FRUIT PIZZA RECIPE

Fruit Pizza Recipe image

When you need a beautiful and delicious summer party dessert, make this amazing Fruit Pizza, topped with light creamy pudding and fresh fruit.

Provided by Lauren Brennan

Categories     Dessert

Time 3h15m

Number Of Ingredients 12

1 cup salted butter (cut into cubes)
1 cup granulated sugar
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 teaspoons baking powder
3 cups all purpose flour
3.9 oz instant vanilla pudding (1 box)
1 1/2 cups cold milk
3/4 teaspoon almond extract
1 cup whipping cream
berries, peaches, kiwis, bananas, etc.

Steps:

  • Preheat oven to 350 degrees. Lightly grease a half sheet pan and set aside. Alternately, you can line with parchment paper and set aside. In a large bowl, stir butter and sugar until well mixed. Add the egg, vanilla extract and almond extract and stir again. Slowly incorporate the flour and baking powder until a dough forms. If it looks a little crumbly, this is normal. If you squeeze some dough together in your hands, it should form a ball that keeps its shape.
  • Press the dough into the prepared half sheet pan to create an even layer across the bottom and up the sides slightly. Bake 12 minutes or until edges are lightly golden. Let crust cool completely.
  • For the filling, beat milk, pudding mix, and almond extract together until smooth and thickened. Beat whipping cream until stiff peaks form. Fold cream into the pudding mixture, then spread evenly over crust. Top with fruit and serve.

THE BEST FRUIT PIZZA

The Best Fruit Pizza image

Sugar cookie crust, cream cheese filling, and fresh fruit all come together for a delicious summer dessert everyone will love. Perfect for the 4th of July or any summer barbecue or potluck.

Provided by Maria slightly Adapted from Pampered Chefs Recipe

Categories     Fruit Pizza

Time 42m

Yield 15

Number Of Ingredients 15

Sugar Cookie Crust:
½ cup butter, softened
⅔ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1⅓ cups all-purpose flour
1 teaspoon cream of tartar (*If you do not have cream of tartar, omit the cream of tartar AND the baking soda in the recipe and replace with 1 tsp of baking powder.)
½ teaspoon baking soda
¼ teaspoon salt
Cream Cheese Filling:
8 ounces of softened cream cheese
1 cup powdered sugar
1 tsp vanilla extract
Fresh Fruit for the Top:
Strawberries, Grapes, Blueberries, Mango, Raspberries, Kiwi, Pineapple, canned mandarin oranges, ect.

Steps:

  • Preheat oven to 350 degrees, Lightly spray a pizza pan or 9x13 baking dish with cooking spray and set aside (you can line the pan with parchment paper if you prefer.)
  • With a hand mixer cream together softened butter and granulated sugar. Mix until creamy. Add egg and vanilla and mix until well combined.
  • Add the flour, cream of tarter, baking soda and salt (*see note above about substitution if you do not have cream of tartar.)
  • Mix well and then press the dough into a 9x13 pan, pizza pan or form it into a large circle on a pizza stone or large sheet pan.
  • Bake at 350 for 10-12 minutes. The cookie should be just browning. If you are using a stone it may take a few more minutes to cook. Just be careful not to over cook or it will dry out the cookie.
  • Let cookie cool completely before adding the cream cheese layer and fruit.
  • INSTRUCTIONS FOR CREAM CHEESE LAYER:
  • Combine the softened cream cheese, powdered sugar and vanilla in a medium size bowl. Use a hand mixer to mix it until smooth. There shouldn't be any lumps.
  • Spread the cream cheese mixture evenly over the cookie crust leaving a ½ inch edge of the cookie showing.
  • Cut up desired fruits and lay them in a desired pattern on top of the cream cheese layer.
  • Cover and refrigerate until ready to serve. Refrigerate leftovers.
  • *If you want to you can add a simple glaze on top of the fruit pizza. To do this you add 1 tbsp water to ¼ cup of apricot or peach jam. Be sure to strain out any chunks and then lightly brush the thin glaze over the fruit. It helps the fruit not dry out and makes the dessert a little shiny.
