FRUITED SWEET POTATOES
In Cape May Court House, New Jersey, Nancy Zimmerman dresses up convenient canned sweet potatoes and apricot halves with brown sugar and cinnamon. "This fast-to-fix-side dish is delicious with a ham dinner," she relates.

- Drain sweet potatoes and apricots, reserving 1/2 cup syrup from each. If desired, cut apricots into fourths. Place potatoes and apricots in a greased 1-1/2-qt. baking dish. In a saucepan, combine brown sugar, cornstarch, cinnamon and reserved syrup; stir until smooth. Bring to a boil over medium-high heat. Remove from the heat; pour over potatoes and apricots. Bake, uncovered, at 350° for 25 minutes or until bubbly.

FRUITY SWEET POTATOES
I have a favorite way to make sweet potatoes. They are the type swimming in a concoction of butter, brown sugar and marshmallows until the syrup is thick and sticky. Loaded with fat and calories, they are reserved for the holidays (when we tend to throw caution to the wind regarding our waistlines!). I found this recipe in a Slow Cooker cookbook and decided to give it a try. These are rich and sweet, with far less fat and sugar than I would normally add which equates to being able to eat more of them. :-) They smell and taste SO good! NOTE: I used my smaller 4 quart cooker

Steps:
- Peel sweet potatoes if you wish (I did!). Cut into cubes. In the photo, mine are about 1 inch.
- In a bowl, mix together applesauce, brown sugar, butter and cinnamon. Spoon over potatoes.
- Cover and cook on low for 6-8 hours, or until potatoes are tender. (see note!)
- Serve with sauce poured over potatoes. You may also top with chopped nuts. I didn't do this, but if I were going to I'd probably used toasted pecans.
FRUITY SWEET POTATO YEAST BREAD
I love to bake yeast bread. I got the idea for this recipe from a TOH magazine, then added fruit and ingredients that I knew would help it to raise and keep it moist. I think you will like it. You may of course omit the fruit and also use all honey if you can't find the malt syrup, but it helps whole grain bread raise. This also makes excellent rolls or mini loaves.

Steps:
- In large mixer bowl, put water, yeast and honey. Let foam.
- Add malt syrup, sweet potatoes, butter, egg, salt, whole wheat flour, gluten, dry milk, potato flakes, cinnamon and nutmeg. Beat for about 10 minutes.
- Gradually mix in enough white flour to make a soft dough.
- Place into a greased bowl, turn to grease top. Cover and let raise until double, about 1 hour.
- Punch dough down and make 3 loaves. Place into greased loaf pans. Cover and let double.
- Bake in a preheated 370 degree oven 50 minutes or until 190-200 degrees when tested with instant read thermometer.
- Brush with butter and cover with towel.

- Peel sweet potatoes if you wish, and cut into cubes, or slices.
- In a bowl, mix together applesauce, brown sugar, butter, and cinnamon, and spoon this mixture over potatoes.
- Cover, and cook on low 6-8 hours in a slow cooker or until potatoes are tender.
- Mash potatoes and sauce together if you wish with a large spoon, or spoon potatoes into serving dish and top with the sauce.
- Sprinkle with nuts if you wish.

- Place sweet potatoes in a large saucepan or Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook just until tender, 10-15 minutes. Drain. In a large bowl, mash potatoes with apple juice and lemon juice., Meanwhile, in a large skillet, saute bananas and apples in butter until tender. Stir in the ginger, salt, cinnamon and allspice; cook and stir 5 minutes longer. Cool slightly., Place banana mixture in a food processor; cover and process until smooth. Stir banana mixture and apricots into mashed potato mixture. Transfer to a 13x9-in. baking dish coated with cooking spray; sprinkle with pecans., Bake, uncovered, at 350° until edges are golden brown, 40-50 minutes.

- Preheat oven to 350 degrees F (175 degrees C)
- In a large soup pot, boil potatoes until soft. Add sliced apples just 5 minutes before potatoes are done. Remove from heat. Drain.
- In a large casserole dish, mix potatoes and apples. Dot with butter. Sprinkle brown sugar, walnuts, and raisins on top of potato mixture. Pour apricots over top.
- Bake uncovered for 30 minutes.
