FRUIT 'N JUICE SQUARES
Strawberry gelatin made with orange juice and fruit cocktail is layered with creamy gelatin for a refreshing salad or dessert.

Steps:
- Add boiling water to gelatin mix in large bowl; stir at least 2 min. until completely dissolved. Add enough ice to juice to measure 1-1/2 cups. Stir into gelatin. Refrigerate 30 min. or until slightly thickened. Remove 1-1/2 cups of the gelatin; place in medium bowl. Stir in fruit; set aside.
- Stir half the COOL WHIP into remaining gelatin with whisk until well blended. Pour into 8-inch square dish. Refrigerate 10 min. or until set but not firm. Carefully top with fruited gelatin.
- Refrigerate 3 hours or until firm. Serve topped with remaining COOL WHIP.

- Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Drain pineapple, reserving juice. Add enough ice to juice to measure 1-1/2 cups. Add to gelatin; stir until ice is completely melted. Refrigerate about 45 minutes or until slightly thickened. Remove 1-1/2 cups of the gelatin; stir in pineapple.
- Add 1/2 of the whipped topping to remaining gelatin; stir with wire whisk until well blended. Pour into 9-inch square dish. Refrigerate about 15 minutes until set but not firm. Carefully spoon fruited gelatin over creamy layer in dish.
- Refrigerate at least 3 hours or until firm. Cut into squares. Serve topped with remaining whipped topping.

HOMEMADE REAL FRUIT JELLY SQUARES

- Line a baking dish with plastic wrap.
- Soak the gelatin in cold water for about 5 minutes.
- In a saucepan, mix the fruit juice with water and lemon juice. Stir in the sugar and bring to boil, and then reduce the heat.
- Thoroughly squeeze the gelatin leaves and, one after another, dissolve in the juice-mixture without boiling.
- Fill the jelly-mix into the dish and leave to set in the fridge for at least 5-6 hours.
- For serving, cut into cubes or use fancy cookie cutters. (Tip: spread the cutter or your knife with some oil to make the slicing easier)
- With a pastry brush, coat the jelly with a thin layer of oil and toss in sugar (optional).

- To begin, you'll want to "bloom" the gelatin in a bit of cool or room-temperature fruit juice, to ensure a smooth and even end result. In a medium mixing bowl, sprinkle the tablespoon of gelatin over 1/4 cup of the fruit juice (I used 100% organic grape juice for this batch), and whisk well until the mixture starts to thicken.
- Once the mixture is nice and thick, pour the 1/4 cup of hot (just boiled) water over it, and whisk well to dissolve evenly. When the mixture is smooth, add in the remaining 1 1/2 cups of fruit juice, and mix well to combine.
- Pour the mixture into a standard loaf pan, greased or lined with parchment paper to prevent sticking, and place in the fridge to set for at least 2 hours. You'll know it's done when the top is firm to the touch!
- Slice into squares and serve immediately, or store in the fridge in a sealed container until ready to serve.

- Mix together grape juice, Gelatine, and honey in a sauce pan over medium-low heat.
- Stir until Gelatine is completely dissolved.
- Place the gummy bear molds on a flat surface, and then using a dropper or baster (which comes with the mold), add the mixture to the molds. Slowly fill each cup to the top.
- Chill in the refrigerator for 2 hours. Make sure they're firm before you unmold them.
- Store in an airtight container in the refrigerator for 7-10 days.
