I read this recipe and long time ago, but since adapted to the kid's taste. If your getting bored of the same type of meat on your table each evening, then i suggest you use this recipe to jazz it up abit. It's slightly tangy but a succulent meal.

25 g butter
1 large red onion (cut into wedges!)
1 garlic clove (Finely chopped)
1 tablespoon water
4 pork chops
1 teaspoon dried thyme
1 tablespoon soft brown sugar
mixed spice (to taste)
200 ml freshly squeezed clementine juice
2 teaspoons cornflour
salt and pepper
3 clementines (peeled and sliced)

Steps:

  • Melt butter in a large frying pan and brown both sides of the pork chops.
  • Add the Garlic, Thyme and onions and cook until softened.
  • Sprinkle the sugar and mixws spice over the chops and pour the juice over. Bring to boil and simmer for 8-10 minutes.
  • Mix the cornflour with one tablespoon of cold water to make a paste.
  • Stir the paste into the juice and simmer until it thickens. Season to taste.
  • Arrange the clementines over the chops and simmer for 2-3 minutes.
  • Serve!

4 boneless pork loin steaks , trimmed of any fat
2 tsp Chinese five-spice powder
1 tbsp sunflower oil
1 large red onion , cut into thin wedges through the root
4 red apples , cored and cut into eighths
2 tbsp redcurrant jelly
1 tbsp red wine vinegar or cider vinegar
200ml chicken stock

Steps:

  • Dust the pork steaks with the Chinese five-spice powder. Heat half the oil in a frying pan and fry the pork for about 3 mins on each side until browned and cooked through. Transfer to a plate.
  • Add the remaining oil to the frying pan, reduce the heat slightly, then fry the onion wedges for 2 mins. Add the apples and cook, stirring occasionally, for another 3 mins.
  • Add the redcurrant jelly to the pan, followed by the vinegar and then the stock. Bring to the boil and simmer rapidly, uncovered, for 8-10 mins until the sauce is slightly syrupy and the apples are tender. Gently reheat the pork in the sauce, turning to glaze each side.

I had apples that needed using and a small can of sauerkraut in my cupboard and went from there. A little different, delicious and so easy. The sauerkraut, apples and brown sugar give the chops a sweet and sour flavor.

2 tablespoons vegetable oil
4 pork chops
2 apples, cored and diced with peel
8 ounces sauerkraut
½ cup packed brown sugar
½ onion, chopped
1 tablespoon cornstarch
ground black pepper to taste

Steps:

  • Heat oil in a large skillet over medium high heat. Add chops and brown well. Top with apple slices.
  • Meanwhile, in a medium bowl combine the sauerkraut, sugar and onion and mix all together. Thicken slightly with cornstarch. Place this mixture over the chops and apples and season with pepper to taste.
  • Reduce heat to medium low. Cover skillet and cook all for 15 to 20 minutes or until chops are cooked through. Serve hot.

1/2 cup apricot or peach preserves
1 tablespoon corn syrup
1 teaspoon prepared mustard

6 bone-in pork loin chops (3/4 inch thick and 8 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a small bowl, combine the barbecue sauce, preserves, corn syrup, mustard and cloves; set aside., Sprinkle pork chops with salt and pepper. On a lightly oiled grill, grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°, basting frequently with sauce mixture. 4 pork chops, 1-inch thick
3/4 cup water
1/4 cup vinegar
1/4 cup brown sugar, firmly packed
1 teaspoon salt
1/4 teaspoon ginger
1/8 teaspoon pepper
1/4 cup dried apricot, sliced
1/4 cup dried prune, pitted and sliced
1 cup water, cold
1 tablespoon cornstarch

Steps:

  • Brown chops in skillet, over low heat, on both sides and pour off drippings.
  • Combine water, vinegar, brown sugar, and seasonings.
  • Mix well and pour over the chops.
  • Add the spricots and prunes and cover.
  • Continue cooking for about 40 minutes or until chops are tender.
  • Remove from skillet to a serving platter and set aside.
  • Add water slowly to cornstarch in small cup, stirring to blend.
  • Gradually add this to the skillet and stir until thickened and well combined; about 5 minutes.
  • Pour over the chops and serve.

1 can (15 ounces) fruit cocktail

Fruit and mustard are two classic accompaniments to pork, and really, a juicy chop doesn't need much more than that for a sweet and tangy sauce. Mix together water, grainy mustard and any fruit preserve that's good with pork like cherry, fig, peach or apricot. Sear bone-in pork chops mostly on one side to prevent overcooking, then pour the fruit-mustard mixture into the skillet while they rest. The pork will stay moist, and its juices will have time to mingle with the sauce. Then just slice the pork and drape it in the velvety two-ingredient glaze. Eat with mashed or roasted potatoes and a green salad.
