2-2/3 cups sugar
4 large eggs, room temperature
3 teaspoons vanilla extract
2 cups all-purpose flour
1 cup baking cocoa
1/2 teaspoon salt
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, cocoa and salt; gradually beat into creamed mixture. , Spread into a greased 13x9-in. baking pan. Bake until the top is dry and the center is set, 25-30 minutes. Cool completely in pan on a wire rack. If desired, dust with confectioners' sugar.

Steps:

  • Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking dish with parchment paper.
  • Chop the chocolate into chunks. Melt half of the chocolate in the microwave in 20-second intervals, saving the other half for later.
  • In a large bowl, mix the butter and sugar with an electric hand mixer, then beat in the eggs and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.

⅓ cup vegetable oil
½ cup boiling water
2 cups white sugar
2 eggs
⅓ cup vegetable oil
1 ⅓ cups all-purpose flour
1 teaspoon vanilla extract
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

2 cups shredded zucchini

FROSTING:
1/4 cup butter, cubed
1 cup sugar
1/4 cup milk
1/2 cup semisweet chocolate chips
1/2 cup miniature marshmallows
1 teaspoon vanilla extract
1/2 cup chopped walnuts, optional

Steps:

  • In a large bowl, combine the flour, cocoa, baking soda and salt. In a small bowl, combine the zucchini, sugar and oil; stir into dry ingredients until blended. Stir in walnuts and vanilla. , Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick comes out clean. 1/2 cup unsalted butter
1 Tbsp cooking oil
2/3 cup granulated sugar
1/2 cup brown sugar
2 large eggs
2 tsp pure vanilla extract
1/2 cup all purpose flour
1/2 cup unsweetened cocoa powder
1/4 tsp salt
Optional - chocolate chips, chocolate chunks, or nuts

Steps:

  • Preheat the oven to 350 degrees F.
  • Lightly spray a 6 inch square baking pan with non-stick baking spray.
  • Line with a 6"x10" parchment paper and spray again. Set aside.
  • In a sauce pan (or microwave) heat the butter until completely melted.
  • Combine hot melted butter, oil, granulated sugar, and brown sugar together in a medium-sized bowl. Whisk well for about one minute.
  • Add the eggs and vanilla and beat until lighter in color, about one minute.
  • Gently fold in the flour, cocoa powder and salt into the wet ingredients until just combined (do NOT over mix).

  • Remove by lifting with the parchment paper that is hanging over the edges of the pan. Slice into 4 - 6 brownies. For the ultimate chewy texture, place the brownies in the fridge for an hour after baking and cooling at room temperature.

1/2 cup all purpose ((or plain) flour)
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F (175°C).
  • Lightly grease an 8-inch square baking pan with cooking oil spray. Line with parchment paper (or baking paper); set aside.
  • Combine hot melted butter, oil and sugar together in a medium-sized bowl. Whisk well for about a minute. Add the eggs and vanilla; beat until lighter in colour (another minute).
  • Sift in flour, cocoa powder and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).
  • Pour batter into prepared pan, smoothing the top out evenly. (OPTIONAL: Top with chocolate chunks or chocolate chips.)
