FUDGE BALLS (NO BAKE)
Wonderful little treats, great to take to potlucks (they travel well). I have made these without using the dried fruit, and just with raisins, and they are still wonderful, but even better with the dried fruit!

- Microwave on high for 2.5 to 3.25 minutes. This is a range as the time depends upon the power of the microwave and the bowl. Begin with setting the timer at 2.5 minutes and check the mixture.

- In a large mixing bowl, stir together the peanut butter and maple syrup. Add in the cacao powder and coconut flour and blend it together until a dough forms. Stir in the chocolate chips.
- Pop the bowl into the fridge for 30 minutes. This makes the dough firmer and much easier to roll into balls.
- Scoop tablespoon-sized balls onto a baking sheet lined with parchment. Roll them into firm balls then place the baking sheet into the freezer for 45 minutes.

- Line a baking sheet with parchment paper and set aside. To a food processor, add pitted dates and blend until small bits remain or a ball forms. Scoop out and set aside.
- To the food processor, add your almond flour, coconut flour, and cacao powder. Blend until a fine meal is achieved - about 20-30 seconds.
- Add the dates back in along with the vanilla extract, maple syrup, and coconut cream. Blend until a tacky dough forms. If it’s too dry, add a little more maple syrup. If it gets too wet or sticky, add more coconut flour as needed.
- Scoop out 1 1/2 Tbsp amounts of dough (I like this scoop) and roll into balls. Repeat until all of your mixture is used up. Arrange on your parchment-lined baking sheet. Transfer to the freezer and freeze for 10 minutes.

- Add dates, almond butter, and honey, and continue processing until well combined. You will probably need to scrape down the sides of your processor and add a few teaspoons of water to get things moving. Add water sparingly, as adding too much will make the dough too sticky.
- Transfer dough to a small bowl and add chocolate chips, mixing by hand until well incorporated. Use a tablespoon to divide dough into 12 equal portions, rolling each portion into a ball. Place bites in fridge for ~20 minutes to allow them to set.**
