SUMMER PEPPER SALAD

This is a great salad for the summer heat. It is light and very quick to make. And even my kids like it. Serve with French bread for a great combination.

1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1 medium cucumber, seeded and chopped
¼ cup chopped fresh parsley
8 ounces crumbled feta cheese
1 tablespoon olive oil

Steps:

  • In a large bowl, mix the green bell pepper, red bell pepper, yellow bell pepper, cucumber, parsley, feta cheese, and olive oil. Chill at least 30 minutes in the refrigerator before serving.

A delicious and bright fruit salad made with fresh fruit and a delicious honey lime poppyseed glaze to go on top!

1 cup strawberries (sliced)
1/2 cup blackberries
1/2 cup blueberries
1/2 cup kiwis
1/2 cup mangoes (sliced and cubed)
1 Tablespoon Honey
3 Tablespoons Lime Juice
1 Tablespoon poppy seeds
Fresh Chopped Mint for garnish

Steps:

  • Cut and prepare the fruit and put into a large mixing bowl. In a small bowl, whisk the honey, lime juice and poppy seeds.
  • Drizzle the honey lime poppy seed glaze over the fruit and gently toss. Top with chopped mint if desired. Serve immediately.

½ cup orange juice
1 tablespoon lime juice
2 tablespoons poppy seeds
1 tablespoon raspberry vinegar
¼ teaspoon olive oil
¼ cup raspberries
⅛ teaspoon salt
⅛ teaspoon cayenne pepper
1 cup seedless red grapes
1 cup cubed watermelon
1 cup halved fresh strawberries
1 cup cubed cantaloupe
1 cup blueberries
1 cup sliced plums

Steps:

  • In a blender or food processor, combine banana, orange juice, lime juice, poppy seeds, raspberry vinegar, olive oil, raspberries, salt and cayenne pepper, and puree until smooth. Cover tightly and refrigerate until ready to use.
  • Combine grapes, watermelon, strawberries, cantaloupe, blueberries and plums in a large bowl. Pour dressing over fruit and toss to coat.

Making this tantalizing salad will be the perfect way to celebrate that event. 2 bunches fresh mint leaves, washed
1 cup sugar
1/2 cup balsamic vinegar
1 teaspoon pepper
4 teaspoons cornstarch
6 large peaches, sliced
1 honeydew melon, cut into wedges (I would make them about the size of my peach slices, maybe a little thicker)
1 cantaloupe, cut into wedges (same as the honeydew)
4 cups strawberries, sliced
2 pints raspberries

Steps:

  • In a small saucepan; combine 1 cup of water, one half of the mint leaves, sugar, vinegar, and pepper. Bring to a boil, lower the heat and let simmer for 5 minutes.
  • In a small bowl, mix the cornstarch with 4 tablespoons of water making sure to get out all of the lumps. Stir this into the saucepan with the dressing and bring it back to a boil. Remove from the heat, let it cool for about 10 minutes and strain.
  • In a large bowl toss the dressing with the honeydew, cantaloupe, peaches, and strawberries, (I would add the raspberries midway through tossing so they don't fall apart) Top with the remaining mint leaves.
