NANA'S FRUITY CHICKEN CURRY

Nana's Fruity Chicken Curry image

My Nana's recipe for fruity chicken curry that she used to make in the 1970's when she was a pub landlady.

Provided by sailor83

Yield Serves 4

Steps:

  • In a large frying pan, fry the chicken breast until browned or, if you prefer you can just drop the raw chicken into the curry later.
  • Add the onion, apple and banana to a medium sized casserole dish and fry until the onion has softened. (About 10 minutes)
  • Add the curry paste and curry powder and stir into to the mixture.
  • Add the chicken stock followed by the chicken.
  • Simmer on a low heat for 30 minutes, stirring occasionally with the lid off. The liquid should reduce down.
  • Add the coconut milk, raisins, nuts and chick peas (If using) and continue to cook for another 10 minutes.
  • Serve with steamed/boiled white rice.

FRUITED CHICKEN CURRY IN A HURRY

Fruited Chicken Curry in a Hurry image

Yield 4 servings

Number Of Ingredients 19

2 cups basmati rice
3 tablespoons vegetable oil (3 times around the pan)
4 6-ounce boneless, skinless chicken breast halves, cut into 1/2-inch slices across the width of the breast
Coarse salt and coarse black pepper
4 garlic cloves, chopped
2-inch piece of fresh ginger, peeled and grated
2 tablespoons ground coriander (2 palmfuls)
1 large yellow onion, chopped
1 large green apple, peeled and diced
2 tablespoons all-purpose flour
2 cups chicken stock or broth
2 tablespoons curry paste, mild or hot
1/4 cup golden raisins (a generous handful)
8 pitted dates or 6 pitted prunes, chopped
4 scallions, thinly sliced
1 cup toasted shredded coconut
1/2 cup sliced almonds or Spanish peanuts
1 cup prepared mango chutney
1/4 cup finely chopped fresh cilantro leaves (a handful)

Steps:

  • Prepare the rice according to the package directions.
  • Preheat a large, deep nonstick skillet over medium-high heat with 2 tablespoons of the oil. Add the chicken, season with salt and pepper, and lightly brown. Remove the chicken and reserve on a plate. To the same pan, add the garlic, ginger, coriander, onions, apples, and remaining tablespoon of oil and sauté together for 3 to 5 minutes. Add the flour and cook for 1 minute more. Add the chicken stock to the pan and bring to a bubble. Add the curry paste, golden raisins, and dates. Reduce the heat to medium low. Add the chicken pieces back to the pan. Simmer the curry for 8 to 10 minutes.
  • Assemble the toppings in small dishes. Serve the curry in shallow bowls with scoops of basmati rice. Garnish with any or all of the toppings.
  • For a Vegetarian Fruited Curry in a Hurry, swap a 14-ounce container of firm tofu, cut into 1 1/2-inch-thick slices and patted dry, for the chicken, and vegetable broth for the chicken stock. Brown the tofu as you would the chicken and follow the same method above.

FRUITY CHICKEN CURRY

A fruity twist on a simple chicken curry- or remove the chicken for a filling, veggie alternative!

Provided by Sinead Lawson

Steps:

  • Brown the chicken thighs in a pan with a splash of oil on medium heat. This step can be removed for a veggie curry.
  • Add in the crushed garlic, onion and pepper. Stir in for 10 minutes until softened. If you would like a spicy curry, add in the chilli now.
  • Mix in 2 teaspoons turmeric, 1 teaspoon ginger and a pinch of paprika.
  • Reduce the heat to low and pour in 100ml coconut milk- or any milk of your preference. Let simmer until the colour is consistent and the milk is gently bubbling.
  • Stir in the mango and pineapple chunks, then add two tablespoons of Greek yoghurt. My preference is The Collective Dairy mango yoghurt to bring out the fruity flavour.
  • Let simmer for 15 minutes on a low heat.
  • Boil 300g of rice to serve with the curry.

CHICKEN IN CURRY SAUCE WITH FRUIT

Chicken in Curry Sauce With Fruit image

This is a recipe from Austria. It's nothing like authentic curry dishes from India, but it is very nice, with a good curry taste that doesn't burn the palate. The fruit really makes the dish.

Categories     Curries

Time 1h

Yield 4 serving(s)

Number Of Ingredients 13

2 chicken breasts, cooked and shredded
5 tablespoons unsalted butter
1 small onion

1 ripe peaches or 1 nectarine
1 cup grapes, sliced in half
1/4 cup dried cherries (optional)

1 cup heavy cream or 1 cup half-and-half
4 cups cooked rice
