MUM'S FRUIT CHILI

She left me all these great recipes, but didn't write down any methods. I guess that's why we have the internet eh? Mum always stored things in the coolest spots in the house - cupboards in the basement. Some things have to sit longer before eating them, but I'm sure we were eating things shortly after Mum made them.

Number Of Ingredients 10

3 large peaches
3 large pears (ripe, not too soft)
15 med to large, ripe, red tomatoes
3 large onions
1 sweet red pepper
1 green bell pepper
1 - 2 Tbsp salt, to taste
2 c cider vinegar (here's your chance to get rid of all those packets from the fish & chips store lol)
2 c sugar
1/4 c pickling spice, tied in a cheesecloth bag. mum often used store bought

Steps:

  • 1. Prep: Scald, peel and chop tomatoes. Peel and chop peaches, pears and onions. Remove seed core from peppers and cut in strips.
  • 2. Place into preserving kettle, add the losely tied spices to the mixture.
  • 3. Add vinegar and sugar and simmer gently until thick, about 2 hours, stirring frequently to prevent scorching.
  • 4. Turn into hot sterilized jars and seal.

4 quarts chopped peeled tomatoes (about 24 large)
2 cups chopped onions
2 cups chopped sweet red peppers (about 4 medium)
1 serrano pepper, finely chopped
1 cup sugar
3 tablespoons salt
3 tablespoons mixed pickling spices
1 tablespoon celery seed
1 tablespoon mustard seed
2-1/2 cups white vinegar

Steps:

  • In a stock pot, combine the tomatoes, onions, peppers, sugar and salt; simmer, uncovered, for 45 minutes. , Place the pickling spices, celery seed and mustard seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag; add to tomato mixture. Cook for 45 minutes or until very thick, stirring frequently. , Add vinegar; cook to desired thickness. Discard spice bag. Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water canner.

2 (14 ounce) cans tomato sauce
2 (15 ounce) cans kidney beans, rinsed and drained
2 tablespoons chili powder
1 tablespoon white sugar
1 pinch cayenne pepper
1 pound ground beef
2 tablespoons chili powder
1 tablespoon white sugar
1 pinch cayenne pepper
1 teaspoon cooking oil
½ red onion, chopped
1 banana pepper, chopped
1 apple - peeled, cored, and chopped
1 peach - peeled, pitted, and chopped

Steps:

  • Combine the tomato sauce, kidney beans, 2 tablespoons chili powder, 1 tablespoon sugar, and cayenne pepper in a large sauce pan; bring to a simmer over low heat.
  • Place a large skillet over medium-high heat; place the ground beef in the skillet; season with 2 tablespoons chili powder, 1 tablespoon sugar, and the cayenne pepper; cook until brown; add to the sauce mixture.
  • Heat the oil in a small skillet over medium-high heat; cook the onion in the oil until slightly browned; add to the sauce mixture, along with the apple, peach, and banana pepper. Allow to simmer another 1 to 2 minutes until hot.

This homemade chili sauce recipe is a great combination of sweet and savory, perfect as a condiment, marinade, or all around flavor builder. So many uses!

Number Of Ingredients 13

6 ounces tomato paste (1 can)
Water for thinning (1/4 to 1/2 cup water, or more as needed)
1/4 cup brown sugar
2 tablespoons honey
3 tablespoons apple cider vinegar (or to taste - white vinegar is good, too)
1 teaspoon paprika (use cayenne for spicier)
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder (or more to taste)
1/2 teaspoon red pepper flakes (or use hot sauce, to taste)
1/4 teaspoon ground allspice
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves
Salt and pepper to taste (1/4 to 1/2 teaspoon is usually good)

Steps:

  • Add all of the ingredients to a large bowl. Whisk them together until the chili sauce is nicely uniform and all of the ingredients are mixed through.
  • Pour the chili sauce into a small pot or sauce pan. Heat and simmer for 10 minutes to let the flavors meld and develop. Taste and adjust for salt, honey, and other spices. Add more water for a thinner sauce.
  • Cool. Store in the refrigerator, covered.

I've been eating and serving this tasty chili sauce since my childhood-it's always been a favorite. -Barb Townsend-Batten, Blenheim, Ontario

Number Of Ingredients 11

5 pounds tomatoes (about 15 medium)
3 medium peaches (about 1-1/2 pounds)
3 large sweet onions, chopped (about 6 cups)
3 medium pears, peeled and chopped (about 3 cups)
2 medium green peppers, chopped (about 1-1/2 cups)
2 celery ribs, chopped
2 jalapeno peppers, seeded and cut into matchsticks
3 cups sugar
2 cups white vinegar
3 teaspoons salt
1 teaspoon mixed pickling spices

Steps:

  • Fill a Dutch oven two-thirds with water; bring to a boil. Cut a shallow "X" on the bottom of each tomato and peach. Using tongs, place tomatoes and peaches, a few at a time, in boiling water for 30-60 seconds or just until skin at the "X" begins to loosen. Remove tomatoes and peaches; immediately drop into ice water. Pull off skins with tip of a knife; discard skins., Coarsely chop tomatoes and peaches; place in a stockpot. Add onions, pears, green peppers, celery, jalapenos, sugar, vinegar and salt. Place pickling spices on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. Add to stockpot. Bring to a boil. Reduce heat; simmer, uncovered, 2 to 2-1/2 hours or until thickened, stirring occasionally. Discard spice bag., Carefully ladle hot mixture into five hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 20 minutes. Remove jars and cool.

Number Of Ingredients 9

30 ripe tomatoes
6 pears, peeled and cored
6 peaches, peeled and pitted
6 large yellow onions, peeled
2 sweet red peppers, seeded
2 tablespoons salt
1 quart cider vinegar
4 cups sugar
2 ounces whole allspice

Steps:

  • Cut out the stem end of the tomatoes and peel. Cut fruits and vegetables into fine dice and place in a large preserving kettle. Add salt, vinegar, sugar and allspice (tied in a cheesecloth bag). Bring to a boil and cook uncovered over medium heat, stirring occasionally, for 1 1/2 to 2 hours, or until thick. Discard the spice bag and ladle the sauce into hot, sterilized jars. Cover and seal.

12 medium fresh strawberries, diced
1/2 teaspoon garlic powder
2 -3 drops hot sauce (your choice of brand)

  • Chill. Do not add any more hot sauce until it has melded for at least 24 hours Then add more as desired.
  • Store,covered, in refrigerator.
