milk over the dry ingredients and stir well. This will make a thick, paste-like batter.
- In a separate small bowl or pyrex measuring cup, mix together the brown sugar, cocoa powder, orange zest, orange juice and boiling water. Stir until all the sugar dissolves. Pour this hot mixture over the dough in the casserole dish. Do not stir at all!
- Place the dish immediately in the oven and bake for 25-30 minutes. Sprinkle on some icing sugar for a pretty finish.
- Serve immediately with a dollop of whipped cream sweetened with maple syrup or vanilla ice cream. Enjoy!

- In a medium container, mix together milk, chia seeds, maple syrup, and cocoa powder. Sprinkle in a few chocolate chips or cacao nibs if you’d like a bit of crunch (optional.) Cover and refrigerate while seeds expand, at least an hour or two, until the mixture is thick like pudding. It’s important to stir the mixture a few times while refrigerating to break up any chia clumps. These popsicles are mildly sweet. Taste the pudding and add more sweetener, if needed. Keep in mind they become even less sweet when frozen.
- Into your popsicle mold, alternate chia pudding and banana slices. I like to add as much fruit as will fit. Tap the mold on the counter periodically to release any air pockets. Fill molds to the top, cover and insert popsicle sticks. Freeze until solid, overnight is best. This popsicle maker is similar to the one I have.
- When ready to serve, I run the bottom of the molds under room temperature water, which helps them to pop out easily. Wrap extras in baggies or plastic wrap and store in the freezer.

- Preheat the oven to 180º C. Grease and line a 20cm loaf tin with baking paper. Sift the flours, salt, cocoa and raising agents into a large mixing bowl. Place the brown sugar, honey, dates, eggs, coconut oil, bananas and vanilla in a blender or liquidizer. Blitz until smooth and well combined with the consistency of a thick milk shake. Pour the wet ingredients into the sifted flour and fold through until incorporated. Pour the batter into the loaf tin and bake for around 35-40 minutes until cooked through.
- For the ganache, place the chocolate and coconut milk in a small heat resistant bowl and microwave for 40 seconds. Whisk until smooth and glossy. Be careful not to overheat. The residual heat of the bowl will be enough to melt the chocolate. Set the ganache aside to cool and thicken. Pour the ganache over the banana loaf and allow to set until until firm.
