VEGAN FRUITCAKE RECIPE

Dried Cranberries ¼
Dried Pineapple ¼ cup
Dates ¼ cup
Dried Figs ¼ cup
Fresh Pear ½ cup
Candied Orange *optional or just replace with another fruit ¼ cup
Fresh grated ginger approximately 2 teaspoons
Orange zest 1 teaspoon
Lemon zest 1 teaspoon
Rum spiced or gold your choice ½ cup + more for basting *Optional
Granulated Sugar ½ cup (100g)
Flax meal 2 Tablespoons (16g)
Aquafaba 6 Tablespoons (90ml) Or hot water
Baking Soda ½ teaspoon
Baking Powder 1 teaspoon
Salt pinch
Ground Cinnamon 1 teaspoon
Ground Ginger ½ teaspoon
Cardamon ¼ teaspoon
Allspice ⅛ teaspoon
Nutmeg ⅛ teaspoon
Anise pods 4
Whole Cloves about 10-12
All Purpose Flour ¾ cup + 2 Tablespoons (109g)
Applesauce ½ cup (100g) OR OIL if not using applesauce
Vegan Butter 5 Tablespoons (70g)
Nuts of your choice I used almonds ½ cup

Steps:

  • Place the star anise pods and the whole cloves in a small pouch of cheesecloth so you can easily pull them out of the mixture later.
  • Cut all the dried fruits and the pear to the same size as the raisins and cranberries and in a medium bowl, pour the rum over top.
  • Let it macerate overnight at room temperature (Or to speed the process microwave for 1 minute to reconstitute) and then let it sit for 3 hours
  • Chop the nuts to same size, but reserve aside for last.
  • In a large sauce pot combine the macerated fruits, the zest, grated ginger, spices, sugar, applesauce and vegan butter and bring to a boil.
  • Reduce heat and simmer for 10 minutes on low heat.
  • Let it cool for about 15 minutes, remove the sack of whole spices (anise pods and cloves) and discard then add the nuts and the sifted flour, egg replacer, baking soda and powder .
  • Pour the batter into a greased 9" x 5" loaf pan or if you are using the mini loaf pan like me, you will only get 6, be sure to fill the batter almost to the top (about ¾ full) for whatever size [an you are using.
  • Bake in a preheated 375°F oven for 10 minutes, then reduce heat to 350°F for another 10 minutes for the MINI LOAFS for a total bake time of 20-25 minutes.
  • The large standard loaf will take 35-40 minutes total bake time.
  • Cool in the pan until you can touch the pan without burning yourself and then flip out onto a wire rack to cool the rest of the way.
  • While still warm, brush with additional rum *Optional see notes above the recipe section
  • Cool completely then wrap well and store in the refrigerator for up to 2 weeks
  • Sprinkle loaves with confectioners sugar or ice with optional buttercream and additional fruit compote as shown in the picture

1 pound walnut halves

Steps:

  • Preheat oven to 300°. Combine fruit and nuts. In another bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder and salt; add to creamed mixture and mix well. Pour over fruit and nuts; stir to coat. , Transfer to a greased and floured 10-in. tube pan. Bake until a toothpick inserted in center comes out clean, about 2 hours. Cool 10 minutes; remove from pan to a wire rack to cool completely. Wrap tightly and store in a cool place. Bring to room temperature before serving; slice with a serrated knife.

1¼ cups (200 g) golden raisins
2 cups (320 g) mixed unsweetened dried fruit, chopped
1 cup (160 g) dried unsweetened black figs (chopped)
1 cup (160 g) dried unsweetened tart cherries (chopped)
¾ cup (120 g) dried unsweetened prunes (chopped)
¾ cup (6 oz; 180 mL) dark rum
1½ cups (180 g) unbleached all-purpose flour
½ teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
¼ teaspoon ground nutmeg
1 teaspoon Diamond Crystal kosher salt
1 stick (4 oz; 115 g) unsalted butter (softened)
¾ cup (160 g) packed light brown sugar
5 large eggs (room temperature)

Steps:

  • The Day Before Baking: Combine the dried fruit in a large mixing bowl. Add the dark rum, cover, and allow the mixture to soak at room temperature for a minimum of 12 hours, or ideally 24 hours prior to preparing the fruit cake batter.
  • Prepare the Fruitcake: Preheat the oven to 300°F (150°C) with a rack in the center position. Set aside two 8x4-inch All Clad Pro-Release Bakeware Loaf Pans. If using these pans, you do not need to line or grease the pans prior to adding the batter. Equipment Note: This fruitcake can also be prepared using 9x5-inch loaf pans. If using other types of pans, lightly grease and line with parchment paper.
  • In a medium mixing bowl, whisk together the all purpose flour, baking powder, spices, and salt. Set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, cream the softened butter and light brown sugar together over medium-high speed for 3 minutes, or until light and fluffy. Reduce speed to medium and add the eggs one at a time, beating just until each egg is incorporated. The mixture will look slightly broken, that's ok.
  • Over low speed, slowly add the flour mixture until just absorbed. Remove the bowl from the stand mixer. Add the lemon zest, orange zest, fresh orange juice, grated apple, slivered almonds, diced candied ginger, soaked dried fruit mixture (along with any liquid if it hasn't already been absorbed), and chocoate (if using). Stir mixture with a large spatula, scraping the edges and bottom of the bowl several times, until all of the ingredients are evenly incorporated. It is a very thick, fruit heavy mixture.
  • Transfer and divide the batter evenly among the loaf pans. Use an offset spatula to smooth the batter into an even layer. Set the loaf pans on the center rack, several inches apart from one another. Bake - rotating the pans halfway - for 75 to 90 minutes or until the batter is set and the tops are golden brown. The edges of the cake may also start to pull away slightly from the edges of the pan. Remove from the oven and place on a rack to cool completely before removing from the pans.
  • Storing and Aging: Once the cake has cooled, carefully remove the cakes from the loaf pans and set upright. Soak two large pieces of cheesecloth in medium sherry or triple sec (*they should be lightly damp, not soaking wet when you wrap the cakes, so you may need to squeeze out any excess liquor). Wrap each cake tightly. Cover loafs with wax paper and foil before transferring to a large Ziploc bag. Store in the refrigerator for up to 6 to 8 weeks (it can often last even longer). You can serve this cake right after it has cooled, but the flavors improve greatly with time (I recommend several days or up to a week, at minimum). Unwrap and re-soak the cheesecloth once a week.
  • For Garnishing: If desired, you can top the fruitcake with a light apricot glaze and whole pecans before serving. Note: I don't recommend glazing the cake if you wish to continue to wrap and age the fruitcake. To Prepare the Glaze: Combine the apricot preserves and water in a small saucepan. Bring to a light simmer, stirring until the glaze is shiny and thin. If it is too thin for glazing, reduce to desired consistency. If it becomes too thick, add a teaspoon of water. Brush the tops of the fruitcakes with apricot glaze and garnish with whole pecans.
  • Serving Notes: Slice fruit cake with a serrated knife. Serve on its own or spread with a small amount of salted butter.

Steps:

  • Preheat the over to 350F (180C). Butter an 8x8 baking dish.
  • In a big bowl whisk together the eggs and the sugar just until it all comes together, about 30 seconds, no more.
  • Add the flour (and baking powder if using) and wisk together just until the flour disappears and there are no more lumps, about 45 seconds, no more. The batter will be quite thick and there won't be a lot of it.
  • Spread the fruit over the bottom of the dish and spread the batter over. It will barely cover the fruit and it'll look like it's not enough, but it will be great. Alternatively you can mix the fruit with the batter.
  • Bake for 45-55 minutes depending on your oven. A toothpick inserted into the cake should come out clean when the cake is ready.

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Grease four 9 x 5 x 3 inch loaf pans, and then line with brown paper or foil. Grease again.
  • In a large container stir raisins, currants, candied fruit mix, candied cherries, maraschino cherries, dates, and 1 cup flour together until all the fruit is well coated with flour.
  • Measure 2 1/4 cup flour, baking powder, baking soda, salt, cocoa, cinnamon, and nutmeg into a medium bowl. Stir to mix.
  • In a very large bowl, cream the butter or margarine with the sugar. Beat in egg yolks three at a time. Stir in pineapple with juice and vanilla. Add flour mixture in 3 parts alternately with fruit juice in 2 parts to the creamed mixture, beginning and ending with flour mixture. Stir in walnuts.
  • In another bowl, beat egg whites until stiff. Fold egg whites into batter, and stir in fruit gently. Divide batter among pans. Smooth.
  • Bake for about 3 hours until an inserted wooden pick comes out clean.

1 cup dark brown sugar, firmly packed

Steps:

  • Set oven to 325 degrees F.
  • Butter two 9 x 5-inch loaf pans.
  • Line the pans with foil, then butter the foil.
  • Cream the butter or shortening.
  • Add in brown sugar; beat until light.
  • Add in lemon extract and eggs and beat well.
  • Stir in molasses and blend to combine.
  • In a small bowl combine the flour with baking soda, cinnamon, allspice, mace, cloves and salt; beat into the creamed mixture until combined.
  • Add in milk; beat until combined.
  • Stir in the candied fruit, candied cherries, candied citron, dates or raisins and nuts; mix well.
  • Transfer/divide the batter between the two pans.
  • Bake for 1 to 1-1/4 hours or until the loaves test done.
  • Turn out onto racks to cool.
  • When completely cooled wrap well and store in an airtight container.
  • BRANDIED FRUIT CAKE OPTION; soak two large pieces of cheesecloth in brandy.
  • Wrap each fruit cake in the cheesecloth covering all sides, then wrap well in foil.
  • Moisten the cheesecloth with additional brandy every few days for about a week.

3 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 300°. In a large bowl, combine the nuts, dates and cherries. Combine the flour, sugar, baking powder and salt; add to nut mixture, stirring until nuts and fruit are well coated. , In a small bowl, beat eggs until foamy; stir in vanilla. Fold into nut mixture and mix well. Pour into a greased parchment-lined 9x5-in. loaf pan. , Bake at 300° for 1-3/4 hours or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
