The only difference today is that I can't get home-smoked ham like those Grandpa used to cure in his old-fashioned smokehouse. But that never matters to hungry folks at the table-Grandma's recipe is a winner every time!"

2 eggs
1 cup milk
1 cup dry bread crumbs
1/4 teaspoon pepper
1-1/2 pound ground fully cooked ham
1/2 pound ground pork
GLAZE:
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/2 teaspoon ground mustard
2 tablespoons water

Steps:

  • In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

This was a favorite recipe of our Mom's for Sunday dinner. We all loved it, and I'm sure you will too. Ground ham is formed into a meatloaf and baked in the oven.

2 pounds ground ham
1 ½ pounds ground pork
2 eggs
1 cup dried bread crumbs
1 cup evaporated milk
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 cup brown sugar
1 tablespoon mustard powder
¼ cup cider vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork, eggs, bread crumbs, evaporated milk, salt and ground black pepper. Mix all together well and form into a loaf. Place loaf into a lightly greased 9x13 inch baking dish.
  • Bake at 350 degrees F (175 degrees C) for 90 minutes.
  • While the loaf is baking, combine the brown sugar, mustard powder and vinegar. Mix well and pour over the loaf in the final 15 minutes of baking.

Our ham loaf is flavored with mustard, onion, parsley, and a simple brown sugar and vinegar sauce glaze. Make it with leftover ham or ham steaks.

1 1/2 pounds ground smoked ham
1 tablespoon prepared mustard
1/4 cup onion (chopped)
1 tablespoon​ fresh parsley (chopped)
1/2 cup quick-cooking oats
3/4 cup evaporated milk (or half-and-half )
1 ​large egg (beaten)
1/4 cup light brown sugar (or dark brown sugar, packed)
1/4 cup vinegar
Garnish: tomato slices, spinach leaves, hard-cooked egg slices

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Grease a 9x 5 x 3-inch loaf pan
  • Combine ground ham, mustard, chopped onion, parsley, oats, milk, and egg; mix well to blend.
  • Form into a loaf in the prepared loaf pan.
  • Combine the brown sugar and vinegar in a small saucepan . Place the saucepan over medium heat and cook until the sugar has dissolved.
  • Pour the brown sugar mixture over ham loaf.
  • Bake the ham loaf in the preheated oven for 60 minutes.
  • If desired, garnish with tomato slices, spinach leaves, and hard-cooked egg slices.

AMISH HAM LOAF

Similar to meatloaf, this Amish Ham Loaf is made with ground ham and pork, seasoned with curry powder, ground ginger, and nutmeg then glazed with a sweet and sour sauce.

Number Of Ingredients 16

1 pound ground ham (about 3 cups)
1 pound ground pork
2 to 2 1/2 cups soft white bread crumbs
2 large eggs
3/4 cup sour cream
1/2 cup finely chopped onion
2 TBSP lemon juice
1 tsp. curry powder
1 tsp. ground ginger
1/2 tsp. ground nutmeg
2 TBSP yellow mustard
1/2 cup brown sugar
1/4 cup cider vinegar
1/4 cup water
1/2 tsp. fresh ground black pepper
Ketchup (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare a broiler pan by covering the bottom portion in foil. Replace the slotted top and spray lightly with cooking spray. Set aside.
  • In large bowl, with hands, combine the ground ham, ground pork, and 2 cups soft bread crumbs.
  • In medium bowl, whisk together the eggs, sour cream, onion, lemon juice, ginger, nutmeg, and mustard.
  • Pour wet ingredients into bowl with ham/pork/breadcrumb mixture and combine with hands until it all comes together. If it feel too wet, add the rest of the breadcrumbs.
  • Shape into an oblong loaf onto prepared broiler pan. Let sit for about 30 minutes before putting into oven.
  • Bake for 30 minutes. Baste with 1/2 the glaze. Return to oven and bake for another 15 minutes. Baste with the remainder of the glaze. Return to oven for another 15 to 25 minutes. Top with ketchup, if desired, and pop into oven for another couple of minutes.
  • Let rest for 15 minutes before slicing.
  • Combine all glaze ingredients except ketchup in a small saucepan and heat to boiling. Take off heat and use as directed in the Ham Loaf instructions above.

LEFTOVER HAM MEATLOAF

This is a great way to use up leftover cooked ham, since this makes two meat loaves you can freeze one uncooked, just omit the chili sauce and bacon on top, thaw in refrigerator overnight, top with tomato sauce and bacon, then bake as directed.

