FRUITY "DONUT" HOLES - NO BAKE, NO FLOURS!

1 cup almonds, dry
1/4 teaspoon sea salt
1 vanilla bean, scraped (just use the seeds)
1 cup pineapple, dried and sulfur free, chopped
1 cup pitted dates
5 tablespoons dried shredded coconut

Steps:

  • Place salt and almonds in food processor and chop.
  • Combine remaining ingredients, except coconut, by hand in a bowl. To keep hands from getting sticky while mixing, keep hands wet with cool water.
  • Roll mixture into balls.
  • Roll the balls in the shredded coconut and enjoy!

2 packages (1/4 ounce each) active dry yeast
1/4 cup warm water (110° to 115°)
1-1/2 cups warm milk (110° to 115°)
1/3 cup shortening
1/2 cup sugar
2 eggs
1 teaspoon salt
1 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
4-1/2 to 5 cups all-purpose flour
1/4 cup butter, melted
GLAZE:
1/2 cup butter
2 cups confectioners' sugar
5 teaspoons water
2 teaspoons vanilla extract

Steps:

  • In a large bowl, dissolve yeast in water. Add milk and shortening; stir for 1 minute. Add sugar, eggs, salt, nutmeg, cinnamon and 2 cups flour; beat on low speed until smooth. Stir in enough remaining flour to form a soft dough (do not knead). Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a floured surface; roll out to 1/2-in. thickness. Cut with a 2-3/4-in. doughnut cutter; place 2 in. apart on greased baking sheets. Brush with butter. Cover and let rise in a warm place until doubled, about 30 minutes., Bake at 350° for 20 minutes or until lightly browned. Meanwhile, for glaze, melt butter in a saucepan. Add the confectioners' sugar, water and vanilla; cook over low heat until smooth (do not boil). Keep warm. , Dip warm doughnuts, one at a time, into glaze and turn to coat. Drain on a wire rack. Serve immediately.

2 cups flour
1/4 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon nutmeg
1/4 cup oil
3/4 cup milk
1 egg

Steps:

  • Blend dry ingredence
  • Add oil, milk and egg.
  • mix well with fork.
  • In heavy pan, pour enough oil to measure 2" deep
  • Heat oil 375.
  • drop dough by teaspoonfuls into hot oil.
  • fry about 3 min or until golden.
  • drain on paper towels
  • roll donuts in cinnamon sugar, glaze, or chocolate frosting.
  • Glaze.
  • 3/4 C powdered sugar.
  • 1/4 tsp vanilla
  • 1/2 tsp butter softened.

  • To the food processor, add your raw nuts, almond flour, and coconut flour. Blend until a fine meal is achieved - about 20-30 seconds.
  • Add the dates back in along with the lemon zest, lemon juice, poppy or chia seeds, and vanilla extract. Blend until a tacky dough forms. If it’s too dry, add a little more lemon juice. If it gets too wet or sticky, add more coconut flour as needed.
  • Scoop out 1 1/2 Tbsp amounts of dough (I like this scoop) and roll into balls. Repeat until all of your mixture is used up. Arrange on your parchment-lined baking sheet. Transfer to the freezer and freeze for 10 minutes.
