LOW SUGAR BREAD WITH DRIED FRUIT AND NUTS
Low Sugar Bread With Dried Fruit And Nuts is a recipe for sweet bread that is low in sugar but enriched with dried fruits, nuts, or even seeds, based on your preferences. This is a great option for the entire family.

Steps:
- Preheat oven to 350F.
- Prepare a loaf pan by buttering the inside of it. Cut a piece of parchment paper to fit along the bottom of the pan and up the ends.
- Fit the paper inside. Set aside.
- In a medium bowl, spoon the plain yogurt.
- Separately, in a small bowl, mix the eggs with a fork. Add them to the yogurt, together with sunflower oil and vanilla, and mix everything with a fork.
- In a large bowl, place all dry ingredients: dried fruit, nuts, seeds, flour, sugar, and baking powder. Mix.
- Pour the yogurt mixture into the dry ingredients.
- Use a spatula or a wooden spoon to mix everything. Spoon the mixture into the baking pan prepared earlier.
- Bake the bread for about 40-45 minutes or until golden and risen. Test the bread with a skewer or a toothpick in the middle. It should come out clean.
- Leave the loaf to cool down and remove it from the pan by pulling the ends of the parchment paper.

- In a large bowl, combine the dry ingredients. Stir in the apricots, nuts and cherries. Beat eggs and vanilla; stir into the dry ingredients just until moistened. Spoon into eight greased and floured 4-1/2x2-1/2x1-1/2-in. loaf pans (pans will be full). , Bake at 325° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from the pans to wire racks. Cool completely before slicing.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.
- Cream butter and sugar together. Beat in eggs one at a time. Beat smooth. Stir in milk, vanilla, and almond flavoring.
- In large bowl combine flour, baking powder, and salt. Stir in fruit, raisins, and nuts. Add all at once to first bowl. Stir only to moisten. Turn into greased 9x5x3 inch loaf pan.
- Bake for 1 hour in 350 degree F (175 degree C) oven until it tests done. Let stand 10 minutes. Remove from pan. Cool and wrap.

NUT AND FRUIT BREAD
This is another great holiday bread to make that belonged to my mother. She sometimes served this one, and it is a very old recipe. This bread is good the first day, but better the second. You may use dates instead of raisins if you wish.

- Grease an 8 x 5 inch loaf tin thoroughly. Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, beat the egg well. Mix in milk and melted butter or shortening.
- Sift flour, baking powder, and salt together into a mixing bowl. Add sugar, nuts, raisins and orange rind; mix well. Blend egg mixture into fruit and nut mixture until flour is just moistened. Turn batter into greased loaf tin, and allow to stand for 20 minutes.
- Place pan in the center of the oven. Bake for 55 to 60 minutes. Turn bread out on wire rack, and cool for several hours before slicing.

- In a large bowl, combine the first 11 ingredients. In another bowl, beat the egg substitute, juice, oil, molasses and bananas; stir into dry ingredients just until moistened. - Combine the flour, salt and yeast in a large bowl. Stir to combine and add the dried fruit and nuts. Stir to distribute all the ingredients well. Add the water and stir everything together. The dough should be shaggy and a little sticky. Just stir and turn the dough over until there are no traces of dry ingredients.
- Cover the bowl and let the dough rest in room temperature for 12 to 18 hours. The longer you let it sit, the more flavor is developed. After 18 hours, the dough will have risen and may be a shade darker than it was when you started.
- Place a piece of parchment paper on the countertop and dust very generously with flour. Wet your hands and fold the dough over on itself a few times to release the air inside the dough. (Wetting your hands will help prevent the dough from sticking to you.) Shape the dough into a round and place it on the floured parchment paper, seam side down.
- Dust more flour on the top of the dough and cover the dough by inverting the mixing bowl over the top. (Alternately, you could use a clean kitchen towel to cover the dough, but I find this often sticks to the dough, ruining both the appearance of the bread and the towel.) Let the dough rest like this for up to 2 hours. After the dough has rested for 1 to 1 ½ hours on the countertop, place a lidded cast iron Dutch oven into your oven and pre-heat the oven to 425ºF for 30 minutes.