1 lb ground pork
1 1/2 cups finely chopped cooked ham (can use more if desired)
1 green bell pepper, seeded and finely chopp
1 medium onion, finely chopped
2 tablespoons fresh minced garlic (or to taste)
4 cups soft breadcrumbs (use soft breadcrumbs only)
1/4 cup milk
1/3 cup chili sauce or 1/3 cup ketchup
1/4 cup light brown sugar
1/4 cup maple syrup
3 -4 tablespoons Worcestershire sauce
1 -2 tablespoon louisiana hot sauce (or to taste)
1 tablespoon seasoning salt, to taste or 1 tablespoon white salt
1 teaspoon black pepper (or to taste)
2 cups chili sauce, divided
6 slices bacon

Steps:

  • Set oven to 350 degrees.
  • Prepare foil-lined 10 x 15-inch baking sheet, then place a rack in the pan.
  • In a large bowl using clean hands mix together all the meatloaf ingredients.
  • Shape into two 9x5-inch loaves and place onto the rack in the baking sheet, or just cook one and freeze the other for another meal.
  • Pour about 1 cup chili sauce onto each top of loaf, then place 2-3 bacon slices over the top lengthwise.
  • Bake for about 40-45 minutes.

BASIC CURRY SAUCE

This is a very versatile Indian curry sauce that can be served as a main course with meats and/or vegetables or as a sauce for dipping or to spice up veggie side dishes. It's great over baked potatoes.

2 tablespoons peanut oil
1 tablespoon margarine
1 large onion, chopped
1 tablespoon minced fresh ginger root
2 tablespoons minced garlic
1 teaspoon ground cinnamon
1 teaspoon ground black pepper
2 tablespoons ground coriander
2 tablespoons ground cumin
¼ teaspoon ground turmeric
1 teaspoon cayenne pepper
2 tomatoes
2 serrano chile peppers, seeded
½ cup fresh cilantro
½ cup yogurt, whisked until smooth
3 cups water

Steps:

  • Heat oil and margarine in a small skillet or wok over medium high heat. Add onion and saute until very brown, 10 to 15 minutes. (Note: This is an important step; if onion is not cooked well, sauce will taste funny.)
  • Add ginger and garlic to onion and saute for an additional 2 minutes. Process onion/ginger/garlic mixture in food processor until smooth. Do not rinse food processor.
  • Place onion mixture in a large saucepan. Stir in the cinnamon, black pepper, coriander, cumin, turmeric and cayenne pepper and cook over low heat until mixture is thick and has the consistency of a paste.
  • Puree tomatoes, chile peppers and cilantro in food processor until smooth. Add to onion mixture and stir well over low heat, cooking off moisture from tomatoes and cilantro. Add yogurt a little bit at a time, stirring constantly to avoid curdling.
  • Blend the whole mixture in food processor to puree it (for a very smooth sauce). Return to saucepan, add water and increase heat to high; bring sauce to a rolling boil. Cover saucepan and boil for 3 to 5 minutes. Reduce heat and simmer until desired consistency is reached.
  • To serve with meat, cook the meat first separately, then simmer for 5 to 10 minutes in the sauce before serving over rice or with bread. To serve with vegetables, steam raw veggies first 4 to 5 minutes, then simmer for 5 to 10 minutes in the sauce before serving.

2 teaspoons lard (fat from the ham)
1/4 cup brown sugar
3 slices peeled cored pineapple
2 tablespoons raisins
450 g cooked ham, finely chopped (equal to 3 cups)
300 g ground lean pork
2 cups fresh breadcrumbs
1 stalk celery, finely chopped
1/2 small onion, finely chopped
1 tablespoon Dijon mustard
2 eggs
2 large apples, grated
2 teaspoons rubbed sage
1/4 teaspoon clove

Steps:

  • Preheat the oven to 350°F.
  • Melt the fat in a 9"x5" loaf pan.
  • Sprinkle the sugar evenly over the bottom, and lay the pineapple slices, cut in half or quarters if need be, in a nice pattern on the bottom.
  • Fill holes with raisins.
  • Mix the remaining ingredients, and press the mixture over the pineapple.
  • Bake for 1 hour& 15 minutes.
  • Remove the meatloaf from the oven, and let it stand 5 minutes.
  • Invert it onto serving platter, wait a few seconds, then remove the pan and serve.

Steps:

  • In a small bowl combine fruit bits and apple butter. In a large bowl, combine egg, milk, graham cracker crumbs, pepper, ground ham, and ground pork. Crisscross 3 foil strips atop a sheet of waxed paper to keep counter clean. In center of foil strips pat half of the meat mixture into a 7 inch circle. Spread fruit mixture on meat circle to within 1 inch of edges. Top with remaining meat mixture. Press edges of meat to seal well. Bring up foil strips, lift and transfer to any size crockpot. Press meat away from sides of crockpot to avoid excess browning. Cover and cook on Low for 8 to 10 hours or on High for 4 to 6 hours. Loaf is done when meat thermometer inserted reads 170 degrees F. In a small bowl combine brown sugar, apple juice, and dry mustard. Spread over meat. Cover and cook on Low or High heat for 30 minutes more. Using foil strips, lift ham loaf from crockpot and transfer to serving plate; discard foil strips. Serve.
