My favorite drink is Brazilian Lemonade, and this is a variation. I used coconut milk for the cream of coconut, and I cut the limes in quarters and throw everything in the blender. Then I strain in the end. It's much less work and just as delicious.

1 cup cream of coconut
2 1/2 cups crushed ice
3 limes
2 tablespoons sugar (to taste)

Steps:

Place all the ingredients in a blender until smooth.
Serve immediately and enjoy.

Something just a bit different. Summer in a tall glass to sip and enjoy. This recipe is a collaboration between myself and my dear friend Baby Kato.

Yield 1 1/2 quarts

Number Of Ingredients 5

Ingredients

5 cups coconut water
1/2 cup lime juice (or to taste)
3/4 cup sugar (or to taste)
1 cup pureed mango (fresh or frozen)
1/3 cup malibu pineapple rum

Steps:

In a large bowl combine coconut water, lime juice, sugar, mango and rum . Stir until sugar is well dissolved. Cover and chill for at least 4.
To serve, transfer to a pitcher. Serve in tall glasses over ice cubes.
