FROZEN FUDGE POPS

Frozen Fudge Pops image

These easy fudge pops, with a mix of cream and milk, combine the fun of an ice cream truck Popsicle with the sophistication of a rich chocolate ice cream touched with salt. The key is making sure the ingredients are well emulsified in a blender. These will melt quickly so enjoy them right out of the freezer.

Provided by Kim Severson

Categories     easy, snack, ice creams and sorbets, ice dishes, dessert

Time 10m

Yield 8 small pops, fewer if larger molds are used

Number Of Ingredients 7

6 ounces good-quality chocolate, at least 54 percent cacao
2 cups whole milk
1/2 cup cream
1/4 cup sugar
2 tablespoons unsweetened cocoa
2 teaspoons vanilla
1/2 to 1 teaspoon kosher salt, to taste

Steps:

  • Break up chocolate and put into a blender. Bring milk, cream, sugar and cocoa to a light boil and immediately remove from heat. Pour milk over chocolate, add vanilla and salt and allow to sit for a few minutes to soften chocolate. Blend until chocolate and milk are emulsified and the mixture is smooth.
  • Pour into eight 3-ounce paper cups (there may be a little left over), or use ice pop molds. If using the small cups, place in freezer for about 1 hour before inserting wooden craft sticks so the sticks will stand straight.
  • Freeze well for 24 hours. Pops may be taken out of paper cups and stored in a heavy freezer bag.

Healthy Chocolate Fudgsicles image

Creamy and delicious chocolate fudge pops.

Provided by Chocolate Covered Katie

Categories     Dessert

Time 5m

Number Of Ingredients 6

2 tbsp cocoa powder
1/2 cup milk of choice ((see note below))
2 small ripe bananas,
pinch salt ((scant 1/16 tsp))
sweetener of choice
optional 2-3 tbsp peanut butter or melted chocolate chips

Steps:

  • For creamiest and richest results, use either canned full-fat coconut milk or coconut cream OR use milk of choice and add 2 tbsp nut butter (almond, cashew, macadamia, sunflower, etc.).To make the recipe, combine everything with a blender or by hand until smooth. Pour into popsicle molds and freeze. Easy, right? As I said, the hardest part is waiting for them to freeze! A good way to remove pops is to run the popsicle mold under room-temp water for about 15 seconds, then gently twist. View Nutrition Facts

  • Blend all the ingredients in a blender until smooth. Taste and add more honey or sugar if you please. (If the mixture seems a touch gritty from the cocoa, blend it a little longer and let it rest at room temperature for about 15 minutes.)
  • If using popsicle molds, pour the chocolate fudge pops mixture into popsicle molds. Insert the base and freeze until set, at least 2 hours. (If making ice pops using paper cups, insert the wooden sticks after the pops are firm enough to hold the sticks upright, at least 1 hour, depending on the size of the cups. The bigger the cup, the longer it will take.)
  • Loosen the pops by running the molds under warm water. We think you can manage from here. Originally published August 23, 2013.

  • In a large mixing bowl, beat together your ingredients. If mixture seems to be too thin, you can add an additional package of pudding. Sometimes the almond milk can make it a bit thin. It should take about two to three minutes for the mixture to become well blended.
  • Pour the mixture into the molds. Cover the molds with the sticks/handles that come with the molds. Alternatively, cover the molds with plastic wrap and poke a small hole over each pop to insert a Popsicle stick. The plastic wrap should hold the sticks in place.
