FRUIT SLUSH
This is an excellent mixed fruit with a little kick, which is frozen in individual cups. I served it as a frozen fruit salad but have had it served to me as a refreshing afternoon snack. It would also make an excellent light dessert. I received this recipe from Janet Carswell.

Steps:
- In a large bowl, stir the orange juice concentrate and sugar together until the sugar has dissolved; gently stir in the pineapple, strawberries, and bananas until coated, then stir in the ginger ale. Ladle about 2/3 cup of the mixture into a plastic cup, and freeze; repeat with remaining fruit salad and cups. Remove from freezer about 1 hour before serving.

- Dissolve sugar in boiling water. Add orange juice concentrate, bananas and pineapple, stirring until orange juice is dissolved. Stir in soda; pour into a large container or several small containers and freeze. Thaw approximately 1 hour or until slushy before serving. Variation: Add fresh sliced peaches or seedless grapes.

TROPICAL FRUIT SLUSH

Steps:
- Bring sugar and water to a simmer and cook just until sugar dissolves. Chill completely.
- Stir guava or passion fruit nectar, mango nectar and lime juice into sugar syrup. Purée diced pineapple and diced papaya and add to juice mixture. Pour into a non-reactive container, cover and freeze for one hour. Stir once or twice. Depending on your freezer, it can take from 3 to 5 hours to freeze to slush consistency. Spoon into cocktailGlasses and garnish with pineapple and mint.
- Another option to serve is to freeze completely (this is essentially a granita) and scrape granules into a glass or pulse in a blender or food processor to soften up the ice and serve.
- Bring sugar and water to a simmer and cook just until sugar dissolves. Chill completely.

If using a Popsicle mold, pour into mold and cover (sticks should be worked into the lid). If using plastic cups, pour mixture into cups and cover tightly with plastic wrap. Make a small slit in the center of the plastic and insert a stick. Freeze until firm, about 6 hours.
- To remove from molds, run under cool water and then remove.

- Place water and sugar in pan, stir over low heat till sugar dissolves.
- Bring to the boil, boil rapidly without stirring for 2 minutes then cool.
- Combine juices with vodka and sugar syrup.
- Pour mixture into 2 large cake pans, store in freezer.
- To serve - fill a glass 3/4 full of slush, top with soda water.
