FRUITED PULL-APART BREAD

Fruited Pull-Apart Bread image

"My mother made this wreath-shaped coffee cake each Christmas," recalls Bonnie Wilde of Springville, Utah. "The dough is kneaded in the bread machine, so it turns out perfectly every time."

Provided by Taste of Home

Time 1h

Yield 1 loaf.

Number Of Ingredients 15

3/4 cup water (70° to 80°)
1 tablespoon butter, softened
3 tablespoons sugar
1 teaspoon salt
1 tablespoon nonfat dry milk powder
2-1/4 cups bread flour
1-1/2 teaspoons active dry yeast
TOPPING:
1 cup sugar
1-1/4 teaspoons ground cinnamon
1/2 cup pecan halves
1/3 cup halved maraschino cherries
2 tablespoons raisins
2 tablespoons dried cranberries
1/3 cup butter, melted

Steps:

  • In bread machine pan, place the first seven ingredients in order suggested by manufacturer. Select the dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a floured surface and punch down. Divide into 40 portions. In a bowl, combine the sugar and cinnamon; sprinkle 2 teaspoons in a greased 10-in. fluted tube pan. Arrange about a third of the pecans, cherries, raisins and cranberries in bottom of pan. Dip half of the dough pieces in butter, then roll in sugar mixture. Arrange evenly in pan. Repeat. Arrange remaining pecans and fruit over top. Cover and let rise in a warm place until doubled, about 1 hour. Bake at 350° for 30 minutes or until golden brown. Cool in pan for 5 minutes before inverting onto a serving platter.

Time 2h

Yield 12 servings

Number Of Ingredients 19

Dough
2 c. Whole Milk
1/2 c. Canaola Oil
1/2 c. Sugar
2 1/4 tsp. Active Dry Yeast
4 c. All-purpose Flour
1/2 c. (additional) All-purpose Flour
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
2 tsp. Salt
1 stick Butter, Melted
1 1/2 c. Sugar
3 tbsp. Ground Cinnamon
Icing
3 c. Powdered Sugar
2 tbsp. Butter, Melted
1 tbsp. Maple Extract
1/3 c. Whole Milk
Dash Of Salt

Steps:

  • DOUGHTo make the dough, combine milk, canola oil, and 1/2 cup sugar in a large saucepan. Heat it until very hot but not boiling. Turn off heat and allow to cool to warm (not at all hot.)Sprinkle in the yeast and add 4 cups of flour. Stir to combine, then put lid on the pot and allow to rise for 1 hour. After 1 hour, stir in additional 1/2 cup flour, along with the baking powder, baking soda, and salt. If dough is overly sticky, stir in another 1/2 cup flour. Place dough in the fridge for at least 1 hour to make it easier to work with. Roll out dough onto a floured surface. Drizzle on melted butter and smear so that it covers all the dough. Mix together the sugar with the cinnamon and sprinkle it all over the surface of the dough. (Dough should look very covered.)Cut the dough into 6 to 8 strips, then stack all the strips into one stack. Cut the stack of strips into 6 slices. Place the stacks sideways into a buttered bread pan. Do not cram the slices into the pan. (You may have a few leftover.)Cover with a dish towel and allow to rise for 20 minutes. Preheat oven to 350 degrees. Place the pan in the oven and bake for 30 minutes, checking at 20 minutes to make sure it's not getting too brown on top. It's important to bake the bread long enough to ensure that the middle won't be too doughy, because if it is it won't pull apart easily. If the top looks like it's getting too brown, cover it lightly with aluminum foil for the rest of the baking time. REPEAT: IT'S IMPORTANT TO BAKE THE BREAD LONG ENOUGH FOR THE CENTER TO NO LONGER BE DOUGHY.Remove the pan from the oven when it's done. Run a knife along the edges and take the bread out of the pan. Mix together the icing ingredients and drizzle over the top, allowing it to sink into the crevices. Serve warm or room temperature!(Note: You can also do a cranberry-orange version with orange marmalade, brown sugar, and dried cranberries!)

Categories     Breakfast

Time 40m

Number Of Ingredients 7

7 slices bacon (, diced small)
3 tablespoons unsalted butter
1 tube refrigerated Pillsbury Grands biscuits
3 large eggs (, beaten)
1/3 cup shredded sharp cheddar cheese
1/3 cup shredded monterey jack cheese
2 scallions (, finely diced)

Steps:

  • Cook bacon in a large skillet over medium-high heat until crispy, stirring occasionally, about 5 minutes. Drain on a paper towel and set aside.
  • Preheat the oven to 350 degrees F.
  • Put the butter in a nonstick bundt pan coated liberally with cooking spray and let it melt in the preheating oven.
  • While the butter melts, cut the Grands biscuits into quarters. In a bowl, gently toss the biscuit pieces, cooked bacon, eggs, both cheeses, and scallions together.
  • Once the butter has melted, give the bundt pan a little swirl so the bottom is evenly coated. Add the biscuit mixture to the pan, sprinkling with any cheese and bacon pieces that get left behind.
  • Bake for 25-27 minutes or until golden.
  • Run a dull knife around the edges of the pan to loosen. Turn out on a dish and enjoy!

  • Generously butter the wells of a 12-cup muffin pan. Spoon a teaspoon of granulated sugar into each of the wells, then tap the pan in all directions to coat the insides.
  • To make the filling: Combine the sugars, cinnamon, and orange zest, stirring well with a fork to distribute the zest.
  • Brush the rectangle with melted butter. Sprinkle the dough generously with the sugar mixture and go over it lightly with a rolling pin to press it into the butter.
  • Let the buns rise for 1 to 1 1/2 hours in a room no warmer than 75°F (any warmer and the butter may begin to leak out). The buns should increase to one and a half to two times their original size.
  • If desired, just before baking, butter the back of a spoon and press down on the center of the buns. Place 2 teaspoons of the preserves in the indentation.
  • Place the pan on a parchment-lined baking sheet and bake for 40 to 45 minutes, until the buns are deep golden brown.
  • Place a cooling rack over a piece of parchment. Remove the buns from the oven and immediately (and carefully) transfer them out of the pan onto the rack.
