HOMEMADE JELLO

Homemade Jello image

A quick and easy homemade gelatin snack, with no added sugar.

Provided by Megan Gilmore

Categories     Dessert

Time 5m

Number Of Ingredients 3

1 3/4 cups 100% fruit juice (, divided)
1/4 cup boiled water
1 tablespoon grass-fed gelatin

Steps:

  • To begin, you'll want to "bloom" the gelatin in a bit of cool or room-temperature fruit juice, to ensure a smooth and even end result. In a medium mixing bowl, sprinkle the tablespoon of gelatin over 1/4 cup of the fruit juice (I used 100% organic grape juice for this batch), and whisk well until the mixture starts to thicken.
  • Once the mixture is nice and thick, pour the 1/4 cup of hot (just boiled) water over it, and whisk well to dissolve evenly. When the mixture is smooth, add in the remaining 1 1/2 cups of fruit juice, and mix well to combine.
  • Pour the mixture into a standard loaf pan, greased or lined with parchment paper to prevent sticking, and place in the fridge to set for at least 2 hours. You'll know it's done when the top is firm to the touch!
  • Slice into squares and serve immediately, or store in the fridge in a sealed container until ready to serve.

Category Desserts, Recipe Roundup
  • Homemade Jell-O. Jello is fun, yummy, and easy to make, but what happens when your local grocery store no longer carries your favorite flavor? Sure, you could buy it off Amazon and have it delivered.
  • Gummy Bears. If you love gummy bears as much as I do, you’ll love this easy recipe. With some gelatin, water, unsweetened powdered drink mix, and your favorite non-sugar sweetener of choice, you can make a ton of these adorably colorful, jiggly bears in 20 minutes!
  • Panna Cotta. If you’re looking for something a bit more elegant, try this recipe for panna cotta instead. This smooth, creamy Italian dessert is as lovely as it is delicious, and you’ll only need five ingredients.
  • Homemade Marshmallows. Believe it or not, you can even make homemade marshmallows with gelatin. Trust me when I tell you the homemade ones are yummier and much more silky smooth than the store-bought variety.
  • No-Bake Cheesecake. This sweet and tangy cheesecake requires a few more ingredients than most of the other recipes on this list, but it’s also more decadent and delicious, at least according to my mom.
  • Blueberry Jell-O Salad. I love everything about this wiggly salad, from the bright blue of its base to the tart filling of pineapple juice and blueberries.
  • Coffee Jelly. If you’re one of those people who enjoy coffee so sweet it could double as a dessert, this is the sweet treat for you. Basically, coffee jelly is just coffee-flavored Jell-O, and yes, you’ll use real coffee and sugar to flavor the gelatin.
  • Raspberry Jello Parfaits. Usually, when I’m craving a parfait, I reach for the yogurt, granola, and berries. However, Jello makes an excellent parfait base.
  • Finger Jell-O. Finger Jell-O is merely Jell-O, but instead of serving it in one big bowl, slice it into squares and serve it like you would any finger food.
  • Lemon Lime Jell-O Salad. If you’re looking for a wiggly dessert with a thicker consistency and plenty of tart tanginess, you’ve got to try this recipe for lemon-lime Jello salad.

  • Dissolve the jello in two cups hot water. Use juice from the fruit and enough water to make 1 1/2 cups. (I add ice to the juice to help speed the cooling process.) Add the juice/water mix to the Jell-O. Stir and chill until slightly firm. It shouldn’t be watery any more, but not well set.
  • In a blender, combine about 1 cup of the Jell-O and the cream cheese. Add the remaining Jell-O and mix well.
  • Stir in the cool whip. You have to stir it well so the cool whip doesn’t stay in big lumps. A few small ones are fine.
