1/4 cup unsalted butter, at room temperature
1 vanilla bean
1/4 cup pina colada-style sweetened coconut cream
1/4 cup heavy cream
4 ounces good quality white chocolate, chopped
1 teaspoon grated lime zest
2 large red-skinned mangoes, peeled, seed discarded
1 large Hawaiian papaya (about 1 pound), seeds discarded
8 (8-inch) skewers

Steps:

  • Place the butter in a small skillet. Split the vanilla bean and scrape the seeds onto the butter. Mash seeds into the butter with the back of a spoon. Add the scraped pod and melt the butter over low heat. Remove from heat and set aside to steep.
  • Heat the coconut cream and heavy cream in a small saucepan over medium heat until simmering. Remove from heat and stir in chocolate until melted and smooth. Stir in the lime zest. Set aside. (The vanilla butter and chocolate sauce can be made up to 3 days ahead, refrigerated, and reheated before grilling.)
  • If using wooden skewers, soak them in water for 30 minutes before grilling. Prepare an outdoor grill with a low-medium fire.
  • Prepare the fruit for the skewers, cutting the fruit into 2-inch chunks. Thread the fruit onto 8 (8-inch) skewers, alternating the mango and papaya. Brush lightly with some of the vanilla butter. Grill the fruit until lightly charred but not mushy, turning as needed, about 5 minutes per side. Pool about 2 tablespoons chocolate sauce on each of 4 plates, arrange 2 skewers on each plate, and drizzle with a bit of vanilla butter.

1/4 cup heavy cream
4 ounces good quality white chocolate, chopped
1 teaspoon grated lime zest

1 large Hawaiian papaya (about 1 pound) peeled and seeds discarded

Steps:

  • 1. Soak eight 8-inch bamboo skewers in water for 30 minutes. Heat a grill to medium low.
  • 2. Place butter in a small skillet. Split vanilla bean and scrape seeds onto butter and mash with back a spoon. Add scraped pod and melt butter over low heat. Remove from heat and set aside to steep.
  • 3. Heat cream of coconut and heavy cream in a small saucepan over medium heat until simmering. Remove from heat and stir in chocolate until chocolate is melted and smooth. Stir in lime zest. Set aside.
  • 4. Cut mango and papaya into 2-inch chunks and alternately thread onto skewers. Brush lightly with vanilla butter and grill until fruit is lightly charred, turning as needed, about 5 minutes per side. Serve with chocolate sauce.

1 cup sour cream
3 tablespoons fresh lime juice
2 tablespoons sugar
1 1/2 teaspoons grated lime peel
1 ripe papaya, peeled, halved, seeded
1/2 ripe pineapple, peeled, cored
3 large bananas, peeled
8 12-inch-long bamboo skewers

Steps:

  • Combine sour cream, 2 tablespoons lime juice, sugar and lime peel in small bowl. Cover and refrigerate lime cream.
  • Cut papaya into twenty-four 1-inch pieces. Cut pineapple into twenty-four 1-inch pieces. Cut each banana crosswise into 8 pieces and place in small bowl. Toss with remaining 1 tablespoon lime juice. Alternate fruit on skewers. Arrange on platter. (Fruit skewers can be prepared 1 hour ahead. Cover and chill.) Serve with lime cream.

Showy but Simple Fruit Kabobs - Perfect for a Party image

I was looking for a fruit "something" that would be finger food friendly for a shower this weekend. Wanted something a little showy for the buffet table, and was surprised that I couldn't find anything on zaar involving fruit and a skewer. :) Shock horror! I ended up on www.justjennrecipies.com and found this idea. It's nothing you couldn't figure out on your own, pretty basic, but it gave me an idea to work with. You could serve with one of the many fruit dip recipes here on the zaar - or as is, which is what I'm planning to do. I'll post some pics once it's done! Update: I had to use a baby watermelon, still worked out fine. I did find the step of making small X marks to poke the skewers through was unnecessary - plus you need to get the right angle when you poke the skewer in (otherwise they might be flopping down too far from the weight of the fruit, so I wouldn't bother with that step next time.

1/2 whole watermelon, regular medium sized watermelon
1 cantaloupe
1 pineapple
1/2 lb grapes
1 pint blueberries (or other firm berry depending on what's available...ie strawberries)
30 bamboo skewers
of fresh mint (optional)

Steps:

  • If you're starting with a whole watermelon, cut it in half. Cut tip to tip, so that if you turn your half upside down, the tips are barely noticeable at each end. Choose to work with the half that looks the best when you turn it over.
  • Using a melon baller, scoop out all of the watermelon into nice bite sized balls, place them on a platter as you go. When you can't make any more balls, scrape the remainder of the watermelon out using a spoon until you have an empty shell (all white), and set the shell aside to let it dry out.
  • Once the shell is dried out a bit you will turn the shell over onto a platter, so the cut side is down and you've got a nice half round base to work with. Using a paring knife, cut small X marks or poke holes in rows as you choose across the outside of the melon shell. Space the holes about 2" apart.
  • Cut the rest of your fruit into bite sized pieces. You may also choose to use the melon baller on the cantaloupe.
  • Once all the fruit is cut up, you can start assembling the fruit onto skewers following any pattern you like. The grapes and berries can act as cute stoppers in between larger pieces of fruit. You may also choose to place a piece of fresh mint here and there. Leave about 3" empty on the bottom of each skewer.
  • As you finish each skewer poke the bottom into one of the pre-made holes or x's on your watermelon shell. Before long you'll have the entire melon filled up and looking a bit porcupine-ish. If you need to prepare a little in advance, make the skewers and base and then keep them chilled. Poke the skewers into place once you're ready to serve.

6 cups bite-size pieces assorted fresh fruit (pineapple, watermelon and cantaloupe)
1 cup green grapes
1 cup blueberries or red grapes
3 small star fruit, cut into 24 slices
2 large mangoes, peeled, seeds removed and cut into large pieces
1/4 cup pineapple preserves

Steps:

  • Thread 4 to 6 pieces of fruits (except mangoes) on each of twenty-four 6-inch skewers. Place skewers on large serving platter; set aside.
  • In food processor, place mango pieces and pineapple preserves. Cover and process until smooth; pour into small serving bowl. Serve kabobs with mango coulis.
