Fruity flapjack cookies image

Toast oats before mixing them into the dough to make these fruity cookies, a delicious hybrid of syrupy flapjacks and coconut macaroons

Provided by Barney Desmazery

Categories     Dessert, Snack

Time 1h

Number Of Ingredients 11

125g jumbo oats
150g softened butter
100g light muscovado sugar
1 egg
1 tbsp golden syrup
½ tsp vanilla extract
100g self-raising flour
100g mixed dried fruit or raisins
75g dried apricots, finely chopped
50g desiccated coconut
½ tsp ground cinnamon (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Scatter the oats over a baking tray and bake for 20 mins, turning once until lightly browned. Remove from the oven and set aside to cool. Scatter in the flour, all the dried fruit, the coconut, cinnamon (if using), the toasted oats and a pinch of salt. Beat again until everything is combined and you have a thick dough. Use the dough straightaway or cover and chill for up to two days.
  • Line two baking sheets with baking parchment and arrange six large spoonfuls of dough on each, well- spaced apart. Bake for 15 mins (or 18-20 mins if the dough is fridge-cold) until the cookies have spread and are brown at the edges but soft in the middle. Leave to cool on the baking sheet for 5 mins, then transfer to a wire rack and leave to cool completely. Will keep in an airtight container or tin for up to five days.

  • Get started on the filling: Mix sugar, salt, oats, and cereal in a large bowl. Melt butter and heat milk together in the microwave until butter is melted (about 30 seconds). Pour the heated mixture over the cereal and oats and stir everything together with a wooden spoon until it's all coated in the liquid mixture.
  • Pour the cereal and oats onto a baking sheet fitted with a piece of parchment paper. Toast in the oven at 300°F for 10-15 minutes.
  • Now, create your dough: Place the 2 tablespoons of butter into your mixer's bowl. Place the 6 tablespoons of butter in a saucepan over medium heat. Melt butter until it's hot, bubbly, and beginning to brown.
  • Pour melted butter into your mixer's bowl over the solid butter. Mix on low speed until the solid butter has melted as well. Add in the sugars and beat for 1 minute on medium speed. Scrape mixture off the sides of the bowl using a rubber spatula.

  • Preheat the oven to 375 degrees F. Cream the butter and sugar together until fluffy, 3-5 minutes. Scrape the bowl and add the egg and vanilla. Beat again until smooth.
  • In a separate bowl, mix together the flour, baking powder, and salt. Slowly add the dry mixture into the butter mixture. Scrape the bowl and beating until just mixed through. Measure out 1/2 pound of dough (a little over a 1/4 of the batch) into a separate bowl. Refrigerate the larger amount. Add thick (not runny) fruit jam to the smaller amount of dough. Add a few drops of food coloring. Mix until the color is distributed evenly.
  • Place the “fruity” mixture in the fridge to chill. (It’s much more important for THIS dough to be cold than the plain dough, so leave it in for at least 30 minutes.)
  • Meanwhile, roll the plain dough into 1-tablespoon balls. On a floured work surface, press the balls flat with the palm of your hand. Scoop 1 teaspoon of fruity mixture on top of each circle. Pinch up the sides of the circle until the filling is completely enclosed. Flip the balls over, so that the pinched sides are down. Dip the bottom of a drinking glass in sugar and gently press the balls down to 1/2 - 3/4 inch disks. Repeat with the rest.
