RICH FRUIT CAKE



Rich fruit cake image

A rich fruit cake that is ideal for a traditional Christmas cake, or any special occasion where a good quality fruit cake is required.

400 g currants
250 g sultanas
250 g raisins
150 ml sweet white wine or sherry
225 g butter (softened)
225 g dark muscovado sugar
4 eggs (beaten)
1 tbsp black treacle
350 g plain flour
2 tsp mixed spice
75 g blanched almonds (chopped)
75 g glace cherries (quartered)
100 g mixed peel
finely grated zest of 1 orange or 1 lemon

Steps:

  • Place the currants, sultanas and raisins in a bowl. Heat the wine or sherry until it just starts to bubble around the edge of the pan, then pour over the fruit. Cover and allow to stand overnight.
  • Grease and line a 23cm round or a 20cm square deep cake tin. Preheat the oven to 160°C/150°fan/gas mark 3.
  • Beat the butter and sugar together until pale and fluffy Make sure you beat out any lumps in the sugar. Gradually beat in the eggs, beating well after each addition. Next beat in the treacle.
  • Sift the flour and mixed spice into the bowl and fold in.
  • Add the soaked fruit, almonds, cherries, peel and lemon or orange zest and mix well.
  • Spoon into the prepared tin and level the top, then make a slight dip in the middle.
  • Bake for 1 hour, then reduce the oven temperature to 140°C/130°C fan/gas mark 1 and cook for a further 1-2 hours or until a skewer inserted into the centre comes out clean.

1 (18.25 ounce) package strawberry cake mix
1 (16 ounce) package cream cheese frosting
1 (21 ounce) can light blueberry pie filling, refrigerated

Steps:

  • Prepare and bake cake mix according to package directions for a 10 inch Bundt pan. Allow to cool completely.
  • Cover cake with cream cheese frosting. Pour pie filling over frosted cake.

This is my own fruitcake recipe and it's a family favorite. The mixture of fruits and nuts helps make it a tasty treat. -Allene Spence, Delbarton, West Virginia

1-1/2 cups whole red candied cherries
1-1/2 cups whole green candied cherries
3 cups diced candied pineapple
1 pound walnut halves
10 ounces golden raisins
1 cup shortening
1 cup sugar
5 large eggs
4 tablespoons vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 300°. Combine fruit and nuts. In another bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder and salt; add to creamed mixture and mix well. Pour over fruit and nuts; stir to coat. , Transfer to a greased and floured 10-in. tube pan. Bake until a toothpick inserted in center comes out clean, about 2 hours. Cool 10 minutes; remove from pan to a wire rack to cool completely. Wrap tightly and store in a cool place. Bring to room temperature before serving; slice with a serrated knife.

Jazz up a birthday cake with candleholders made from fruit, and celebrate!

1 box (15.25 oz) Betty Crocker™ Super Moist™ Vanilla Cake Mix (or your favorite flavor)
Water, vegetable oil and eggs called for on cake mix box
1 tub (16 oz) Betty Crocker™ Rich & Creamy Creamy White Frosting (or your favorite flavor)
Whole strawberries or other fruit
Small birthday candles

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Make, bake and cool cake as directed on box for two 8-inch or 9-inch rounds.
  • Place 1 cake layer, rounded side down, on serving plate. Spread with about 1/3 cup frosting. Place other layer, rounded side up, on top. Frost side and top of cake with remaining frosting.
  • Make a small hole in each piece of fruit with a skewer. Place a birthday candle into each piece of fruit. Gently push fruit candleholders into frosting. Keep cake cool until ready to serve. Store loosely covered in refrigerator.
