1 1/2 cups all purpose flour
3/4 cup powdered sugar
1 (8 ounce) package cream cheese, softened
1 (12 ounce) container whipped topping
1 1/2 cups powdered sugar

Steps:

  • In a medium bowl, combine the butter, flour and 3/4 cup powdered sugar.
  • Then put the dough onto a pizza pan or a 9" x 13" cake pan.
  • Preheat the oven to 400 degrees.
  • Bake the dough for 6 minutes.
  • Mix the cream cheese, whipped topping and the 1 1/2 cups powdered sugar.
  • Spread this filling onto the crust that has cooled.
  • Then add any fruits that you enjoy, on top of the cream cheese layer.
  • Some that we really enjoy are kiwi, strawberries, mandarin oranges and blue berries.
  • You may want to double the recipe and put the dough in a cookie sheet to bake.
  • The crust is amazing.

1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed
2 to 3 kiwifruit, peeled and thinly sliced
1 to 2 firm bananas, sliced
1 can (11 ounces) mandarin oranges, drained
1/2 cup red grape halves
1/4 cup sugar
1/4 cup orange juice
2 tablespoons water
1 tablespoon lemon juice
1-1/2 teaspoons cornstarch
Pinch salt

Steps:

  • Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. 1 stick (8 tablespoons) unsalted butter, at room temperature
1 teaspoon freshly grated lemon zest
1 teaspoon pure vanilla extract

1/4 teaspoon fine salt
8 ounces cream cheese, at room temperature

  • For the sugar cookie crust: Preheat the oven to 350 degrees F.
  • Beat the granulated sugar and butter in a large bowl with an electric mixer on high speed until light and fluffy, 1 to 2 minutes. Add the lemon zest, vanilla and egg and beat until incorporated. Add the flour, baking powder and salt and mix on low speed until just combined. Scrape the dough into a large (12-inch) nonstick skillet and press into an even layer to cover the entire bottom of the skillet. Add the confectioner's sugar and beat on low speed until just combined. Increase the speed to high and beat until fluffy, 1 to 2 minutes. Refrigerate the topping, covered, until ready to use (stir again until smooth).
  • To assemble the fruit pizza, spread the cream cheese topping on the crust in an even layer, leaving a border for the crust. Top with the fruit in a random pattern. Dust with more confectioner's sugar if using just before serving, then cut into slices.

Sugar Cookie Crust:
½ cup butter, softened
⅔ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1⅓ cups all-purpose flour
1 teaspoon cream of tartar (*If you do not have cream of tartar, omit the cream of tartar AND the baking soda in the recipe and replace with 1 tsp of baking powder.)
½ teaspoon baking soda
¼ teaspoon salt
Cream Cheese Filling:
8 ounces of softened cream cheese
1 cup powdered sugar
1 tsp vanilla extract
Fresh Fruit for the Top:
Strawberries, Grapes, Blueberries, Mango, Raspberries, Kiwi, Pineapple, canned mandarin oranges, ect.

Steps:

  • Preheat oven to 350 degrees, Lightly spray a pizza pan or 9x13 baking dish with cooking spray and set aside (you can line the pan with parchment paper if you prefer.)
  • With a hand mixer cream together softened butter and granulated sugar. Mix until creamy. Add egg and vanilla and mix until well combined.
  • Add the flour, cream of tarter, baking soda and salt (*see note above about substitution if you do not have cream of tartar.)
  • Mix well and then press the dough into a 9x13 pan, pizza pan or form it into a large circle on a pizza stone or large sheet pan.
  • Bake at 350 for 10-12 minutes. The cookie should be just browning. If you are using a stone it may take a few more minutes to cook. Just be careful not to over cook or it will dry out the cookie.
  • Let cookie cool completely before adding the cream cheese layer and fruit.
  • INSTRUCTIONS FOR CREAM CHEESE LAYER:
  • Combine the softened cream cheese, powdered sugar and vanilla in a medium size bowl. Use a hand mixer to mix it until smooth. There shouldn't be any lumps.
  • Spread the cream cheese mixture evenly over the cookie crust leaving a ½ inch edge of the cookie showing.
  • Cut up desired fruits and lay them in a desired pattern on top of the cream cheese layer.
  • Cover and refrigerate until ready to serve. Refrigerate leftovers.
  • *If you want to you can add a simple glaze on top of the fruit pizza. To do this you add 1 tbsp water to ¼ cup of apricot or peach jam. Be sure to strain out any chunks and then lightly brush the thin glaze over the fruit. It helps the fruit not dry out and makes the dessert a little shiny.
