Cream cheese and yogurt form the light dressing that coats this fast fruit medley. The salad is a snap to assemble because it takes advantage of canned peaches, pineapple chunks and mandarin oranges you likely keep in your pantry. Number Of Ingredients 7

1 can (11 ounces) mandarin oranges, drained
1 can (8-1/4 ounces) sliced peaches, drained
1 can (8 ounces) pineapple chunks, drained
1 cup miniature marshmallows
4 ounces cream cheese, softened
1/2 cup plain yogurt
1/4 cup sugar

Steps:

  • In a large bowl, combine the oranges, peaches, pineapple and marshmallows. In a small bowl, beat the cream cheese, yogurt and sugar until smooth; pour over fruit and toss to coat. Refrigerate for 15 minutes.

Number Of Ingredients 10

3/4 cup boiling water
1/4 cup raisins
1 cup lemon yogurt
1/4 teaspoon ground ginger
1/8 to 1/4 teaspoon ground allspice
1/8 to 1/4 teaspoon ground cardamom
4 large firm bananas, cut into 1/2-inch slices
2 tablespoons lemon juice
2 medium cantaloupe, peeled, seeded and cubed
3 cups seeded cubed watermelon

Steps:

  • Place the water and raisins in a small bowl; let stand for 5 minutes. Meanwhile, in a large bowl, combine the yogurt, ginger, allspice and cardamom. Drain raisins; stir into yogurt mixture. Cover and refrigerate for at least 1 hour., Toss bananas in lemon juice. Alternately thread fruit on wooden skewers or place in a serving bowl. Serve with yogurt sauce.

1/4 cup plain low-fat yogurt
2 tablespoons light cream cheese, softened
2 teaspoons honey
1/8 teaspoon ground ginger
1 (8 ounce) can mandarin orange sections
1 (8 ounce) can pineapple chunks
1/3 cup seedless grapes, halved
1/3 cup sliced banana
1 tablespoon lemon juice
1 tablespoon toasted coconut

Steps:

  • For sauce, in a small mixing bowl stir together yogurt, cheese, honey, and ginger'til mixture is smooth, cover and chill if desired.
  • Drain orange sections and pineapple chunks.
  • In a medium bowl combine the orange sections, pineapple chunks and grape halves.
  • In a small bowl toss together banana slices and lemon juice, add fruit mixture.
  • Chill.
  • To serve, divide the fruit mixture among 4 dessert dishes.
  • Top each with the sauce and the coconut.
